    This is why you'll love this healthy apple cake:

    BREAKFAST CAKE RECIPE
    (makes 8 pieces)
    Ingredients:
    1 cup processed oats, or oat flour (100g)
    1/2 cup spelt or whole wheat flour (65g)
    2 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    3 smaller apples
    1 tbsp lemon juice
    1/3 cup Greek yogurt (85g)
    1/4 cup maple syrup, honey or agave (60ml)
    1/3 cup unsweetened applesauce (85g)
    3 large eggs
    2 tsp vanilla extract
    NUTRITIONAL INFO (per piece):
    170 calories, fat 3.1g, carb 30g, protein 6.5g
    Preparation:
    Begin by preheating your oven to 350°F (180°C). Line an 8-inch springform pan with parchment paper for easy removal.
    Peel and core the apples. Slice them in half, then score them with a knife all the way around and cut them into quarters. Toss the apple slices in lemon juice to prevent browning.
    In a mixing bowl, combine the oat flour, spelt or whole wheat flour, baking powder, salt, and cinnamon.
    In another bowl, whisk together the Greek yogurt, your preferred sweetener (maple syrup, agave, or honey), applesauce, and vanilla extract.
    Mix in the large eggs one at a time, ensuring they are fully incorporated into the wet mixture.
    Gradually add the dry ingredients into the wet mixture, stirring just until all the ingredients are fully incorporated.
    Pour the batter into a lined baking pan, spreading it evenly with a spatula. Give the pan a gentle shake to ensure the batter is evenly distributed. Now, spread the apple quarters evenly over the batter.
    Bake in the preheated oven for approximately 45 minutes, or until the cake turns a beautiful golden brown.
    Allow the cake to cool in the pan for a few minutes, then transfer it to a wire rack.
    Once cooled, slice it into 8 equal pieces and serve as it is, or with a spoonful of Greek yogurt.

    I prepared the batter the night before and popped it in the fridge with baking instructions.
    It turned out great! My husband could easily bake it while I was occupied nursing our little baby. The cake was a hit! Even my toddlers gobbled it all up :)

    Looks like another winner from our favorite UA-cam chef. Can't wait to try this, but I don't have a spring-form pan, so maybe a pie plate to keep it round? Or a metal square pan? Don't worry about the springform pan, simple 8-inch square pan will do the work too, and if you don't care about the presentation you can chop the apples and stir into the batter too.       You can add more oat flour and 1-2 tbsp cornstach just to improve the texture.

    Just a quick attention notice. Now apples are healthy, in and out. We got the natural sugar and the water inside. But unfortunately when you remove the peels, there is really no benefit of fiber, but at the end of the day Apples are apples, and this cake is def more of a healthier alternative to others packed with 200-400g sugar lmao.

      Sure, you can make this in your air-fryer too, I would go with a bit lower temperature, like 320F, and bake for about half an hour.

      Yes, you just score the apples with a knife, but not actually cutting them through.

    I'm just wondering are there any recipes that we can use just oat flour and not spelt/whole wheat flour? I have a big bag of rolled oats that I blend to make oat flour so it's more cost effective too :)

      In most of my recipes I use spelt/whole wheat flour just to improve the final texture of the baked goods, but if you have only oats then go with adding more oats, and just a tiny amount of cornstarch 1-2 tbsp.
