    Please at the end ad close ups so we can see the texture. Push it to show how moist or dry it is an cut it in a close up to show if it crumbles and such.

    I make my seitan with garlic powder, onion powder, paprika, turmeric, black pepper and salt. then with the liquid i add apple cider vinegar, soy sauce and water to equal the same exact amount as the vital wheat gluten powder for a perfect consistency. Then i bake it at 400 degrees uncovered in the oven for an hour. It tastes very meaty and goes great with everything :-)

    Looks delicious...I haven't tried to make any type of Seitan, but this one doesn't appear to be too intimidating. I may give it a go!

      Yeah this one was super easy! I love that I didn't have to use foil and that it was just baked instead of steamed AND baked. And I'm sure it could be simplified further if one were in a hurry or feeling lazy. :D

    I've been reading the comments here for a couple of minutes now.
    I'm neither vegan nor vegetarian, but I have huge respect for those who are one. It's hard to give up eating the food you love to all vegetables but they have their own personal reasons and I respect that. These "meat" meals they recreate are for people who have a hard time transitioning to vegans/vegetarians or those who miss the taste of these foods and recreate it without harming animals. It's alright if you're vegan, it's alright if you're not but please respect each others beliefs.

      When you learn animals are emotional creatures who suffer like us, yet continuing harming them for pleasure ... that's not a respectable trait at all. It can be safely assumed that someone who chooses pleasure over ethics is not a good person.

    I'm not vegan, but am convinced it's vital to explore as many meat free protein options as possible...especially in our current political climate, where anything could happen.Just learned how to make awesome tempeh from scratch...this looks great too!

    If you knead the dough for longer (like ten minutes) it will end up with a more firm streak-like texture. Check out Gaz Oakley's video on vegan steak if you want an example of how to achieve a different texture. You're awesome! Love your videos

    made this yesterday, its yummy, had some on a sandwich with the stock and vegan sour cream. wow just great. I love making my own seitan, it taste much better and not so processed.

    I am not vegan nor vegetarian, nor any particular set food preference group. I just love to try different foods. This looks great and the 'meatloaf' would be wonderful with mashed potatoes and fresh blanched green beans! I will definitely try it.Barbara, if you don't subscribe to this type of food, why are you even watching?????

      Ironic that I just put a seiten to simmer and realized I'd forgotten rosemary! I love rosemary in seitan! I saw this video after I put it to simmer. Great video! You can play with whatever seasonings you like

    This is great content!
    As someone who is looking to eat more plant based, I learn a lot from this type of video format. It makes the subject matter much more approachable, and I can envision myself actually doing some of these things.
    Question... The only seitan I've had is the stuff that I make. I use the Bob's Red Mill, and it typically tastes very much like wheat. Does this recipe taste like wheat? It looks delicious...

      This one has a lot of flavors going on, so I don't notice the wheat flavor. I think the key is to add a BBQ or other sauce that has a very robust flavor. (I made it again with ketchup instead of BBQ sauce and didn't like it as much.) If you make a very simple seitan recipe with just water and a few spices, the flavor of the gluten really comes through.

    I finally tried a recipe. I feel so accomplished. It was too sweet for me, but I will try it again without the brown sugar. The other flavors were good.

    Not vegan, not even remotely on a plant-based diet... that said, I love trying new food of any kind and have been to a number of vegan restaurants and loved their food. I shall have to try making this some time. See if I can convince the carnivores of my household to try some, lol.

    Is there a way to make this gluten free? I know there are other flowers I could use, but would it change the texture too much or would it just not work?

      Hmm unfortunately I don't think vital wheat gluten has a substitute, because it's basically pure protein. There might be some soy or bean-based faux meat recipes out there though?

    You're a natural for cooking videos! I have found, by accident, that leaving out some oil gives it a tougher texture (or something with texture). Is the tomato enough of a substitute?

    Is there a substitute for chick pea flour? I’m allergic to chick peas :’(
    And is tamari soy? I’m allergic to soy too ... actually I’m allergic to most legumes ... hence why I haven’t been able to become fully vegetarian/vegan :/
    I’m about 80% vegetarian now but it’s still very hard for me :(

    Can this be cooked in a pot on the stove? I dnt have a dutch oven and with my health conditions I wouldn't be able to lift one either.

      Yes, it can be done on the stovetop. Just remember to keep it at a low simmer, never a boil.

    I was just reading the cookbook Burma Superstar and the recipe for shan tofu looked really cool. How did it turn out? I think this is the second time I've heard you say you don't like dried parsley and I know you're a big fan of fresh cilantro. What are your feelings on fresh parsley? I'm team parsley but I won't judge if you don't like it.

    Do you not need to sauté the onion and garlic? It seems like this would give you boiled onions.

      I suppose you could but it's not necessary. They get quite soft and almost just blend into the end product this way.

    Thank you for this recipe, The Buddhist chef had already proposed a recipe of seitan but it had to be cooked one hour into a plastic film and im not a fan of this, so I will definitely try this one instead (the recipes of the buddhist chef are by the way very nice as well..)

    is vital wheat gluten same as normal flour?

      No, it's essentially the pure protein from the wheat. I have seen recipes using normal flour, but you have to rinse it many times in cool water to remove the starch and just leave behind the protein.

      I would imagine so. The only thing is the texture may be different -- a little spongier, maybe? Since the last half hour in the oven it's uncovered, it dries out a bit and gets firmer.

    are vegan restaurants more expensive than regular restaurants? It seems like so much work to make vegan "meat" and then make a dish out of it.

      It really depends. There are a lot of simpler seitan recipes with fewer ingredients, but honestly I don't mind taking time to make a big batch and having enough for the week.
