Hi! I use your cookie recipes consistently, but I have major issues with the cookies spreading. I noticed you said omitting baking powder is a myth. What are the main culprits for why cookies spread and how do I fix it?! On average my cookies spread 1/4 inch per side from the size of the cutter. Thanks!!

Yay! Thank you!!! Is the consistency of the dough supposed to be the same for the vanilla 2.0 recipe (waiting until it pulls away from the bowl)? I’ve been having a hard time judging and they’re usually too soft to move and keep their shape after I cut them out.
YES! The vanilla should also have enough flour that it pulls itself into a ball and away from the sides of the bowl. If they are too soft to move - definitely try adding more flour 1/2 cup at a time!

Usually -- coconut!! But vanilla and almond also go really well with the chocolate cookies.

I know you probably will not believe this...but just a few hours ago I was making some chocolate chip cookies that were more chocolate then cookie. I was been thinking about you and was wondering how you cooked your brown chocolate cookies and when you would know it was finished. Because I was having trouble knowing when this cookie was finished. And then lo and behold you post this video. CRAZY!

First time making chocolate sugar cookies here. After mixing in the flour though it wasn’t as cohesive as yours. Too much flour? Also they seem a little salty. Can I cut the salt and/or baking powder next time? I loved that I didn’t have to chill the dough and they baked up perfectly without spreading.
It's hard to say what's going on with your dough without seeing it. Do you notice how my dough looks dry and crumbly but when I mix it for another minute, it all sticks together? Did you try mixing it for another minute?
Sometimes the flour will fall to the bottom of the bowl and the top of the dough will be sticky and the bottom will be dry. Try scraping down the sides of the bowl and pushing the dough into the bottom and mixing again.
If it's all fully mixed together and too dry...then it probably was a little too much flour. Try using 1/2 cup less next time.
If you feel it's too salty - definitely use less salt next time. :) The baking powder gives it lift and has nothing to do with the salt flavor though.

How much thick dough should be after rolling ?
Most people roll their dough to 1/4 inch or 3/8 inch thick.

Are they really no spread with the butter? I want to try a chocolate sugar cookie house instead of gingerbread but need a no spread dough.
Is chocolate the only sugar cookie flavor you make? What about a regular sugar cookie. Do you have a go to recipe for that as well?
Yes, she has a great vanilla recipe. I don’t know if she has a video making it, but go to her blog and look under recipes.
I don't know if you still answer questions from this but I had a few, just in case: One, if you use butter instead of the shortening, will you then get spread because you didn't use the shortening? And, after a day or two, do the cookies get hard? I ask because I used a really good recipe but after 24 hrs (the baker did say that would happen) they cookies firm up really crispy, which I didn't want. And last, if I were to use black cocoa with this recipe, should I use half and half or should I just substitute the whole amount with the black cocoa? (I've never used it before, so asking! ;-) )
1. The shortening keeps the cookies softer longer. It won't make the cookies spread if you use all butter.
2. When stored in a sealed container at room temperature, these cookies should stay soft for 10-14 days. (Closer to the 10 day side if you use all butter.)
3. Black cocoa usually doesn't have as much of a chocolate flavor as a dark cocoa or dutch cocoa has. If you choose to use a black cocoa, I think a 1/2 and 1/2 mix would be best.

I only wanted the black cocoa for the color anyways, cause I wanted to do dark cookies with a white icing design, showcasing the black cookie, of sorts, if that makes sense.

I'm not sure I understand your question. Are you asking for a metric conversion for 2/3 cup of cocoa?
1/3 cup + 1/3 cup= 2/3 cups
How thick did you roll out these cookies?

You can try using: 1 heaping tbsp of soy flour + 2 tbsp water in place of the egg.
What if my mixer doesn’t have the paddle attachment??
There really isn't a substitute for the paddle attachment when making cookie dough. I'm sorry.

The recipe says leave out the last 1/2 cup of flour if not baking the cookies immediately (freezer storage). Am I leaving it out of the dough to add it later if the dough is sticky after defrosting? So far I haven't been adding it and am wondering if the dough would handle better if I add it.
As cookie dough sits, the flour absorbs more of the water in the recipe and becomes dry. Depending on how efficient you are with your freezing...the flour might not have a chance to absorb much of the water before you roll it out. If you feel the dough is sticky - definitely add a little more flour before rolling out.
Thanks, Georgeanne. I made your peanut butter cookie dough. I ate a taste raw and it was yummy. Looking forward to baking them so I can see what they taste like after they come out of the oven. We're in the middle of a kitchen remodel so I won't have a chance to decorate them for St. Patrick's Day. Guess we'll just have to eat them ourselves. What a chore!!! hahahaha I think I'll sprinkle them with sugar since they won't have delicious royal icing on them.

Whats the best procedure for freezing and thawing the dough? If its too dry or wet after coming to "rolling consistency" should it be put back on the mixer to adjust with egg or flour, or do it by hand? Thanks for the great tutorial!
