    Johns recipes are great, he has a very mellow voice, he could make a living doing audio books, or those relaxing tapes that people with insomnia listen to.

      I am guessing that John's wonderful cadence is more work than natural, so while he might make a good audio book, it would be quite a project. Meanwhile, a few favorite poems could prove wonderful and possibly hilarious, such as The Night Before Christmas or The Raven or Dust of Snow. Perhaps, he could slip one in, while something is baking.

    Down here.. ( Southwest UK ) it's quite common to put curls of bacon ( streaky rashers scraped thin so they cook ) on top of a fish pie. Helps solve the lunar landscape problem, and tastes good, too.

    My mother made this. Not exactly this but very similar. I have improved it in a couple of ways. I always put some dry vermouth in the white sauce, and also shrimps, scallops, and crab if I can afford it with the cod or other one syllable white fish. This dish always impresses. It is so damn delicious.

      I'd love to make this but cod is normally close to $20/lb here so i'm always holding out for a sale of some kind here to make this. We dont get much cod here, mostly salmon, so most cod is shipped in from Alaska.

    I've got something very similar in the oven right now - it's a salmon pie with sockeye salmon, potatoes, sour cream and dill. I love recipes like this and look forward to trying yours. It looks just beautiful.

    One other thing, a nice mix of about 70% potatoes & 30% peeled and diced turnips boiled with the potatoes and mashed gives this dish a little change of pace if you get tired of the same ol', same ol', it gives the dish the slightest of a bitter taste, but is delicious. We don't cook with turnips nearly enough, so let's help support the turnip farmers, they sell more of the turnip greens than the actual turnips, plus to get your potatoes or potato/turnip mixture very dry, once you strain them, put the pot on the stove at medium heat, and put them back in for about 30-45 seconds and stir them and they will get real dry because any water , even on their surface, will evaporate

    That pie is one of the best fish pies I have ever tried making and it is super easy to make as well. I enjoy watching your videos and the honesty of it all (mentioning the failed designs) makes it quite entertaining :P I am making it again tonight!

    This looks great. Funny, but I’ve NEVER seen or heard of something like this, fish dish! I’m from Minnesota and grew up fishing and eating fresh fish from the then pristine “Lake Minnetonka”in my backyard. Mostly Bass, Sunfish, Crappie and Walleye.
    We wanted fish tonight, but I wanted to prepare it DIFFERENTLY!!
    YOUR RECIPE LOOKS MAGNIFICENT AND I CAN’T WAIT TO MAKE IT!🙏💕

    Me, too. Nearly all the French, in all the main country, have a couscous meal yearly, and a "couscous royale" for special occasions. These are always for lunch, never in the evening, and the rest of the day is a write-off, as everyone is groggy and content. It's a succession of meat items such as from a giant stuffing, roasting celebratory feast, and takes 1-3 hours to consume. I love it and real mint tea is a must, with all the ritual, too, of mixing harissa in the spoon for the vegetables.

    I fish for cod all the time - Bodega bay Ca. Fish fry is fine but this & your brandad which I prepped this morning both look & sound so very very good. Thank you. Pork belly is next.

    I made this dish and I loved it! I did one side sweet potato, the other half russet. I preferred the sweet potato side so I'll be making it with sweet potato from now on. I also added a bit of cheese before it went under the broiler. Delicious! Thanks :)

    I love Chef John. I don't have time to watch cooking shows and much prefer Chef John to give me the 5 minute break down in demonstrating the technique. From there I usually have my mom's old cookbook from the 1950's where everything is made from scratch. He's given me confidence in cooking. So long Campbell's.

    It's nice to see such a homely dish featuring. It's not the sort of thing you're likely to find in a high-end restaurant, but you might find it in a pub, but mostly it's a home-cooked dish that is greater than its individual parts.
    There are no real rules for making fish pie other than fish and potato. It does generally benefit from having at least two types of fish (but not oily fish), one of which could be smoked.

    Also, anyone interested, you can buy cod loins instead of the fillets for a dollar more a pound, and you will basically have a good even height layer because they are all almost the same size, and do not taper off at one end like a beef or pork tenderloin, and the taste is even better, the texture of the fish is better in the loin also.

    Looks yummy, I'll try it. A lot like Sheppards pie, only totally different. I made Sheppards pie after watching your video. I used a pastry bag to make the potato crust. My wife thought I was nuts, but out turned out great.

    It is August 20th here in Tennessee. I just finished planting turnips, Swiss Chard and mustard greens.
    I didn't plant spinach but I think I could substitute with the Chard.🤷‍♂️😏

    I like a mix of smoked haddock cod and prawns, lay down some quarters of boiled egg and spinach. Butter the top of the mash too, it makes a crispy top, then, do the textured top with a fork, just rough it up, the more peeks the crisper the top gets... You can finish off with parmesan cheese and breadcrumbs too.

    I love reading comments of all those besserwisser types. My mom is a chef, so watching everyone trying to correct you is hillarious. What you're doing is great.
    Granted, some of the things you do are not procedure. But this isn't a fancy show. This is an everyday guide, for everyday people. Chef John shows the easiest and best way to do it. Nobody has 5 hours to prepare pasta.

    Also, if you want a little more garlic flavor, in your spinach pot, start 2 tablespoons of olive oil with about 5 cloves of crushed garlic(chop/dice garlic) in a cold pot and bring up to medium low, simmer for about 5-6 minutes, remove garlic, leave as much oil as possible in the pot and turn heat up to medium and wilt the spinach in the garlic infused olive oil, do not dry it, it's a wet white sauce going on top and scratch putting garlic in the roux white sauce, has much better flavor in finished product.

    Wow. Watched this and thought. No way that works. But I was so wrong. I used tilapia because that was what I had and it was great. I've added this to my repeatable seafood dish list. Don't be afraid of the cayenne....I used two smaller ramekins to prepare it in.
    Perfect for 2 people and less cleanup I was able to prep it early and let it sit in the refrigerator until I was ready to heat it. Turned out perfect just took a little longer. Use of The freakishly small spoon is a requirement.... no substitute allowed😄

    In Sweden we cook dill all the time and it tastes great. It contains oils which are released in the cooking process.

    I made this last night, and followed the recipe exactly. I don't think it's fair for anyone to leave any kind of message unless they have made it and tried it, as is! This is a simple delicious recipe. Of-course next time I may tweak it here and there, to our taste. I might say though, that I prefer to leave the mashed potato topping, craggy, just place all the potato on top using a small spoon, and don't smooth it out. All those peaks will crisp and turn and nice golden brown, and the broiler bit is not necessary.

    I love the dishes and love the way he describes them. Very clear and easy to follow. one day I might even cook one of them myself but why so much salt? I like the use of cayenne pepper.

    The thicker metal prevents overt scalding and allows heat to permeate the pan more evenly.
