    CINNAMON ROLL CAKE RECIPE
    Ingredients:
    For the cake:
    4 eggs
    1/3 cup agave, or maple syrup (80ml)
    1/4 cup melted butter (60ml)
    1 tsp vanilla extract
    1 1/3 cups Greek yogurt (340g)
    2 cups oat flour, or ground oats (200g)
    1 cup spelt or whole wheat flour (130g)
    1/4 cup cornstarch (30g)
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    For the filling:
    1/2 cup date paste (130g)
    1/2 cup unsweetened applesauce (130g)
    2 tbsp cinnamon powder
    For the glaze:
    1/2 cup coconut milk (120ml)
    1 tbsp agave, or maple syrup
    1/2 tsp vanilla extract
    NUTRITIONAL INFO (per serving):
    211 calories, fat 6.3g, carb 31.3g, protein 8.7g
    Preparation:
    Preheat the oven to 350°F (180°C).
    For the filling, in a small bowl, combine date paste, applesauce and cinnamon powder. Set aside.
    In a large bowl, beat eggs with your choice of sweetener (agave or maple syrup). Add melted butter, vanilla extract, and Greek yogurt. Whisk until well combined.
    In the same bowl add all the dry ingredients: oat flour, spelt flour, cornstarch, baking powder, baking soda, and salt to the wet ingredients. Gently stir with a whisk until all the flour is incorporated.
    Pour the batter into a greased half-sheet pan or a similarly sized baking pan. Use a spatula to smooth the top.
    Drop small spoonfuls of the prepared cinnamon filling over the cake batter. Using a butter knife, swirl it in to create a marble effect.
    Bake for 20-25 minutes, ensuring not to overbake.
    Allow the cake to cool for a few minutes. Meanwhile, mix coconut milk, sweetener, and vanilla extract for the glaze.
    Drizzle the glaze over the cake using a spoon.
    Slice into 15 equal pieces and serve. Enjoy!

    Sasha, you need to be hired to overhaul the American school lunch program. Actually, to overhaul the ENTIRE American food system! We eat too many bad and processed things with waaaay too much sugar and white flour here. Thanks for helping those of us who desperately want to change the way we eat.

Here in Croatia, we're not too far from America, we have bakeries on every street corner, the most crowded restaurant in our time is McDonalds, and kids in our schools eat that same food.       Yeah, I love this channel because he doesn't use fake sugar for "healthy" recipes. He shows that desserts can be less than super high calorie while still using everyday ingredients like maple syrup.

      @@randomoneforstuff3696 Agreed😊! Sticking to ingredients made from whole foods just seems better to me. If you want sweet taste, it's better to "pay" for your share of those carbs/calories and use just enough to edge into a sweet flavor. Using artificial sweeteners allows you to use an excess of sweet flavor, making your food hyperpalatable and creating a response to the food that's akin to a drug. The mildly sweet, spiced/floral, high protein, high fiber desserts have become my favorites.

      ​@@mayonnaiseeeepunishing people with metabolic diseases for enjoying a base flavor is insane. let people use the sweeteners they're comfortable with, you can stick to your liquid sugar.

    I followed the recipe yesterday and it turned out so good.. I used oats and had to add a cup extra and rhe dough was still really lean. I didn't make the icing, but I poured it with skyr and sprinkled it with cinnamon and xylitol. So good. I made the second one today and instead of yogurt I used kefir and added a lot more applesauce to the cinnamon mass because last time it was too thick and difficult to mix. Hopefully will turn out as good as yesterday..

    I didn’t use the dates paste filling. I just drizzled on a mixture of 2 tbsp butter, 1 tbsp cinnamon and 2 tbsp jaggery. Then brushed the baked cake with a very thin layer of icing sugar and milk glaze.

    This will be perfect to serve our company for Mardi Gras in New Orleans. As a matter of fact, just tint portions of that glaze purple, green, and gold, and you have a healthier version of "king cake"! Kick it up a notch by sprinkling edible glitter or colored sugar for true Mardi Gras effect. Now I can't wait to try it! Thank you! 🎉💜💚💛👑⚜️

      That's great! Well, I would suggest you make this sweet paste out of some other dried fruits, or you can even mix coconut sugar with applesauce if that's an option for you.

    I wonder if the butter and applesauce could be switched. Seems like applesauce in the cake and butter in the filling would taste better. I may be wrong! It still looks delicious 😋

      You could switch the Butter for ripe Avocado, as for the applesauce maybe Making naturally from fresh apples?

      I found spelt flour at Whole Foods, but in any event, if you look under the description, it says spelt or whole wheat flour 🎉

      Hi! So glad you like the recipe! You're right spelt flour is getting more popular nowdays, in case you can't get it in Mexico, whole wheat flour, barley, or even corn flour would do the work.

    This looks great, though we have anaphylactic allergy here with eggs (ALL nuts and most seeds, gluten too) just wondering if there's any substitute for the eggs (would No Egg replacer, chia, flax or psyllium work?) Or do you think there's too many to replace this time? 😅

      Hi Donna! I guess this recipe could work without any eggs inside (no replacer too), because it's a sheet pan cake and it doesn't have to rise, so I would give it a try with extra applesauce and Greek yogurt in place of eggs.

    Looks great--love cinnamon! Going to try this plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and choline and lead in eggs. Thanks so much for sharing

      There's quite less sugar in classic cinnamon rolls, I guess it can be fine even for dieabetics. By the way, agave and dates are also lower in GI.

      I think that would be fine too, it's a sheet cake, it doesn't have to rise, so you can use any egg replacer you prefer.
