    Look delicious! Here in Ireland if we're using savoury fillings we call them pasties... if sweet then they're turnovers! 😊

      Hi Cheryl! Okay now things are starting to make sense! I’ve heard of meat pasties but wasn’t sure if they could have sweet filling. So it’s turnovers for sweet. We have turnovers here but I usually think of them as either made with puff pastry (more like a croissant texture) or like a donut (very sweet and fried).       When I was a kid in Connecticut my mom would buy these from the bakery with our birthday cakes. It was a very special treat! They were called turnovers there too. I have been looking for a recipe for years and only recently came across a few UA-camrs who called them hand pies. The ones from the bakery had sugar crystals sprinkled on the crust, so yummy! I never heard or thought of a pumpkin filling so this will be great to try, I love the idea of chocolate cream too.

      Hi Jim! The Cornish Pastie has quite the history about them that I'm sure you'll find interesting. You see Cornwall was THE tin mining county of England. Miners needed a hearty lunch BUT they couldn't eat a sandwich as they'd be eating with their hands that would have traces of tin dust on them so.... meat and potatoes would be cooked in the pasty and the miners would eat the contents BUT leave the semi-circle crust that their fingers touched... and throw them away in the garbage. Therefore not ingesting any tin dust. Now you know the history and design of the pasty! Necessity IS the mother of invention.

    A great tip to stabilize whipped cream is to add 1 TBS of *instant* _powdered_ skim milk (it has to be the INSTANT powder) per 1 cup of heavy/whipping cream as you whip it. Treat it as you would regular whipped cream as far as refrigerating it, but it will retain the form you give it (soft or stiff peaks) for 24 hours! This means you can make it in the morning and serve it after dinner! (Credit to the famous pastry chef her on UA-cam whom I learned this from, Anna Olsen.)     I made hand-pies the other day with some pie crusts that were given to me and some home-made plum jelly mixed with no sugar added apricot preserves. They were awesome!

    Thank you! Our local grocery store used to carry yummy pumpkin empanadas, but stopped a few years ago and I couldn't find them locally. I am not a cook, but now I can make them myself!

    Empanadas de Calabasa but we make them with a different crust. It's kind of like a sweet tortilla with anise in both the pumpkin and the crust. ❤❤❤

      My grandmother also used yeast on the dough of her empanadas. Softer texture of empanadas after they are baked.

    My mom always used dried apricots to make a filling. Were delicious. She did not use a recipe. Just put in water and cooked slowly, and then added sugar and just a touch of cinnamon.

      We called them puffs. Apple puffs, peach puffs or whatever kind of fruit or filling. Mom fried hers though

      My husband took died apricots and canned pineapple and made a jam for my 94 year old neighbor, so good.

    I really appreciate how you not only did some in the air fryer,but also the oven.❤
    I don't have an air fryer so I was a bit sad at first...but then you said "oven ... at 400°f for 15 min..." and my heart filled with joy!
    I am totally making these for my Halloween party I'm throwing my kiddos this year!
    We can't go trick or treating this year, cuz we moved into a pretty unsavory neighborhood... However, that being said, I'm a genius party planner! My kids have never complained if we couldn't go trick or treating cuz we'd always have the best parties.❤
    These will make an awesome arts and crafts thing to do the night before the party!(we like our pumpkin pies cold and served with whipped cream❤).
    I'm so excited!!!❤❤❤❤

    I’m so glad I found your channel. I’ve been baking forever and I’m still learning new things. I love these hand pies! I’m going to make them for thanksgiving. The bestest takeaway I’ve learned from you is to cook your apples or pumpkin first. One of our traditions for holidays are tarts. Small cupcake tin size with apricot jam or raspberry jam for a delightful mix of jeweled color. These will make a wonderful platter of desserts

      @@marieskitchen yes, just a tablespoon or two of jam! They look beautiful and are a family favorite. Do you bake cookies? I love have “Cookie Day” at Grandmas for Christmas time. The adult kids go home with dozens of cookies to share during the holidays.

    This is the first time I've watched you. Loved the idea of the little leaves for decoration so went right to Amazon and ordered them. We are going to be doing apples soon, so will be using them to decorate the pies and the tops of apple dumplings. I'm going to check out your website, too.

    I'm from Wisconsin and I love the fall, its the cooler temperatures that causes the leaves to change, and they are so pretty around end of Sept. thru Oct.

    They’re called Moon Pies where I come from (Amish country). And the most popular filling is apple. But there aren’t chunks of apple like apple pie. The filling is more like apple butter. Smooth and dark brown, nicely spiced. Just like really thick apple butter. Sooo delicious.

    You fooled me! When I clicked on your video I believed you were a Canadian. Marie is perhaps the most common woman's name in Canada. PLUS, the thumbnail had an orange Maple Leaf, plus the snow, icicles and bare branches outside your windows. When you finally said you live in Texas, well, I was gobsmacked! 🤪 Nice hand pies, wish someone would make some!

      Hi! Thanks so much for watching! Oh that’s too funny! My full name is very French sounding - Jean Marie - named after both my grandmothers, neither of whom were French 🤣 I do love the name Marie. It is not as common in the US as a first name, but very popular as a middle name. And I must confess, there are no icicles outside my window. Numerous people have comments the same thing - about the snowy day outside - but it is actually just the opposite 😩 When I filmed that video it was probably 100 degrees F (212 C!) outside and the white in the window is condensation because it is so cold inside with the air conditioning and so humid outside. 😭 Please just pretend I’m French Canadian and live in a snow covered cabin though.     I'm from Mexico, and I totally call them "empanadas". BTW, pumpkin pie (sweet vegetable) is not weird at all as your husband says, in Mexico we only eat sweet pumpkin as a dessert

    thanks for this tutorial = I've been making fried pies for many years- my fav is apricot and/or peach! I usually use dried fruit, but sometimes with fresh fruit (from the trees we had), but also from frozen or canned) & I will enjoy trying the shapes & using food coloring, too)!!     So cute, Marie.😀 I was overwhelmed at 11:25 when you were showing your stamp designs and colors of your decorative leaves for Fall, Christmas and Thanksgiving. They are so beautiful. ❤Those pies would be so difficult to slice in to, meaning displacing the beauty. Now back to the hand pies. Do you think I could use Solo pie filling?     I make pumpkin empanadas, but trying these for our Thanksgiving dinner along with Pumpkin pie and pecan pie. Everyone loves when I cook too much, much to share with friends and neighbors who don’t cook.

    My Grandma worked at a Libby's Cannery in Walla Walla,Washington, before I was ever born. Im 82 now, so it was a long time ago, so they should be good at it. I do rememuber, that my Mom said, that they did Can Pumpkin there. I would go with my mom to pick Grandma up after she got off work.
    They gave the misprinteded labels to the employees to use for scratch paper. I loved it when they gave me some.

    I use the cutter/stampers to make upper crust for pies or for decorations for perimeter of single crust pie. For example, I will use pumpkin stamp around perimeter of pumpkin pie or apple and leaf design for top crust of apple pie.

    I have a silicone mini muffin pan. I put the extra purée in the cups and freeze them. My dog loves the frozen pupsicles in the summer.
    I have/had the William-Sonoma cutters and put them on the edge of my pie crust. (My daughter “borrowed” them and is a bit slow in returning them. Her reasoning is that she had them when I lost my home to a fire so she “saved” them 🤣)

    I never added the leaf or other patterns. Nor have I ever considered a pumpkin pie filling… I made a dozen with prickly pear jelly and the pulp left over from the jelly… very “earthy” flavor… but semi easy on my glucose. I bake all the time… but seldom get to eat my works. Thank you for the idea.

    I knew these as "turnovers" where I was a child in middle England. In The South West of England the meat and 2 or 3 veg in pastry is known Cornish pasty. In Scotland where I live now there is a simple meat and onion version called a Bridie

    Hello Mary, today I'm trying a new dessert, a pineapple upside down banana cake. This is the very first time I've tried this dessert. I just took it out of the oven, but I think it should be good. I would like to challenge you to try this kind of cake, maybe your children would love it. We cooked it over a bonfire in a Dutch oven with a lid. It was so fun and everyone devoured the cake.     We live in Michigan where the pasties can be found everywhere in the U.P. (Upper Peninsula) & some places in the Lower Peninsula. They are generally much bigger than the hand pies & are, I believe, sometimes served with gravy.. While on a trip in Oklahoma, we kept seeing signs advertising "fried pies." We weren't familiar with the term so decided to stop for a meal. They must have had every kind you could possibly think of. There were meats & veggies ones for every meal. For dessert they were filled with fruits.

      You are right, as a native Georgian, my mom made these often, I do also, she always called them fried pies, but in her later years she baked them, she used can biscuits for the crusts, and I do also…🇺🇸

    My favorite way to make fruit hand pies is with dried fruit. Whether using fruit (or vegetables) anytime you use the product dried, the flavor is intensified. So I chop my dried fruit, place it in a saucepan with a complementary flavored, small amount of fruit juice (plain water works too, sometimes better). You need just enough liquid to rehydrate the fruit. If you get too much liquid in the pan just cook it down till it gets thick. Keep mixing and it’ll become cohesive & soft and be having a taste. You have to decide if it’s sweet enough, add sugar if you need it. I’ve found that my preference, with good quality dried fruit I don’t have to add any sugar. You also add the seasonings and spices you want for whatever you’re going for.
    I think I really never add sugar, depending on if that fruit is sweet naturally or has some sugar added during the process of dehydrating. At most I can really only remember adding sugar a couple times and it was only a couple Tbsp to a batch that made 10, 4” pies. That said, I always make my own pie crust. It has a small amount of sugar in it. I use a whole egg wash and use a couple tsps of plain white sugar sprinkled liberally and evenly, edge to edge over each pie. I looove that sugary crunch so much & then tart fruit inside, that old fashioned, lard based, flaky crust bringing it all together. Now you’ve gone and made me hungry, lol.

      I’m hungry too now, that was a beautiful description! 🤩 I have never really cooked with dried fruit but I have a friend who uses dried apricots for kolaches (Czech breakfast pastry) and swears by it. I got some good lard recently and plan to make a crust with it soon. I love the flavor of butter but there’s nothing like the flakes if a lard crust. Your pies sound delightful. My mom never wanted much sugar in desserts, so I like that style of baking. Especially as she got older, many desserts were “too sweet.” I find I’m becoming the same. ☺️ Thanks for watching and for your thoughtful notes.       @@marieskitchen I hope you get the time to try some dried fruit in a hand pie. Peach is especially delicious and especially when the snow is flying. It’s like having a bite of hope for the summers quick arrival, lol. But really they’re delicious.
      I forgot to tell you how beautiful your pies were. Just gorgeous. I’ve never managed anything that beautiful. But they do taste good all the same. Which reminds me, thanks so much for sharing the pumpkin filling recipe. I’ve been looking for one for a while and not found one that I cared for. Yours will work beautifully for me & I’ll probably eat too many😁. Banana & chocolate would be great flavors to try too. Why couldn’t ya make the cream filling and just pipe it to size for the shell. Then pop that in the freezer for a bit. Then proceed with the wrapping & baking. I’ll have to try that if I ever get my energy back. Enjoy your youth while ya have it😉

    Try rolling the crust between 2 sheets of parchment paper or waxed paper. It's much easier and makes less mess.
