A Handed-Down Family Recipe || Zucchini Bread

- This recipe for zucchini bread was handed down to Meg from her mother, and it’s one of our favorite quick snack treats.
- Zucchini Bread -
Preheat oven to 350*. Grease and flour a bundt pan.
3 Cups Flour
1 1/2 Cups sugar
2 tsp cinnamon
1 tsp salt
1 tsp baking powder
1 tsp baking soda
Mix in a large bowl and set aside.
3 eggs
1 Cup olive oil
2 tsp vanilla
4 Cups shredded zucchini
1 Cup raisins
1 Cup nuts
Mix together, then add to dry ingredients. Mix thouroughly until all flour is mixed in. Scoop into bundt pan and level out. Bake for about 1 hour, until a toothpick comes out clean. Let cool before slicing.

I love her cooking teaching segments more than most others because it's like jazz cooking. She not only improvises constantly but she tells us how to do it as well. If you want to know how to cook without recipes Meg's the one to watch. I love the way that all the way through she's talking about substitutes for everything.
Kids vistitor "Why is your Dad staring into the open fridge?" Son "Shhh he's cooking tonight and it's gonna be awesome."
I was the Dad hearing this and grinned because I learned to cook at my great grandmother's apron strings.
It wasn't that she didn't want to follow a recipe it was that she never really knew what we would have on hand and could not afford measuring cups etc...
By the time I came along to learn we were not depression era poor anymore, but by then "seeing what we got" and measuring by feel was just how it was done.

Granddad to mother to son to his child to theirs in my family line all taught the family table words to live by:
"Wanna eat? Make sure your butt is in that seat." Spoken as the reigning head of the household at that time gestures to your given chair or spot on the kids bench.
Not there for some reason at the last meal? Good news is there will be another in six-ish hours.
Unless you missed dinner then you best go look sad near your ma in hopes of being granted a "pitty plate".

You can use unsweetened applesauce to cut the sugar even more although it may need a bit more flour to counteract the semi-liquid applesauce. Also adding semi-sweet chocolate pieces kicks it up a notch for us chocoholics since chocolate improves just about everything! 😂👍💖

When you butter your pan, instead of coating it with flour, use sugar. It makes a slightly crunchy sweet crust!

I bet you love the pineapple. Adds a great taste and moisture. I always add a can of crushed to mine. Also cranberries are a great substitute for raisins
I just made one, but used dried currents instead of raisins. I think a lot of different fruits would work well.
I like that idea, not a fan of raisins, must have eaten too many as a kid but love cranberries! 👍
Thanks for this...have been making this exact recipe for 50 years..as a young bride, my friend gave me this recipe after eating it at her home..asked her where she got it and she said her Aunt Judy...so it went into my recipe cookbook as "Judy's zucchini bread"..nice to remember. I grew 6 plants last year and year before - no zucchini - squash bugs and vine borer. This year I just tried one plant and really watched it - vine borer. So in 3 years I've had no zucchini, the only gardener on the planet to not grow it. Your cake looks so delicious!!! Makes me mad at the bugs all over again.
You are not alone. Plenty of people have to time it to miss the first round of borers, and get what they can before the second round take it all down. Although usually means you are trying to dodge late season pickle worms too. I hear the hybrids or plain green zucchini are faster and more prolific, but we'd rather struggle for the variety we like.
Mine hasn't done well either - the plants are still alive but not one blossom. I still have hope ... I used to grow so much that I had enough to give away ... sometimes sneaking it into friends unlocked cars in the church parking lot on Sunday ... 😂

I make ox tail soup as well. Your typical soup veggies, along with barley and a generous squirt of ketchup. It add a flavor and color.
I just saw oxtails (actually beef tails) at Fred meyers and they were 12.99 a pound! For oxtail! My mom used them because they would almost give them to you back in the 60's and 70's. She made all kinds of meals out of them. Now you can afford them. Never thought I'd see the day that hamburger meat is 4.00 to 8.00 a pound either!

Somewhat similar to the recipe I use but I don't add the fruit or nuts. Instead I use cocoa powder to make Chocolate Zucchini Bread. and pour into 3 loaf pans. My family loves it.
Sounds great, how much cocoa powder do you use for the 3 pans of dough?
@@irmibullinger1421 my recipe calls for 4 squares of unsweetened chocolate but I never have that on hand. You substitute 3 tablespoons of cocoa for each square of chocolate so I use 12 T. altogether. My recipe also uses 1 more egg, another 1/2 c of oil and 3 C of sugar (which can be cut down).

Thank you, thank you, thank you! You inspired me to make up a batch with my dad who has alzheimers and has never cooked a day in his life! We made up a special one in a smaller pan for his great grandson who will be turning 13 this week. We added chocolate chips which made it extra special. Love your channel...especially seeing your Ms. Buggy as we have a Lily Bug (same age) of our own (granddaughter). Thanks for sharing your special recipe!

Just made your zucchini bread recipe. I made it gluten free. As I'm allergic to gluten and dairy. I subbed bobs red mill baking flour. I also used mini vegan chocolate chips (no dairy or gluten) and I used walnuts. Turned out really good. So yes, you can sub gluten free flour. And I used one of the commentators idea using sugar in place of the flour for dusting the bundt pan. Worked excellent!

The recipe is similar to one I found many yrs ago. It includes a small can of crushed pineapple. It gets compliments almost every time I take it to a pot luck. It came from Organic Gardening magazine in the late 1970s & is called All-Seasons Bread. It has directions on using carrots, apples, sweet potatoes or bananas saying to use ONE of those. I have made blueberry banana bread & it's great. I was surprised it didn't say zucchini but that works, too.

my wife and mother just made the family like 20 loaves of zucchini bread. Had a friend at work that told me to try cream cheese as a spread instead of butter and I absolutely loved it. Great video Meg you are a shinning beacon of woman hood, I love watching you with your natural beauty and loving demeanor as a mother and wife.
I get together with my friends on most Friday mornings, we have an online yardsale that meets at the fairgrounds on Fridays, and every so often I like to surprise them with something tasty. This Friday it will be your handed down Zucchini bread. I have a baking pan that's made for making small loaves of bread and I will cook them in that so they each get a small loaf. Thank you So Much!
Tip. Pre soak your raisins in hot water or heated apple juice. Drain and add to wet ingredients.

Your Zucchini bread is beautiful. I bet it's amazing. I never thought about baking it in my bunt pan. I usually just make it in my loaf pans so they fit into baggies. Great idea the bunt pan ;)

I bake my pound cake and banana bread in my bundt pan also. You can get 3-4 pieces of cake in your baggy.
I bake my cakes in ring tins, similar to bundt tins with smooth sides and a larger hollow centre.
I love lemon zucchini bread, it’s so good.
