  • Welcome to Cucina Pazzo. Tonight we’re making Low Carb/ Keto Mexican Rice. Just 2 carbs. So simple it will blow your mind. It takes 2-3 minutes to make
    Ingredients
    3/4 cup riced cauliflower
    1 Tbsp EVOO
    1Tbsp Butter or Alternative butter(I used Myoko’s vegan butter alternative.
    1 tsp taco seasoning.
    Add ingredients to cup and microwave UNCOVERED for 2 minutes. I said 3 minutes in the video. 2 minutes is plenty.
