    This the honest truth. If you are nervous or uncomfortable doing this video, it does not show at all. You have a lovely calm voice, you show us exactly what you are looking for, and give us confidence we can do it too.

    Thanks for the video, and I appreciate how you have the recipe written down in the "about" section. Makes it easier to write down and not have to pause n play, pause n play. Your "right hand lady" Mikayla (sp)did an excellent job recording! I didn't feel as if I was drunk after watching a video...lol
    I subscribed, and liked.
    I'm kinda new to canning my own stuff, but grew up in Ky where everyone canned (atleast the elders did). I'm scared of a canner & pressure cooker, but love my Insta-pot elec. Press. Cooker, andI usually do the water bath method on the stove-top (I think that's what it's called) :-)

    This right on time! I am dehydrating more watermelon this week! We usually give the rinds to the chickens. I remember my Grandma & Dad making Watermelon Rind Preserves & Pickle, but I have never tried to. Great job on the video. THANKS SYBIL & MICAELA !!!

      Thank you, Dusty. Here in South Texas, we have a variety of wild fruits to make jelly and jam with such as Mesquite beans, Chili Petin peppers, Dandelions and Cactus fruits. I am going to try to do more of the old time recipe videos. I have to sneak them in between other chores. Love and Blessings to you.

      Sibyl's Practical Living and Prepping I live in Houston, "Hate it ". I would love to be more in the country but my husband still works at 87 yrs. Old. Bless his heart. He went out and found me some muskadin grapes to make jelly. I made pineapple/ habanero jelly. So good BUT, SO HOT. LOOKING FORWARD TO MORE OF YOUR VIDEOS. Have a blessed day. 😚. What a precious camera girl. 😍

      Thanks, Dusty. I live right outside of Victoria which isn't too far from Houston. There is a trick to using Habanero peppers so they won't be too hot. You take the seeds and inner white ribs out. This takes almost all the super hottness out of the peppers so you can use them in a lot of different dishes. Micaela, my camera girl, says Thank you for the compliment.

    Thank you for sharing - I am wondering how much salt you used when you were soaking them at the beginning and did you rinse them before you took them to the stove?

    • @TheSibyljh53
      @TheSibyljh53  5 років тому +1

      1/2 c. salt to soak. Next morning drain and rinse salt water off. Thanks for visiting.

      Thanks for that clarification! I would have cooked them without rinsing since I didn’t see that in the video.

    How did you slice your rind so thin, and can this succeed if the rind is sliced a bit thicker? We don't mind (We being my husband and I) a bit of a chunky preserve. Others do and that's fine.

    • @TheSibyljh53
      @TheSibyljh53  4 роки тому

      Thanks for your visit. I hand slice the rind to about an eighth of an inch. The salt water shrinks them even further. You can cut them to a quarter of an inch for chunkier pieces if you like. They have to be cooked a bit longer though.

    I would make this in pints and wipe the rims with a paper towel with vinegar to be sure the rims are clean. And I would also use a hand blender so its not so chunky. I'm still trying to find good videos on this. Another tip... get a tripod for your camera so your hands are free and video not so shaky.

    • @TheSibyljh53
      @TheSibyljh53  3 роки тому

      Thank you for your suggestions. I have a large family so I make mine in quarts. We also like ours chunky. I use clean hands, a wet finger and listen for the ringing sound of the jar rims. Paper towels will leave a very fine bit of lint just inside the jar rims which we don't care for. I guess it all boils down to you make it your way for your family and I'll make it mine for my family.

    Just finished watching your video on making Watermelon Rind Preserve and u made it seem so easy, I have safe rinds and I have recipe from mom, it just tells me what bro put in it. I guess my fear is are the glass jars going to crack, I'm scared they may crack after coming out of hot water, why do you have to put vthw jars in hot water

    • @TheSibyljh53
      @TheSibyljh53  5 років тому

      As long as the jars do not have any cracks in them to begin with, there shouldn't be any problem. I make sure I set the jars on a towel to drain them. I have my jars in hot water to sterilize them and once I put the preserves in the jars, I boiling water bath them. It makes sure all the germs are killed in the preserves. Thank you for visiting and Blessings to you and yours.
