Cabbage Casserole - Bonita's Kitchen

    Today we will be making Cabbage Casserole, it's made with local green cabbage and a few simple ingredients and it's so delicious. See recipe below!

    Ingredients:
    ½ Head cabbage shredded
    2 Pounds Lean Ground Beef
    ½ Cup Long Grain Rice or rice of choice
    1 Can Cream Chicken Soup, or mushroom, celery
    1 Medium Onion grated
    Pinch salt and pepper to taste
    1 Tsp Onion powder
    ½ Can of water or broth
    drizzles of olive oil
    Method:
    1. In a bowl mix together ground beef, rice, grated onion, salt and pepper, onion powder, then add the can of cream of chicken soup then seat aside.
    2. Then shred half head of cabbage and wash well before shredding.
    In a casserole dish or pan, layer the bottom with cabbage, a pinch of salt, pepper and a drizzle of olive oil, then layer the ground beef mixture, continue doing this until all used.
    3. Layer of shredded cabbage again and pinch of salt and pepper, the ½ can of water or broth leaving ½ for 30 minutes into cooking check and then add the remainder if needed.
    4. Cover with foil wrap and pinch the sides well to seal in steam while cooking, or PUT IN ROASTER with lid.....
    5. Bake in a pre-heated oven of 350ºF for 1 hour depending on your oven.
    Plate Cabbage Casserole:
    This is a serving for 4 to 6 people
    Toast some sesame seeds to toss of each serving, just put a sprinkle of sesame seeds into a frying pan and on medium heat let brown, remove put in a small bowl.
    Plate a nice helping of your cabbage casserole into a bowl or plate.
    Top with toasted sesame seeds and seasonings if needed.

    WOW! Just served the recipe to my family and it is a huge hit. Prepped and cleaned up in under 30 minutes. So much more flavor than the simple ingredients would suggest...the cabbage, onions and beef all speak for themselves without overwhelming each other, but complement each other in the amazing broth. There was a lot more broth than I expected, but nobody cared because it was so tasty so we just broke out the crackers. This recipe is now a fall goto for my family. Thank you SO MUCH for sharing this with us, Bonita!

    Okay first thank you for the awesome videos. I'd have replied sooner but I wanted to give this meal a whirl and we tried it this evening.
    So semi followed the recipe. I did not use olive oil because I am a cheap person and figured there was perfectly good burger fat. So after I fried the burger I turned off the pan, tossed in my thinly sliced cabbage and stirred it around in the pan drippings to lightly coat the cabbage. I used some square pans instead of a casserole pan because I'm a guy who don't have a casserole pan. I cooked it out on my grill because I love to use my grill. Added a bit of a red bell pepper for color, some paprika for some smokey heat, deleted the salt because our canned cream of chicken is pretty salty to me and added a liberal amount of coarse ground black pepper. Let's just say I am not a cabbage guy but this stuff was amazing. I loved it and so did the rest of my family. Thank god we have a second pan for tomorrow.

    Mother (from Weybridge) had two favorite things, her tea and cabbage. She would boil up a pot full of cabbage, seasoned to taste, and have meals for a week. Lived to be 90 and never tired of the two.

    Growing up, my family had a New Years tradition of Pork roast with sauerkraut.
    This year, I decided to give this recipe a try, substituting sweet Italian sausage for the ground beef.
    We now have a new New Year's tradition! Everybody just LOVED this dish. Especially this little 4 YO boy that carried his bowl around proclaiming "This is SO GOOD!"

    I am happy to find your videos. I love cabbage and always looking for different ways to cook it. I put my onions in the freezer for 10-15 min before cutting them, this seems to help stop the crying :-)

    Thank you again for another great recipe. I've never washed ground beef or added it raw to a dish. I will be doing that I the future. I would always pre-cook the beef but I guess that isn't necessary. Yum

      Hi Joanne: You are very welcome and thank you for your lovely message, I like to rinse off the ground beef before i use it and for meals that got to cook for an hour or more I add it in raw. Then it will cook all the same time, this is a lovely recipe and if you like to add a different cream soup or tomato soup it will work too. Enjoy Bonita

    Aaaah Bonita dear going thru your videos and loving them so much. This dish is one I do with my daughters now and they all love it so much. We have added Bok Choy & Leek to it as well and we cook it in a large roasting pan so we plenty of left overs :) Because of my diet (gout) we don't use ground beef but ground turkey & pork mix along with garlic, like I said its a favourite in our house they love to take it to school next day as well.

    I made this with soy crumbles and it was very delicious, so good! :-). I think I will be making this at least once a month! :-) and it gives me at least five meals closer to 6. It's very yummy if anyone is afraid to make it don't be!

    We called that stalk 'cabbage coconut' and would eat it raw instead of sweets as kids. It's good! And a lot healthier than a lollipop! Haha. Just about to try this for my dinner. I am going to use bechemel as I cannot get condensed soup here

      The best trick is cut the onion in 4 and put it in the blender with a tiny bit of water and the onions will be mashed and no chunks. Old restaurant trick when making homemade burgers. I also have a little chopper which I use.

      No I just added it all together and baked it, if you got a roaster or pot with a lid it will steam it faster then covering it with foil. Enjoy and thank you for stopping by. Bonita

      Beverley Simmons HI Bev: Thank you so much for all your messages, I know it's hard to cook for two people but anytime you only want to make a small amount half any of my recipes. But left overs can be packaged in freezer containers and freeze them. :) Bonita

      Hi Geraldine: Thank you for your message and for enjoying our videos and recipes, looks like I may have been using vegetable broth. I always keep my broth when cooking a jiggs dinner so I can use in meals, you can use a chicken or beef broth as well. You can use minute rice, I by my rice in bulk and it could even be a mix of white long grain and Jasmine rice, but if you are using wheat part cook it first. Enjoy Bonita

    Could you do a video about washing ground beef? I looked at my cookbooks and did not find washing ground beef mentioned. Perhaps I misunderstood?

      brant morrison Good Morning Brant and I'm sorry if you misunderstood my comment about washing the ground beef, all I do is rinse off any blood that is on the beef from setting in the package, I do the same for a roast and chicken. I have been doing this all my cooking life. To each their own when it come to this step, I hope this clears up any confusion about my comment.       @@bonitaskitchen I just realized you use Spanish Onions(stronger) and my favourite are White, ( less strong)
      so that could be why . 👍🏻

    I am wondering if you could leave out the rice, and how you would adjust the ingredients to account for that.

      Not sure, but you'd need to compensate for the liquid that the rice isn't absorbing. So at minimum leave out the broth, and possibly cook unlidded at least a portion of the time.

    If you light a candle near by when doing onions very few tears - it burn off the sulfur fumes.

    If you hold a wood match between your lips with the sulfur end under your nose while you are dealing with onions it is said to eliminate the fumes. I have never tried it.

    Would it hurt to precook the ground beef? It looks like it was not cooked beforehand.

      No it all mixed together and it was lovely, but you can per-cook it or part cook it first and mix together if you wish. Use a bigger roaster with a lid will work good as well. :) Enjoy Bonita

      HI Patricia Blankenship: Thank you for your message and for visiting our channel, I'm sorry if that sounded confusing. What I meant was rinse off the blood from your ground beef before you start to use it. I guess it's that way it came out of my month and I didn't think anything of it. I always rinse all my food or beef, chicken or pork before using it just to be safe. I hope this clears up any confusion and this is a lovely recipe and enjoy. :) Bonita

      I am sorry because I am the one who conveyed the wrong message I meant rinsed the ground beef off.....I never rinse any meat before i cook it. The red substance on beef is myoglobin which adds lots of flavor. I Love You Videos.@@bonitaskitchen
