Best Chocolate Cookie Recipe for Cut Out Cookies

- In this video recipe tutorial I share an easy recipe for chocolate cut out cookies.

CHOCOLATE COOKIE RECIPE
2sticks (1cup, 226grams) room temperature, unsalted butter
1/2cup(140grams) tightly packed brown sugar
1cup (200grams) granulated sugar
1/2tbl vanilla extract
1/2tbl almond extract
2eggs room temperature
1tbl espresso powder
2/3cup(70grams) dark cocoa powder
3cups (450grams) all purpose flour
1/2tsp salt
3/4tsp baking powder
Beat butter and sugars, for about 2 minutes, until fluffy, scrape down the bowl.
In a small dish bread the eggs, add extract and whisk until egg are broken up.
Gradually add egg mixture into the butter mixture, beating well after each addition.
Sift together cocoa powder and coffee powder.
On low speed add cocoa powder mix, on low speed mix well until combined.
In a large bowl sift together flour salt and baking powder.
Gradually add flour mix to the butter mix, on low speed in 3 additions.
Scrape out all of the cookie dough into a bowl. Knead for 30 seconds until no flour streaks are present. Dough will be soft.
Wrap into a plastic wrap and chill for 4 hours or up to overnight.
Preheat oven to 375F(190C). Roll the dough between 2 pieces of parchment paper, roll it out to 1/4 thick. Cut out cookies.
Place cookies on a baking sheet lined with parchment paper. Small cookies bake in 6-7 minutes. Larger cookies take little longer.
Also I use electric oven, gas oven may act little differently and baking time may vary.
Cook cookies completely. Decorate as desired.
Store in the airtight container for up to 2 weeks or freeze undecorated cookies between pieces of wax paper in a large freeze safe container, for up to 2 months.
Decorate cookies as desired with royal icing or other medium that you use.

We have a coffee shop that makes frozen cocoa drinks that are to die for and I happened to have the cocoas, used for that flavor, on hand. I thought I'd use that instead of chocolate flavor and top the cookies with an easy fondant I make with marshmallow fluff (or cream, if you're not from the north-east) and confectioners sugar.....and WOW! These taste like hot chocolate with marshmallows!!! 👍🏼👍🏼
I substituted more vanilla in place of the almond extract because I thought it would add an off flavor to the fondant.

for 9 min. (..littel to stiff..)
LOVE them on 8 min. exactly!(soft in the center and stiff on the sides).

Hi Haniela, I am from Malaysia. I love your cookies taste... I means so much. All the family member was impressive. I didn't put Almond syrup. Very hard to find in my country. But the texture is not my expectation. I would prefer to have crunches cookies. My mum ask my to replace some flour with corn starch. chocolate cookies is very sensitive and easy to over cook. I bake 150'c for almost 10 minutes. take it in & out. finally I got them cook properly. Not stick on the paper.
Chloe Neo Try 180C, they are softer when you first make them but they get crunchier in a few days.

Hi Haniela! Laura from UK. Thanks for sharing these videos; I love your recipes! I would like to ask you, how should it be the consistency? Are they soft bite? I’m a bit confused and sometimes I think they are raw... I use my electric oven at 175, edges get tinny brown but bottom still creamy and not sure how to evaluate the inside. If I cook them at 190 I think they are going to get brown quite quickly. Or will they be cooked better? Sorry, wrong comment here as I’m talking about the sugar cookies 😂 but anyway, same with the choco ones. And with these ones in particular, they don’t raise that much using same wooden sticks as they have half of the baking powder. Not sure to rise my wooden stick or add more baking powder 🧐 sorry too long, and thank you so much! I’m making loads for my girls school and feeling frustrated as they are not as good as my first ones! 😭
Hello Haniela. First of all I really enjoy watching your videos as they are easy to follow, very informative and instructional. Thank you for sharing them. I have a question re: the recipe. Are the amounts of flour and sugar the same as your standard sugar cookie recipe, which BTW I love, with the only difference being the sugar amount equally divided between the brown and the white. Also how much cocoa powder is used in the recipe. Again Thank You for sharing your knowledge and guidance.

which measurements do you use? cups or the one with grams? If you use the grams, etc...do you get better results? I have had problems using cup measurements with this recipe before for some reason, so today I am trying out the other type of measurement.
Are they soft/a little bit raw in the middle? Because I like that :)

What kind of baking sheet do you use. I only use light colored sheet, I use USA pan for baking cookies and always line your sheet with parchment or silicone mat for baking. Do you have electric or gas oven?

My question is: Can I use fondant on these? I’m assuming I can, but wanted to double check. I am not good at royal icing.

Funny that you just posted this recipe because I did make Lilaloa's chocolate cookie recipe 2 weeks ago, I did not like it one bit and family and friends didn't like it, it only tasted cocoa, it was lacking flavor other than cocoa and it needed more fat. I always avoid shortening, so last week I came up with exactly your recipe except for the almond extract, I too added coffee powder and added the much needed extra butter and did put in brown sugar to elevate the flavor, they came out perfect, next time I will put in the almond extract as you suggest.
Great minds think alike. I seem to always add coffee to all the chocolate desserts I make. Imagine adding hazelnut flavor to this. I need to look for hazelnut extract. Thank you Michele. I'll try extra butter next time.
Haniela's Can you use hazelnut oil?
I often do Italian cookies that use oil, but these aren't the decorating types. Just wondering if you decorate cookies that are done with an oil base, wouldn't that seep through the icing and get grease spots ? Instead of the hazelnut oil, maybe we could put in a bit of Nutella ?
Yes that is true about seeping. I could try using LorAnn oil, you only really need a tiny bit I haven't seen hazelnut flavor in the selection. I've seen natural hazelnut extract but now I just thought of caramel flavor. I could probably also use hazelnut flavored coffee...? I'm making these again today, they are so good. I can't have Nutella in the house, I can't control myself with the stuff. ;-)
Caramel? mmmmmm. I would much prefer this to Nutella. Chocolate and caramel is such a good marriage, and even better if you add chopped pecans. If you try it with caramel, let us know how much of it you added in.

Hello NebulaSkys82 , tiny bit, not too much though. You can still make it, omit coffee, I'd add chocolate liqueur to give the dough more depth.

I haven't been able to find a chocolate recipe that doesn't spread in the oven. I usually have to re-cut the cookies while they are still hot, even after chilling the dough in the fridge. Does this recipe hold it's shape?
Vee Horning it holds a great shape, at the end of the video where I'm putting cookies into the container you can see other shapes and they came out perfectly. I chill the cut out cookies before I bake them. Good Luck. I use electric oven.

Che Fatica for crunchier cookies, I'd use just granulated sugar no brown sugar, and omit the almond if you don't like it.
