Cucina Pazzo - Keto Lemon Truffle Fat Bombs
Keto Lemon Truffle Fat Bombs
Made 17 small truffles
Ingredients
* 5 oz coconut butter
* 3 tbsp powdered sugar or erythritol
* zest of one lemon
* 2 Tbsp Lemon juice
* 3 oz white chocolate chips (optional)
* optional drop yellow food coloring
Directions
Instructions
* Heat coconut butter for 10-15 seconds.
* Heat White Chocolate chips for 20-30 second intervals until melted and smooth. White chocolate is temperamental. Don’t overheat it.
* Blend all ingredients. Use a hand mixer to blend.
* Refrigerate for 5 min.
* Scoop out on parchment or silicone mat.
* Freeze until firm for 5-10 min
* If desired, dip in melted white chocolate or coconut butter. (For a smoother sauce that makes coating more even, I stir half a teaspoon of oil into the white chocolate after melting.
* Refrigerate or freeze leftovers for freshness.

I’m making these with Coconut butter so I can get the natural fat burning benefits of the MCT’s in the coconut butter. Melt in your mouth delicious. So good you won’t believe it’s Low Carb.
I did add 2 Tbsp lemon juice in this recipe that wasn’t recorded in the video. It really brought out that lemon flavor.

      I don’t see why you couldn’t. Lupine flower just happens to have a lot of fiber. You’d have to rerun the numbers to see how much it would change everything. I have bamboo fiber, but I just haven’t used it a lot.

    I’m allergic to peanuts, so I’m not going to take a chance with lupin flour, and I’m gluten intolerant. I got excited when I saw the thumbnail, but obviously these will not work for me. Back to the drawing board.

      It’s ok if you’re against gluten. Some people say that gluten causes inflammation. Wheat can do that and gluten is a small part of wheat. I just want you to understand what gluten is? Most people have no clue and they think gluten is nothing but carbs and death. It’s not. . It’s one of 2 proteins in wheat. It’s what gives bread elasticity. The rest of the wheat is what has all the sugars and carbs. If you’re anti gluten then that’s ok. I just want to add content that helps people eat better.

    I use coconut sugar for bread making to feed yeast…I kept a small pot when I gave up eating sugar…would that be okay for this? Also I don’t have monkfruit drops, any suggestion for replacement? I have all the other ingredients 😊

    You might consider bamboo fiber to achieve a more traditional look and fluffier, lighter texture. Also you can use lupin semolina in place of conventional. Thanks for sharing your recipe. Lupin is awesome! ❤ I Don't Sugar Coat channel has a wonderful boiled bagel recipe you might want to try as well. I'm excited to try yours and hers as cinnamon raisin. I REALLY miss that along with my whole family. 😅

    I tried oat fiber in a biscuit recipe and it was awful. Maybe it was the brand I used. Unfortunately I bought 2 bags of it. Maybe zero carb whey isolate protein powder could substitute.

    I made biscotti using similar proportions of lupen flour, wheat gluten, oat fibre, and xanthan gum to those in your bread recipe. I've never attempted them before, but these turned out so good I know I'll make them again--and do better. Cheers.

    I made your "oatmeal" this morning. That I invested $65 in peanut butter powder may convince you how keen and hopeful I was to make the recipe work. I did not expect it to taste like peanut butter. That is not like oatmeal. Nor did I expect it to remind me of the "paste" my English mother used to make me, consisting of just flour and water, to glue things in my scrapbook when I was a young child, assuring me "you can eat this, unlike the glue at school." The pasty texture, along with the mustard colour, was not evocative of oatmeal. The recipe was a major disappointment, typical of the many counterfeit keto recipes that call themselves, bread, biscuits, rice, spaghetti, flour, and pizza crust, all of them imitations that have no constitutional relation to their models. I will not make this oatmeal again--because it is NOTHING like oatmeal, not the taste, not the texture, not the colour. Now I just have to figure out how to dispose of 814 grams of peanut butter powder.

      My Keto oatmeal, which I call porridge, consists of three parts hemp seeds, one part flax seed meal, one part chia seeds, cinnamon, vanilla, coconut milk. Last batch, I added a tbsp peanut butter powder, to try to use it up. Turns out it improved the taste. Cheers.

    Very good. I prepared the dish while listening to your video, which helped me along. The mushrooms and prawns turned out to perfection, not overcooked. I added some sliced green pepper and a bit of lime juice, as I didn't have a lemon. The Shirataki spaghetti I substituted was more delectable as a noodle than when I've made it as pasta. Your Shrimp and Mushroom Lo Mein is much tastier than the prawn cakes I occasionally prepare. It'll be on my Keto menu from now on. Thanks for the recipe.

    I'll make this stirfry tomorrow, December 2. Meanwhile, I have a question about Monkfruit, which I bought at a local store yesterday. It's 4 grams of carbs per teaspoon, the same as refined white sugar, brown sugar, Demerara sugar, and coconut sugar. All 4 grams per tsp. Stevia, on the other hand, which I now use, is 0 grams. My question is: what do you consider the nutritional advantages of Monkfruit over regular sugars? Thank you. --Paul

      It’s a matter of preference. Monkfruit sugar tastes more like regular sugar in my opinion. The brand I had has erythritol in it. Which means it has sugar alcohols in it. Sugar alcohols are subtracted from net carbs. I recently started to switch to sugar substitutes that don’t contain erythritol. Erythritol has been linked to heart issues. Right now I’m experimenting with strait Monkfruit, strait stevia and a Monkfruit Allulose blend by a company called besti. I get them all on Amazon.

      @@cucinapazzo4223 Thanks so much. I used Demerara sugar for everything, in my coffee, in baking. In comparison, Stevia has merely a trace of sweetness. But I am used to it now. My Stevia brand recommends half Stevia, half sugar in baking. But I have gone full Stevia and am content so far.

      Well… LupinI beans are a legume. You can try it but it’ll throw the carb count way off. Lupin flour is high in fiber. If you did try it then I would pulverize the nut flour or even use a nut butter. I would think the texture would be very off if you didn’t. And yes, I would use the same weight. I can’t guarantee any kind of outcome. I’ve tried about 100 different recipes and probably threw away 90 of them. This recipe with the Lupin flour is the closest to regular bread I’ve ever tried. I’m just concerned that if you used the nut flour that you may not like the texture of the bread.

      His recipe is non dairy. Neither low carb or keto are "non dairy". Choosing to not eat dairy products - milk, cheeses, yogurt, cream cheese, sour cream, butter, etc., is a choice only you make, no matter what food plans you follow. Regardless, vegan butter isn't made from milk and eggs are not a dairy food.

    I make a similar recipe into cinnamon bread too. My first loaf came out the same as yours. I did a bit of research and came across an article that said to spray you bread with water after applying the cinnamon so it will stay sealed up when baking. I ended up trying it and it worked.

      The yeast eats all of the honey. I understand that you don’t want to trust that. I used to make beer. Yeast will eat 70 to 80% of malt or granular sugar. It is 100% of honey. There is no honey left. You can’t get the yeast to activate without having some thing for it to eat. This is something that you can Google. You don’t have to take my word for it. All the other ingredients in there do not have any sugars for the yeast to eat without it. It needs some thing fermentable for the yeast to do its job.

      Yes it is high in fat. Keep in mind that the 2 things that will make you feel full on this way of eating is Fat and Fiber. Quantity and volume won’t fill you up. A little bit goes a long way and you’ll definitely get full after eating it. You can even cut the recipe in half and quarter the ingredients and make less. This recipe is the real deal. It doesn’t get any better than this. With that being said. I wouldn’t use chicken broth or cut it with anything else. I love chicken broth but not for this. If you add chicken broth then you’ll need to add a stabilizer like Xanthan Gum. There is a breaking point for these kinds of stability where they won’t hold up. Especially for left overs. If I were to cut this or substitute then I’d use olive oil, coconut oil or a vegan butter substitute that has half the fat of regular butter. To be very honest, I’d never change this recipe and it’s the only way I make it. I’ve never tasted anything better. Not at any restaurant or any other household.

    I’m going to try this with Lily’s butterscotch chips for my mother-in-law. She loves that combination. Good tip about the coconut flour to thicken the peanut butter. I use the same brand of natural peanut butter.

      I also think you can use about half the sugar. They came out a little more on the sweet side that I thought. They are still really amazing. I love the butter scotch coating idea. That sounds amazing. I wish I could be there to try them.

    I love those tortillas. Makes a great lasagna too. So much one can make with them. Guerrero makes a zero net carb tortilla that is quite good.

      To make sure the ingredients are evenly distributed. Most of my recipes are about consistency. Maybe it’s just me being picky. It might not make a difference at all.
