- Today is March 14! You know what that means? It's Pi Day! Or Pie Day! A day when we celebrate pie, but not really the mathematical kind. The delicious flaky crust kind. I thought it would be fun to make some pantry hand pies! These are simple and made with things you have on hand. I have used refrigerator pie dough along with some jam and spreads from the pantry to make a fun dessert or snack that everyone will love! Let's here it for pie!
I am using an empanada maker or a dumpling maker. These are easily found online and you can find a set of three here: amzn.to/2FT20qH
This is as easy as cutting the dough with the plain side of the dumpling maker and then filling and folding with the other. A couple of tips are to not fill too much. A teaspoon for the small press is plenty of filling and make sure to moisten the edges of the dough with some water before pressing together or you will have a mess and you will cry. I don't want you to cry, so be sure to use the water!
I used some Nutella, raspberry and pineapple jams and a chocolate marshmallow spread with graham cracker crumbs mixed in. For fun I added some mini marshmallows to the latter and they came out deliciously! Your imagination is your only limit. How about marshmallows and peanut butter for a fluffernutter pie? Cheesecake filling from the dairy section? Chocolate chips, any kind of pie filling or any type of jam. Apple butter, pear butter, any type of sweet filling that you love. Rick even suggested ham and cheese! You could even make these like a pizza for mini calzones or mini strombolis. Your choice!
Make sure you pierce these with a fork, to give them a way to vent so they won't explode in the oven and brush with an egg wash. That is one egg beaten with a tablespoon of water. Bake at 350 for around 12 minutes being careful to monitor these after the 10 minute mark. then cool and enjoy! Simple and delicious!

My grandmother made them with (her own) dried apples mix - reconstituted with lots of spices and a bit of sugar.

In Asian countries, we use chicken or potato or sardines as a filling. Its usually savoury and its called Curry Puffs. It can be baked or deep fried (more common).

No and I don't think they would fare very well. These are really only good made fresh.
