CODFISH and ONION PIE - Bonita's Kitchen

    Ingredients:
    4 to 6 codfish fillets, boneless and skinless
    2 medium onions, peeled and sliced
    2 medium potatoes, peeled and sliced 3 large eggs
    ½ cup milk or cream 1 tsp sea salt
    ½ tsp black pepper 2 tbsp flour
    ½ tsp onion powder 1 cup shredded cheese
    Method:
    First make your hot pie crust, recipe posted below! After half fill one saucepan and start to boil water on medium heat, add ½ tsp sea salt.
    Then add codfish to water, only cook for 3 to 5 minutes just to part cook fish. Remove codfish from saucepan and place in a plate, let come to room temp.
    Roll out pastry dough and place in a deep pan, I’m using a spring form pan. Line bottom of spring form pan with parchment paper, but if you are using a pie pan or cast iron pan no need for parchment paper. This just incase pan leaks during the baking time.
    After peel and slice potatoes and place in cold water for a few minutes then drain, peel and slice onions.
    Line the bottom of pie pan with potatoes, then add onions and season in between with salt, pepper and onion powder.
    Then top with part cooked codfish pieces, and season again with a pinch of salt, pepper and onion powder.
    In a small bowl add eggs, flour, cream, and whisk together well; then add over codfish and veggies.
    Top with shredded cheese; preheat oven to 400ºF and bake codfish and onion pie for 30 minutes, then lower to 350ºF and bake for another 15 to 30 minutes or until baked. Depending on your oven! Serve with cream sauce, green peas and fresh bread.
    CREAM SAUCE:
    Ingredients:
    1/4 cup butter 2 tbsp flour or cornstarch
    1 small onion, chopped ½ tsp salt and pepper to taste
    1½ to 2 cups hot water, more to thin out sauce if needed
    ½ cup cream or evaporated milk ½ tsp onion powder
    Method:
    Melt butter in frying pan on a medium heat, then add chopped onions fry until soft.
    Add flour or cornstarch, whisk around to blend together, add salt and pepper to taste with hot
    water. Continue stirring until thickened and add more hot water if needed.
    Hot Pie Crust
    ¾ cup water ¾ cup butter
    2¾ cups all-propose flour 1 tsp sea salt
    Method:
    Add butter and water to saucepan let warm to melt the butter. Then turn off the heat.
    After add flour and sea salt and slowly mix it in until it starts to crumble, then form into a ball, remove from the saucepan unto the counter top or bowl.
    After start kneading the dough while it’s hot and all the ingredients have worked in together and then cover with a piece of clear wrap.
    Keep on the counter top for 30 minutes until room temperature before rolling dough.
    Knead dough again before rolling out with extra flour, cut in half or use all. Roll out and place in the bottom of deep pie pan, or cast iron pan.

    O M G what a feed, my mouth is watering watching this video, it's been about 50 years since i had this, and watching this i can almost relive the taste from that time, thank you, not only do you make great recipes, but you also bring back memory's of eating this as a kid , again thank you, you made my day.

    Just came back to my room after the Salvation Army Sunday service here at my nursing home to find your latest video on my laptop. The sermon & hymns were about finding light, calm, hope, & love in these dreary winter days after the sparkle & rich food (& overspending 💳😭) of the holidays is over. I'd add 'simplicity' to the list. So 👍👍 to an inexpensive, comforting codfish & onion🐟🥔🌰 pie😋!!

    Bonita, the trick to not cry when working with onions is not forming an attachment to them! lmao
    Mom used to call that sauce drawin' butter to go with our fish.

      Ella I have try standing on my head almost and I still cry when cutting onion. Spoon in my mouth, tap water running, knife dipped in water, egg of the onion left on, hand wet, you mane it I've done it. Yes that is what it's really called drawn butter, I call it a sauce and sometimes and gravy depending on the recipe. But this is a lovely recipe and you can make it with gluten free flour. :) Enjoy Bonita

      @@bonitaskitchen I keep seeing on videos that if you place the onion in cold water then cut it in half and leave it for 5 or 10 minutes it takes away the enzyme that causes a person to cry.
      Don't know if you've tried that yet but it's just a suggestion. Then again... with such a handsome sous chef by our side..... lol

    Hi Bonita hi Raymond 👋 goodness I love cod and I could have that alone with some bread as well. I want to try that dough wow that looked good. That was really nice of your neighbours to gift you the fish. I like you don’t have to cook the dough before layering everything. This is fantastic! Raymond is a great help looking after you so you don’t cry lol. Lol you both are so awesome!! I do want to try this! You are making me drool . Oh wow and a sauce recipe to boot.     Looks really good. I love cod. When I was a child my mom used to buy tins of chicken haddie and make it with a white sauce, and we ate it on toast, I loved it. I can no longer find it for many years and am wondering if I could just make it with some flaked white fish of some kind. What can you tell me about it.

    I have a question. Could the leftover pie be frozen after it’s made? It looks lovely but there’s only two of us in the house so we couldn’t eat a pie so large. Thanks Bonita and Raymond.

      Yes for sure, just cut off what you will need for this recipe and freeze the other piece round. Then when you are ready to use it take it out and let it thaw on the counter or in the fridge. Enjoy :) Bonita

    Bonita I have a bunch of 1pound packages of salt cod. I could soak and just follow the recipe couldn’t I? Would I need 2lbs ?

      That will work prefect, salted cod will be so good for this recipe. Just soak the salted cod over night drain off the water and cook for 3 to 5 minutes just to remove more salt and cook it some.       Well I made it for the neighbours and used 2 lbs. it was one heavy pie! Loved by all, it was entirely consumed! Thanks so much for the recipe, it’s in the box now and the salted cod worked well!

    Oh I'd love to make this but you can't imagine the cost of Codfish here. Maybe it'd be cheaper to move there.Yes, that's what I'll do.

    Bonita, this may seem like a silly question but, when people say bring to room temp, what actually does that mean? I mean some people live where it is hot/warm and others live in cool/ cold climate. My house may be cooler than say someone in Florida. I don't know if that makes sense.

      Good question Tonya! I will make it easier for you, if you can touch it and it's luke warm. That will be very close to room temp. I don't want you to cook the flour while you are mixing it in, do that help understand room temp. Enjoy our NEW recipe and thank you for stopping by. :) Bonita
