    GINGERBREAD CHOCOLATE COOKIES
    1/2 cup (113 grams) room temperature unsalted butter
    1/2 cup firmly packed brown sugar, light or dark is fine
    1/3 cup molasses
    1/3 cup honey
    2 1/2 cups all purpose flour
    1/2tsp baking powder
    1 tsp baking soda
    1 1/2 tsp cinnamon
    1tsp ginger
    1/4tsp allspice
    1/2 cup mini chocolate chips (optional)
    Stir together flour, spices baking powder and baking soda. Set aside.
    Cream butter and brown sugar until pale in color.
    Gradually add molasses and honey, beat well after each addition.
    Gradually on low speed add flour mix.
    Stir in mini chocolate chips.
    Gather dough into a disk, wrap in a clear plastic wrap. Chill for 4 hour and up to overnight.
    Preheat oven to 350F.
    Roll out the dough between 2 pieces of parchments paper, dust the surface with some flour if needed.
    Roll it out fairly thinly.
    Using a metal cutter, cut out cookies. Press down to cut through the chocolate bits.
    Place cookies on a baking sheet lined with parchment or non-stick Silone mats.
    Bake at 350F for 6-8 minutes.
    Take the cookies out of the oven.Transfer cookies to a cooling rack to cool completely.
    Store in the airtight container.

    is this your "go to" gingerbread recipe without using the chocolate chips, Hani? my husband loves gingerbread and I like the spices you used, plus the honey!! I just wondered if this could be a cutout recipe to use vanilla royal icing. :-)

      kindredcottagelife Hello Michele, sorry for the delay in responding. I haven't tried this one with royal icing on top, maybe make them little thicker;

    Is it a must to refrigerate the dough? Is it possible to do without?

    Why do my cookies turn into a glob after I cut and baked them?

      Brighton Young did you refrigerate them? I don't always refrigerate in a ball all night. I will roll it out first then chill in fridge for one hour or freezer for 30 minutes then cut out the cookies. Then freeze them for 9 minutes then bake. Perfect shapes. I only refrigerate them overnight if I don't have time to cut them that day.
