3 cups beet juice 4 cups sugar 1 box Sure Jel 1 box Strawberry Jello or any other flavor you want 3 Tblsp. lemon juice bottled Put strained beet juice in med. pot. Add lemon juice and fruit pectin. Boil stirring constantly. Add sugar, bring up to boil and boil 6 minutes stirring constantly. When 6 minutes is up, remove from heat and whisk in Jello until it is well blended. Watermelon Rind Preserves 2

1 med. watermelon peeled and insides removed cut the rind in small thin pieces cover the rinds in water and cook on low heat until translucent. Drain the water off, measure rinds and put back into pot. Add 1 cup of water and sugar to make 1/2 the amount of the rinds. Add 2 tsp. cinnamon, 1/4 tsp. ground clover and 1/2 tsp. ginger per 8 cups of rinds. Cook over low heat until a very thick syrup ...
Old Fashion Pickled Beets

In this video, I caught several mistakes in my wording. First, I left out how the beets were not GMO and there was no added salt. Next, I made a mistake in the amount of beets. It is 20 cups of beets instead of 20 cans. Supposed to be 3-1/2 cups of sugar also. Please forgive the mistakes. It's been a while since I posted a video. Lexi's Corner of Texas was the videographer. Turkey Chops Blackeye Peas

To cook Blackeyed Peas: 1 pound dried peas, wash and put in pot. Cover to 2 in. over top of peas with water Add bacon, sausage or whatever meat you wish Cook over medium heat Add more water if needed and cook until done. If using fresh okra add at beginning of cooking peas same for tomatoes.

I’m making these today. My meat had a lot of juice . But I’m hoping for good results. Your tamales must have been very much smaller than mine. I got 4 tamales in a qt Jah. I’d love to see one of yours open after done

I just saw a written recipe online for pressure canned tamales, but it said very clearly to cook them (steam) as you normally would before pressure canning. I hope that isn't true. One of the cool things about pressure canning, to me, is that you are cooking the food ahead of time, in addition to giving them an unrefrigerated shelf life. I hope that I am understanding your video correctly, that they tamales are made, and rather than steaming them on the stove as you normally would, they are put in jars and pressure canned, correct? Anyone who might know the answer can reply. Thank you!
You make them, put them in jars and pressure can them. No need to steam them first.
@@cowgirlhavenranch8394 Thank you for the reply! I ended up experimenting with three jars back at Christmas after I wrestled 15 tamales from my wife before she put them in the pot to steam. They came out EXCELLENT. Wish I had more empty jars on hand. I almost don’t see a single downside to cooking them this way. No leftovers to freeze/refrigerate. Just can them all and open as needed, warm up, and eat!

I would make this in pints and wipe the rims with a paper towel with vinegar to be sure the rims are clean. And I would also use a hand blender so its not so chunky. I'm still trying to find good videos on this. Another tip... get a tripod for your camera so your hands are free and video not so shaky.
Thank you for your suggestions. I have a large family so I make mine in quarts. We also like ours chunky. I use clean hands, a wet finger and listen for the ringing sound of the jar rims. Paper towels will leave a very fine bit of lint just inside the jar rims which we don't care for. I guess it all boils down to you make it your way for your family and I'll make it mine for my family.
Also, my girls are learning to use the video camera and this encourages them.

@@TheSibyljh53 cool. I had a golden retriever named Houdini when I was 8. We could not figure out how he kept getting out of his kennel. Then the neighbor behind us told us that they saw him climbing the chain link fence. It stopped for a short time after we covered it. Then he figured out how the latch worked...

How did you slice your rind so thin, and can this succeed if the rind is sliced a bit thicker? We don't mind (We being my husband and I) a bit of a chunky preserve. Others do and that's fine.
Thanks for your visit. I hand slice the rind to about an eighth of an inch. The salt water shrinks them even further. You can cut them to a quarter of an inch for chunkier pieces if you like. They have to be cooked a bit longer though.

This the honest truth. If you are nervous or uncomfortable doing this video, it does not show at all. You have a lovely calm voice, you show us exactly what you are looking for, and give us confidence we can do it too.
What kind of crossbow and pellet gun do you suggest to get?
I suggest a 1200 psi .177 pellet gun and a self cocking 80 lb crossbow. These work very well.

Cooker, andI usually do the water bath method on the stove-top (I think that's what it's called) :-)
