Miss Lippy....this brings back so many memories! My mom used to make this in the 70's! I totally forgot about watermelon rind jam. She also made pickled watermelon rind which was awesome! @@MsLippy it is more than delicious - it is out of this world. When I canned jams/jellies/etc - I always mixed a tblsp of jam/jelly in with bbq sauce - heated it up on the stove to let it melt in. OMG - it changes the bbq sauce and makes it taste wonderful. Totally changes pork/beef steaks. I loved the story about your MIL leaving the rind on. So cute.
