    You're absolutely right about how "authentic" is used, those who do use it are often committing what's known as the "no true Scotsman" fallacy and it can be a harmful way to exclude people

    enjoying food that you like and sharing it with others is what makes us human. I agree with you Inga. Authentic food is something that changes over time. new ingredients, cooking methods and preferences. It is hard to define in general but we can cook food and make it ours.

    So true and I have been mislead by searching for authentic and regional food and I love local European, Asian and also Mexican food. As you said, much is driven by nostalgia. In recent years, I even became to appreciate Chinese-American food. I am from Germany and still miss my maternal grandmother's way of making German potato salad and was never able to recreate it. Love your attitude!

    People mistake "authentic" for "only way to make something". It's just trying to maintain the origin of the food. I like to learn more "authentic" ways of cooking recipes because I think it helps in understanding the process so you can start modifying the recipe to your liking. Start with the basics before you add your twists

    Good point and a Great perspective Inga. I also believe food is something that goes beyond borders and regions it shouldn't be divided or judged for authenticity but it is more like an art that every artist creates in his/her own way, it will always keep evolving and as every artist that creates art has his own feelings and ideas to create his piece, food is the same for chefs, those who love food adjust recipes and create things in ways that speak to them, and it isn't justified to call someone's art unauthentic.

    People usually use the word "authentic" to highlight a gap of belonging to a culture, between the person making a recipe, and the cultural origin of the recipe. It's honestly gatekeeping instead of celebrating something that will always be shared: love of food, flavor, and the joy that comes from making meals to our own tastes, or families tastes, with inspiration from all facets of our lives. Food will always be unifying. It'll always be shared. It'll always be a unique experience to the chef, and the people they're sharing with

    This reminds me of kathi roll, very popular in India, wraps with chicken kebabs the outer part is flaky paratha with egg like this.

    Food is so interesting to me since it can tell such a story. I think the "American" version of food is frequently comparatively excessive to the "old-world" versions in part because the people that came to America had access to so much more food than where they left. I hear that a lot with Italian food. Or how Chinese-American food is such an adaption to what folks had access to. Or what sold well!
    It's good to celebrate food history and the cultures that spawned them, but also good to recognize different versions aren't binary better/worse. They're all just tasty!

    YES, and also limited by the availabilities of ingredients in different parts of the world that we need to find substitutions for. Is Din Tai Fung's xiao long bao more authentic than others? Well, no, their chocolate xiao long bao is not "authentically" Chinese, but it's their own invention, and it's authentically theirs.

    Love that you were willing to offer this take. I do think the importance of "authenticity" for a certain food varies considerably. But at the end of the day, flavor doesn't lie.

    I struggle with that term too. So my mom makes her kimchi jjigae very much home style and I often prefer hers over to mine, because it’s nostalgic. I make mine with dashi as a base and it gives it that extra boost of flavor, because I work in restaurants and I make mine a bit more like restaurants. Who is say which one is more authentic, because you can make a case for both.

    Fr the variation of 蔥油餅 蛋餅 and 抓餅 is so crazy like a lot of people switch up the names or sell 抓餅 as 抓餅加蛋 it’s so much fun when I go to a small store and order 蛋餅 because I never know what I will get!! ❤

    a great example of harping on authenticity is with american style tacos. growing up mexican-american i always despised hard shell tacos with yellow cheese cause they “weren’t authentic” as i’ve gotten older i learned that early mexican immigrants didn’t have access to the same ingredients that they could back home so they tried to make something as close to home as they can miles and miles away

    That reminds me of a chicken egg roll where i am. Except the chicken is like a tandoori chicken. So yes nothing is "authentic". Food is authentic the way anyone makes. It's all delicious.
