Creamy Chicken Spaghetti Casserole - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Creamy Chicken Spaghetti Casserole. Made with chicken thighs, a creamy homemade sauce and baked in the oven. See recipe below for more details!

    Ingredients:
    6 to 8 chicken thighs or breasts 6 cups chicken or vegetable broth
    4 servings of uncooked spaghetti
    1 can evaporated whole milk or milk of choice
    3 tbsp flour 1 tsp sea salt
    1 clove garlic or garlic powder ½ tsp pepper
    1 large chopped onion 1 bell pepper, any colour
    1 large tomato chopped 1 cup shredded cheese
    1 tsp onion powder 2 sticks green onion
    1 tbsp olive oil 3 tbsp butter or margarine
    ½ cup parmesan cheese
    4 mushrooms, chopped ( optional)
    Method:
    Preheat the oven to 350ºf.
    In a boiler add broth, bring to a boil on medium stove top heat.
    Cut chicken in small cubes and add to a frying pan on medium heat, add one tablespoon butter, drizzle some olive oil in the pan and cook for 5 minutes. Top with a pinch of sea salt and pepper. Then add chopped onions and chopped mushrooms (optional) continue cooking for 10 minutes until part cooked lightly brown, lower heat until ready to use.
    When broth is boiled, add spaghetti, let cook for about 6 or 7 minutes, then remove into a bowl and drizzle with olive oil. ( If you use water add ½ teaspoon of sea salt, and a drizzle of olive oil then let boil.) Also add chicken juice from frying pan to the pasta boiler for extra chicken flavour.
    Keep broth to reuse for sauce.
    You will need a casserole dish 9 x 13 inches or pan of choice.
    Toss chicken into your casserole dish, then put frying pan back on the stove top. Add two tablespoons of butter, let melt. Add sea salt, pepper and onion powder.
    Then add three tablespoons of flour, stir around until pasty. Then add 2 cups of your hot broth, slowly stirring it in your pan. Then add one cup of milk continue mixing until liquid starts to thicken.
    Add to mixture pressed garlic or garlic powder. ( At this point taste your sauce if you need to add anymore seasoning do it now) Then pour mixture over your spaghetti and toss together.
    Then add the spaghetti mixture to the casserole dish with the fried chicken mixture, some chopped tomatoes and bell pepper, to the casserole dish and toss everything together. Then top with shredded cheese of choice, parmesan, more tomato and bell peppers, and green chopped onion, cover with a piece of foil wrap, you can lightly grease the foil wrap before covering the casserole dish.
    Cook covered for 20 minutes then uncovered for 15 to 20 minutes or until golden brown. When baked, serve with garlic toast or fresh bread rolls and a toss salad. Enjoy

    Great recipe! Very economical too. So many people have gotten into the habit of only using boneless skinless chicken breast. Fact is, we need to remember how our Moms and Grandmas used to cook. There is so much more flavour and nutrients in chicken thighs and legs, and making stock with the leftovers/bones is like making medicine for your family. That broth is like a superfood. I know that everyone from young to old will find this meal delicious! I hope anyone watching your videos will see how easy, economical, and good for the soul home cooking is.     Happy Victoria Day 🎇Bonita & viewers. Yes, this would be a great addition to a potluck dinner for a holiday party, there's still a little chill in the air🌦 here in southern Ontario. Thinking of all the people who've lost their homes, the brave firefighters, & the wildlife out in Alberta being devastated by forest fires 😢.

    Hi Raymond and Bonita. It looks wonderful. Like you said, it would be wonderful to take to a potluck. My husband and I will be throwing a backyard barbecue next week on Memorial Day. There will be 17 people there. I might have to add this dish to the menu. I'm also having brats, hamburgers, hot dogs barbecued chicken, and shrimp scampi. Plus fresh fruit, potato salad, baked beans. Sliced tomatoes and cucumbers. It wouldn't be a party without pies, layer cakes and peach cobbler. I love to host meals like this for my friends. This creamy chicken dish will fit right in. Thank you.

    Thanks for sharing another wonderful and wonderfully simple and easy recipe. For us live-alone cooks it's also very easy to scale down the size. One tip I sometimes use with broth, once it's at room temp small zipper sandwich bags can be used to portion control 1 cup amounts which can then be frozen for future use. The flat bags won't take up a lot of freezer space either.

    Ok I’m making this Wednesday 🤗. And re: measuring pasta. I’m Italian and we are heavy handed with the tossing of pasta into the water. That wee circle is offensive to us!!😅😅😅😅😅

    I actually prepared this recipe for dinner. Was very good and easy. Only two changes I made were adding a little cayenne pepper to gravy and had about a half cup left of stock water which I poured over casserole before baking. It was excellent and will make again. So many recipes on UA-cam tend to not be on target when making a recipe. Yours are always good.

    I'd have put mushrooms and leeks in that, added to the butter before the flour goes in for your roux. Red Bell peppers instead of green, ease up on the tomato.

      Great idea. I always add a tiny bit of nutmeg to a cream sauce for all sorts of casseroles.
