    Vegan cheese is a slow game in the UK, there aren't any good pre-made cheeses in shops like there seems to be elsewhere, so I can't wait to try these recipes out! (Now all I can think of is cheese)

      Haha I like the homemade stuff far better than Daiya, Follow Your Heart etc. (I love those too, but this tastes so much fresher and less artificial.) I hope you enjoy if you try them!

  • @icannotchoose
    @icannotchoose 6 років тому +46

    I made the chickpea brine one and my mind has been blown. I used agar because I can't get kappa, so it was more of a brie texture, but it great. I think I'll use less coconut oil next time and a bit more tapioca. The aquafaba totally make the cheese taste like cheese.

    • @suhairawsaj3638
      @suhairawsaj3638 6 років тому +7

      Yomilosofandum why? Do understand the overpopulation process. Since most people have children in their 20-40s (later than ever before), their children grow up to that age ratio by the time their parents are dead. Notice how more people are having less children already so... Yeah. Overpopulation is usually because of third world and developing countries having 5× the average children per family unit in Western countries (2.4). Having children is NOT a bad thing. No one is asking you to have like 28 million kids, okay?! 😉

    Try miyoko's meltable recipe with homemade soy yogurt, it can be made more sour than store bought coconut yogurt; you can also culture cheese longer for similar effect, though the yogurt source impacts taste a lot. Serves about same purpose as lactic acid probably does... not that I'm against the lactic acid, but I imagine your yogurt choice changed the taste a good bit.
    I ferment soy milk with chili peppers (or the stems) as they are inhabited by lactobacili; this requires less regulation of temperature than commercial starter, I suspect these bacteria lean toward being mesophilic rather than thermophilic.

    I have Miyoko's The Homemade Vegan Kitchen cookbook and her mozzarella recipes are totally different than any of these. Most of the cheeses in that book are made with rejuvalac then fermented. I have been wanting to try aquafaba cheese. Your videos always inspire me to get in the kitchen!

    • @JustLindsayH
      @JustLindsayH 7 років тому

      Not yet. I just got my package with the rest of the ingredients I needed. Knowing the funk that comes with drinking rejuvelac my assumption is it will add good cheese llike flavor. Especially because you ferment it for 1-2 days as well.

    I got so excited when I watched this a week or two ago that I chose the last recipe (aquafaba and kappa) and went store to store and online for all the stuff and last night I finally made some. I was soooo disappointed but it's because something went wrong. I followed the link you added and used their measurements but during the heatin process, things were a lot less creamy and a lot more oily and clumpy. Idk what I did wrong, maybe too much thickening? Idk, I followed the instructions perfectly. ):

    These all look delish! I just wanted to say that carregeenan has been linked to causing damage to one's GI tract FYI. However, I'm definitely going to try the first two recipes. :)

      You can for sure sub in the agar -- I just think you need to add a little extra.

    Hi Sarah, Love your videos! I only try new vegan recipes if you try them first! I was wondering if you could compare tofu scramble and besan (chickpea flour) scrambled "eggs" next!

      Haha I have actually been making tofu and chickpea omelettes for the past few weeks, trying to figure out a good recipe! As soon as I find a keeper I'll update.

    I've made the aquafaba cheese and put it on pizza!! Mine didn't get that firm though so I did something wrong. But it still was amazing!

    You are a Vegan-Cook Goddess, Sarah! And these cheeses are simply divine - I can almost taste each one! I've turned full vegan for almost a year now, not for diet or anything, but for my great love for animals. and I am much learning so many "How To's" to cook for my fam (who wishes to turn vegan, too! Yaayyy!) and looking forward to be able to share to others that will get them thinking to go vegan, too :).
    I've got one question thou regarding "fermenting". Will it give off more texture and flavour if fermenting is done for a longer period of time? Like how fermenting is for normal cheese? TIA for any reply.... Keep it up with ur channel, Sarah! I'm a fan from Hong Kong! Cheers! 😊

    I have Miyoko's book too! I'll have to get on some online stores and look for those ingredients like carageenan and all that... looks like it will be worth it!

    • @SarahsVeganKitchen

      Yep I got the carrageenan online through Amazon. But if you want to make it with agar agar, I've actually seen that at Whole Foods!

      I actually live in rural Norway, so no Whole Foods near me, hehe. But it's good to know there are options out there!
