Zucchini Bread with 5 CUPS of Zucchini!!! Using Up the Harvest

  • The zucchini plants have gone bonkers while our attention was on harvesting other parts of the garden. Now, we have TONS of zucchini to use up. Sarah has discovered a ZUCCHINI BREAD recipe that uses 5 CUPS of shredded zucchini! She shares the recipe...and it is written below!
    Fantastic Zucchini Bread
    (Makes 2 loaves)
    4 1/2 cups all-purpose flour
    3 teaspoons baking powder
    2 teaspoon ground cinnamon
    1 1/2 teaspoon baking soda
    1 teaspoon freshly ground nutmeg
    1 teaspoon fine salt
    6 large eggs, at room temperature
    1 1/2 cup packed dark brown sugar (I used 1 cup)
    1 1/2 cup granulated sugar (I used 1 cup)
    1 1/2 cup vegetable oil
    5 cups shredded zucchini
    Heat the oven to 350°F and arrange a rack in the middle. Spray 2 bread pans with oil; set aside.
    Mix together flour, both sugars, baking powder, cinnamon, baking soda, nutmeg, and salt in a medium bowl and whisk together. Set aside.
    Mix the eggs and oil in a large bowl and whisk until the eggs are broken up and the mixture is thoroughly combined. Using a rubber spatula, fold in the flour mixture until just combined. Fold in the zucchini until evenly mixed.
    Pour the batter into the prepared pans and spread it into an even layer. Bake until a cake tester or toothpick inserted in the center comes out clean, about 1 hour to 1 hour 10 minutes.
    Transfer the pan to a wire rack to cool slightly, about 15 minutes. Run a knife around the perimeter of the pan and turn the bread out onto the rack to cool completely.

    Ok… So my grandson, Sammy and I just watched your video, nodded to each other and got busy! The bread is currently baking and we are just tapping our toes!     My mom always had her grandmothers cast iron Dutch oven on the stove DAILY thru zucchini season, simmering with chunks of zucchini, onion tomato, garlic ~ it was a daily side dish to our dinners. I do the same thing with the same Dutch oven ❣️

    Sarah, This recipe is a WINNER! Outstanding! I made two loaves and it was so well-liked I just made another 4 loaves today for the freezer. Great way to use some of the harvest. Beautiful too. I recommend sticking with the ONE cup of each sugar - not more. It is plenty sweet for just about any sweet tooth. I also recommend peeling it. It is much more attractive. THANK YOU! This ONE Is a keeper. I personally stay away from all sugar and four. I am still on the search for a gluten-free zucchini bread. You are a natural teacher.

    Ceylon cinnamon is a species of cinnamon native to Srilanka (although now it's cultivated in different parts of the world). Ceylon is the old name of Srilanka. I'm from Srilanka and I've a couple of trees in my front yard.

    🤭🔔Heads up Sarah, you forgot the measurement of the baking powder in the bread recipe. I thought it was a little weird it was omitted of the recipe so I just added
    1 and half tsp. Bread turned out wonderfully thank you so much

    I made them, they are so good. We are in the peek of the zuccini season here in Finland so the recepy was so welcome. I also planted too many plants so I have lots of what to bake with.

    My granny always added chopped walnuts and raisins or dried cranberries. It was the best zucchini bread I ever ate. I miss her and her cooking.

    Turned out really delicious! My daughter uses it to ... So moist...I also took a bunch of shredded zuccinni and squeezed out the juice in a nut bag and got a lot of frozen zuccinni for making recipes all winter....

    Bacon, zucchini and egg bake. Just salt your shredded zucchini to get rid of most of the water, add to scrambled eggs, add chopped bacon and onion, bake, put heaps of cheese on to finish.

      I made something similar to this before. It was considered a "crustless" quiche and yes!! It is amazing. I think I put some green chili's in mine, but that's a Colorado and New Mexico thing.

    Make zucchini hash browns! Their delicious! Just shredded zucchini salt pepper and fry in a pan like a pancake. Yum!

      I make Zucchini Tuna cakes, comes out like a Fish Cake, so hash brown would be the same thing minus the tuna, can see this working great.

      No, it's just like making a hash brown. Shred the zucchini, salt, pepper, little oil or butter in the pan. If the zucchini releases water, like the potato, squeeze juice out, and make a Patty and fry in the pan. Flip when golden brown. Easy peasy.

    I shred and freeze extra zucchini in 1 and 2 cup portions and hide it in lots of meals...meatloaves, casseroles, spaghetti sauces..and of course, breads and muffins...i also dice some and freeze to use in meals like stir fries. :) Thanks for sharing this recipe! My son is severely allergic to eggs so baking recipes are hit and miss for us, but I'll have to try this with an egg alternative and see if it works out :)

      Me too! One cup zucchini shredded into baggies and freeze them. Hiding it in all sauces, egg dishes etc.

      Definitely not the only one lol. I have portioned bags for cooking and baking in 4 cup measures all in the freezer in the basement. 108 cups shredded zucchini mostly for baking and all for about $10 off the clearance rack at my local Walmart stores since my local supplier isn't sharing lately, he would be fired but he's family lol

    a none bread recipe I found a couple years ago that I an everyone else loves is, Zucchini Tuna Cakes. I started the Keto diet when I found this an was looking for things that did not have flour in them. This one here takes a ton of Zucchini, eggs, can of tuna, cilantro. After you shred the Zucchini put it in a towel an twist like crazy to squeeze out as much water as you can. Mix tuna eggs cilantro an then pan fry them. The out come is extremely similar to fish cakes if done correctly. When I make this I use 8 cups of SQUEEZED zucchini, so A LOT of it gets used up, which is great for me, cause as you say, WHAT do you do with it all.
    A second trick I learned years ago, I prep it like you did, de-seed it, an then die it up an mix it into my cucumbers when I am making Mustard Pickles, you cannot tell the difference been cucumber an zucchini when it is the exact same size an pickled like this.

    Just made this recipe tonight, but instead of making two regular size loaves, I made 3 small (8x4x2”) loaves plus 12 muffins. All cooked within 45 minutes. Absolutely delicious.

    My husband brought up 4 huge zucchini Friday. I was looking for a recipe for zucchini bread. Thank you so much. I just shredded them. Will use part today and freeze the rest in 5 cup increments. I also just made butter from the raw milk I buy from a local farm. Using my KitchenAid mixer. I think I learned this from you as well. Have a Crock-Pot of black eyed peas cooking from our garden last year. We live on 78.48 acres about 5 miles north of Branson. We don't grow as much of our food as you guys , but we do what we can. And we can what we do ,lol. Your UA-cam channel has been very helpful to me. Thank you for being here.

    Make Zucchini milk! Peal, chop up and toss in a blender, strain if seedy, stick in whatever containers you have and toss in the freezer. Use zucchini milk in any recipe that calls for milk or water, for example bread, cakes, soups, stews, etc. I've never tried canning it, but with your expertise you can probably figure it out. Adds nutrition to your recipes (sad for the compost heap).

      Soggysuzzi That sounds awesome! Just thinking and now I wonder........if you juice them you could have to resources, possibly? Juice to add to recipes for any liquid substitute and the solids to add to meals for stretching the amount, thickening, and just good ole' hidden nutrition! Never hurts to try? Or my imagination has the best of me!! Lol.

      I suspect it depends on your blender. If you have a heavy duty blender that takes care of the seeds, if not strain them out. I use it as is and if I find a giantnormous zucchini that's where the seeds need to be strained out. It's a quick and healthy way to use it up. Have fun playing with this! Have a great day.

    Ever tried zucchini chips
    Slice very thin dip into buttermilk and roll in ranch seasoning( like hidden valley ranch dressing powder) and place in a dehydrator
    This makes an AWESOME healthy crispy snack like potato chips with out the crud.
    Also nacho flavor thin slices dipped in water season with taco seasoning and a few sprinkles of shredded cheese
    And then there is vinegar and sea salt i use Braggs apple cider vinegar and pink Himalayan sea salt
    Oh and these can also be made with cucumbers!😊

    I usually make zucchini boats, just cut them in half and spoon out the seeds. Then I fill them with minced meat and cook it in the oven until soft. You could adapt that filling however you'd want, add cheese on top, whatever spices you like, put some onions in the meat or make it totally vegan. I use butter or olive oil on it and herb de provence. You can eat a lot of zucchini on your own like that. The bigger ones are just a bit more fibrous but will still work for this. I also use them in a pasta sauce but that just takes a little zucchini while the boats can take loads for just one family meal. I also just grill them or fry them, celery salt is a nice flavoring on them and eggplant. Gives just that touch of savory to it.

      this is also our favorite. we use sausage and top with parm. each person gets at least a half- maybe whole depending on the size. Not the monster she was cutting up- but there's 4 zucchinis down in one meal...

    I have a zucchini brownie recipe that I googled. Patty at Alderman Farms has a video on mock apple made with zucchini. I made her recipe & it’s amazing. My family truly thought it was apple crisp that they were eating 😃

    My Grandma used to make her own version of Calabacitas. Calabacitas is a side dish with Zucchini, corn, onion and Hatch Green Chile. Normally the zucchini is chopped up in 1 inch or so pieces and fried in a little oil with the corn, onion and green chile. My Grandma didn't want all that oil so she would boil the zucchini and she would make a casserole. She would brown some really lean ground beef and set it aside. then in that pan she would wipe out any leftover grease and then she would cook the onions until they were translucent and then add the corn and green chile. She then layered the zucchini, meat and the onion, corn and chile mixture twice and then she would spread a small amount of shredded cheddar cheese on top and bake until the cheese was melted and starting to brown. You can make a really small amount or a huge 9" x 13" baking dish, depending on how many you cooking for just season to taste with garlic powder, salt and pepper. I have even added chopped fresh garlic to the onion, corn and cheese mixture since I like garlic more than my Grandma did.

    I dehydrated most of last years Zukes! Then I powdered them for smoothies, soups, stews...and I didn’t plant any this year. The seeds from big ones are as edible as pumpkin seeds. Blessings y’all!

    The only thing missing in your zucchini bread recipe is the walnuts. Makes the world of difference. :-) You can also use zucchini as spaghetti noodles. You can cut them in half and fry them on the cut side add your spices and lay a slice of cheese (your choice). You can pickle them too. there's a lot you can do with them. :-)

    I dehydrate and then use blender to make flour..use it for flour in ur zuke bread. My mother in law used 1 pound coffee cans...

    I feed my extra zucchini to the chickens. I slice it in half lengthwise and they love it. They eat it until there's just the green skin left. Especially the big zucchini that aren't as good for eating. Next year I'm going to plant extra zucchini plants just to be able to have more for the chickens.

    My favourite and best recepy is zucchini-tomato-sauce. I can it and use it for pasta, pizza, stew...
    About 6 pounds of shreddered zucchini, onions, carrots, 2 l of tomato sauce (about 4 pounds or 8 cups), a tablespoon of sweet pepper pouder, pepper, Rosmarin (english?), Thyme, salt (no jodid or fluorid inside!). Cook all that about 1/2 hour, fill it in jars and can it (30 min at 90 C, I don't know about your canning system, 10 min in a pressure steam pot is also possible). You get rid of bathtubes full of zucchini with that recepy!

    so glad to have found this recipe. i have lots of shredded zucchini in the freezer. with the cold weather we've been having, this would be a great bread to make now. We fed our egg shells to our chickens. It made the shells firmer.

    When our small garden got away from us, we ended up with really big ones too. We were sharing with everyone and one friend made fried zucchini chips (really good) and another cut it the way you did, scooped out the seeds, filled it with taco fillings and baked it. It was fantastic!

    I made zucchini bread this evening. Changed your recipe a bit. I used 2 cups of sourdough discard and only 2 cups of flour and 1 cup of oil ( I could have used 3/4 cup). Came out great. Best zucchini bread I have ever made. Thanks for the basics!

    that's a great way to do it of course many of us who have been gardening for 40 year 50 years have run into those zucchinis who wants to take over the garden and that would use that same method whether we've used a big ladle or we've used our old ice cream scoops to scoop out all those seeds

    I'm going to have to go buy some zucchini. That bread looks delicious. My favorite way to have zucchini is to dice it along with fresh tomatoes, strips of green peppers and onions. Sauté it all together in a frying pan until done. Don't over cook it. When done, sprinkle cheese on top and let it melt. So delicious that I think I could eat the whole pan at once. (But I don't! lol). Try it. I bet your family would love it. Don't forget the salt, pepper and garlic salt. Really adds to it.

    Got my first 3 zucchini yesterday. Lots of lil ones just waiting!! I buy Zulka Morena Pure Cane Sugar, Non gmo certified at Wal-Mart. 4 lbs for $1.82. I can, bake and use it in my coffee. Not as sweet as white sugar, but like you said no gmo when you can't afford organic. Going to try your recipe, thank you!! God Bless you all!!

    My wife and I tried this recipe and are very happy with it. Bread came out fantastic! She is gluten intolerant and made a batch using her gluten free flour and it came out just as good as the regular flour loaf did. Thank you for sharing!

    I make squash cake! I use either white scallop squash or green zucchini.
    Recipe:
    3 to 4 cups of cooked squash, seeds removed, (undrained for more of a custard type cake or drained for a stiffer cake)
    1 1/2 cup sugar
    1 stick butter
    3 eggs
    1 cup water to start with more added if needed
    1 box of white cake mix (use scratch rec. If prefer)
    1 T vanilla
    Mix in large bowl with mixer for 2 mins. to break up squash. Bake in sheet cake pan at 350 til center is done. Occasionally I add a meringue on top, but either way is delish.

    This was so delicious! We had enormous zucchini and it was our first time growing. We've had these heirloom seeds for almost 10 years! My 2 1/2 year old daughter said she liked these more than mac-n-cheese!!

    My nanny makes zucchini pie which has been a family recipe for about a hundred years now from my great-grandma's mom. I love her zucchini pie, it can be eaten hot, cold and be frozen. Takes four zucchinis, pancake Bisquick mix, Parmesan cheese and a few other secret ingredients of hers. Thanks for your tips, I always love seeing what you're creating from the Garden!

    we have been blessed to have the extras from a neighbor this year.... I have used some for our family but have also supplemented the chickens with sliced up zucchini. They absolutely love it!

    I have been using zucchini, generally BIG, from a friend ALL SUMMER. Make zucchini fritters, bread, spiralized, use in meat loaves and wtuffed peppers, broccoli soup, etc. It's endless. LOVE YOUR SHOW!! ♡ D

    Thank you for the freezing tip and using an ice cream scooper to take the seeds outs. Our favorite zucchini recipe is Pina Colada Zucchini Bread. Moist and yummy!

    Another way would be to shred it up and put it in sandwich size bags freeze them and when you make chili add a bag to it. One way to get your kids to eat their veggies.

    I just canned Chunky Mustard Pickles made with 14 cups of zucchini. It is delicious and a good way to use up a lot of zucchini.

    That garden is a beauty! You two have done a super job! Lots of experiences in order to get to this point! Beautiful zucchini! I used to grate zuc, carrots, onion, with SnP n paprika, a little flour an egg, a squirt of olive oil together, mix well and form patties and fry in olive oil until light brown flipping when needed. Or you can use the mixture to stuff a hollowed out zuc and bake 325 till tender.

    OMG and Brava Sarah! Just found your zucchini bread recipe. I grew zucchini as one of my pandemic crops along with tomatoes. I followed your directions exactly for this recipe with the lower sugar and my zucchini bread turned out amazing. Very moist. Sweet enough. So good. Makes two loaves as you said. It's just the two of us so I am freezing the second loaf. I did add chopped walnuts. This was the zucchini bread recipe I was looking for and found it!
    BTW...your videos have helped me during this Covid pandemic to learn about everything tomatoes, zucchini and peppers.
