HEALTHY CARROT CAKE RECIPE
(makes 12 large or 15 small squares)
Ingredients:
1.5 cups ground oats, or oat flour (150g)
1 cup spelt flour (125g)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
3 large eggs
1/3 cup + 2 tbsp maple syrup (100ml)
1/2 cup unsweetened applesauce (130g)
2 tbsp melted butter
1/2 cup Greek yogurt (125g)
1/2 cup chopped walnuts (65g)
2 cups grated carrots (250g)
1.5 cups Greek yogurt, strained (375g)
1 cup heavy cream (240ml)
3 tbsp honey
1 tsp vanilla extract
NUTRITIONAL INFO (per large square):
255 calories, fat 11.8g, carb 28.1g, protein 10.4g
Preparation:
Preheat the oven to 350F (180C). Line and coat a standard half sheet pan with cooking spray.
In a large mixing bowl, whisk together oat flour, spelt flour, baking powder, baking soda, salt and cinnamon until well combined.
Add the eggs, maple syrup, applesauce, melted butter and Greek yogurt into the same bowl of dry ingredients. Whisk until well combined, but avoid over-mixing the batter.
Stir in the grated carrots and chopped walnuts into the batter.
Pour the batter into the prepared sheet pan and smooth the top with a spatula.
Bake the cake for about 25 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool completely.
For the frosting, combine strained Greek yogurt, honey and vanilla extract in a mixing bowl. In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the Greek yogurt mixture.
Slice the cooled cake in half to form two layers. Spread a generous amount of frosting over the first layer, and then place the second layer on top. Cover the entire cake with the remaining frosting.
Chill the cake in the fridge for a few hours or overnight to allow the frosting to set.
Slice the chilled cake into 12-15 equal pieces and serve.
Enjoy!
Hi Sasha, carrot cake is my most favourite cake is a lovely carrot cake and to have a healthier version is just a dream come true! You are a true wizard! As ever, TFS and have a good evening!
Hi Hazel, it's one of my favorite desserts too, and I can't get enough of this recipe, made it twice in 3 days, it just makes me happy to share it with you guys! Thanks for supporting as always, have a lovely day!
@@HowToCookSmarterwhy no raising agents?!
@@kro0018 The recipe does have baking powder and baking soda in it?!
wow that looks delicious!
This is a brilliant recipe! Just dense enough to give me the "hit" I need from just one piece and even my husband, who has quite the sweet tooth loved it. We both like doing sports and it really helps if you can treat yourself to something tasty, filling, healthy and absolutely satisfying that won't break the bank caloriewise. :D So thank you Sasha for yet another brilliant vid! P.S. I didn't have the time to strain the Greek yoghurt, but the one we get here must be thicker than the one you used. Plus, I substituted a yoghurt we have called Skyr for half the amount of Greek yoghurt in the topping. It's just that little bit dryer than the Greek yoghurt and has zero fat and more protein per gram, so it all turned out perfectly.
Hi there Eva! Thanks for sending over your wonderful feedback! You're right, even though it's not super sweet, somehow with this lovely frosting it makes everything balanced and also just enough sweet. Love the idea of using skyr in place of yogurt, would definitely do the same thing next time I make it. Stay healthy and fit, take care guys!
I baked it, it was extremely delicious!!!!!!!!!!!!!!!!!!!!!!, thank you very much for the recipe!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
Cake looks beautiful! Perfect for Easter!!
Thanks Laura! Yes, it's just perfect healthy dessert the whole family can enjoy. We're all in love with this recipe.

Hello Sasha. I love your recipes! Thank you for helping me cook better and healthier!!! :)
Hi there! Thanks so much for your lovely feedback, so glad you find my recipes helpful!
It looks decadent! I love carrot cake and your lemon cheesecake video hooked me as a subscriber then I see this! I have to make this asap. For the wheat flour Im going use freshly milled flour which preserves the fiber and nutrients to make it even more healthy. Our processed flours in America have no nutrients and causing so many gut disorders. Ill be sharing your channel, thank you so much.
Wow, thank you, amazing recipe ❤
Thanks so much!
Love carrot cake! Your recipe looks phenomenal ty

Hi there Yasmin! Thanks for your feedback, and I hope my recipes will help you to enjoy desserts and still stay on track with your diet.
Looks and sounds delicious
Thanks!
Looks great!
Thanks Francine!
I didn't have spelt flour on hand but I did have freshly milled wheat flour so I used that in place of the spelt. I also cheated on the icing and added a half a block of cream cheese, 2 tablespoons of butter, and 2 tablespoons of organic confectioners sugar. I know those icing ingredients completely ruin the concept but I wanted a more somewhat traditional icing. But the rest of the cake I made per the recipe. I would still say even with my small additions, this cake is much healthier than a traditional carrot cake which is so appreciated from someone like me who loves desserts and trying to be healthier. Maybe I can transition to omitting the confectioners sugar someday soon. This cake is wonderful and Im grateful for your recipes and your channel.
you are my savior! was dreaming to try healthy version of a carrot cake but all the recipes i tried were soooo so, yours is amazing btw
Thanks, I appreciate your kind feedback!

This turned out incredible. Thank you for this recipe and video.
Also, this freezes great. Tasted just as good thawed out.
* I did ad a bit of cream cheese to the frosting, which gives a great flavor.
Thanks for trying it out and sending over your feedback! So glad you enjoyed it!
thx
Hi Sasha, I keep revisiting this video for the ingredients in the caption. This will be my 6th time making it! I bake it in a loaf pan and a bit longer to make up for the thickness. Turns out perfect every time! Thank you so much :)
Hi there, thanks so much for your kind feedback, so glad this carrot cake recipe works for you!
Amazing!!!
Thanks!
I am going to try this. Thank you for the recipe. I love carrot cake, but same as you I try to avoid all that added sugar and other ingredients
Yeah, I don't really get it, adding 4 cups of sugar into the cake, this one is just enough sweet:) Hope you'll enjoy the recipe!
I will make this carrot cake recipe soon. I love carrot cake but I don’t like the frosting bc it too sweet normally. Now I got your recipe for not too sweet cake. Thank you for sharing your recipes. I cooked a lot of your oatmeal flour recipe always turned out great. God bless you. 🙏🙏🙏❤️
Exactly, this carrot cake gives you everything you want from carrot cake, but with less calories and more nutrition. Glad you enjoy my recipes, and I appreciate your kind feedback! Take care!

How nice to see use of spelt flour!!! Hope yo see a few more ways to use spelt flour in your recipes.
Love using spelt flour in my recipes, you can see it my previous recipes too.
Interesting 😮 thanks

I sometimes add low calorie jelly crystals to my Greek yoghurt to make it more tasty or colourful for deserts or cake dressing.
Low calorie jelly crystals, out of what they make these?
I buy a packet in the supermarket. It is flavoured gelatine. 👍😊
It comes in many flavours like strawberry, lime, orange, lemon, port wine flavour.
The carrot cake is as delicious as that accent 💕 💕 💕

I lovvvvvv carrot cake and this is great recipe! Can you pls tell what substitute you would recommend for eggs that will turn out similar using same other ingredients?
Glad you like it! Well, haven't really tried to make this cake without eggs, but you can try using aquafaba, it will add more air to the batter than flax egg.
Is there a way i can make it a bit less dense? Like maybe more baking powder or something?
Hi Sasha! Can I bake this cake with a regular (round) cake pan? Thank you!
Sure, that would be just fine, but if you bake one cake and cut in half horizontally make sure you increase the baking time.
Sasha you are Fabulous 😍🥕🎂🍰
Thanks so much for supporting!
Hi Sasha! Do you use full-fat or reduced fat/nonfat Greek yogurt? Thanks so much!! Amazing recipe! Excited to try!! 😊
Also, what do you think about adding shredded coconut? Would that make it too dry?
Hi Natalia! I use full-fat Greek yogurt all the time, just don't prefer using low-fat dairy. Glad you like the recipe! And talking about the shredded coconut, you can add some instead of oat flour, let's say 1/2 cup.
Looks delish, thank you! Is oat flour the same as grinding oats in the blender?
Yes it is
@@sharonchai9089 thank you!
Thanks! Hope you'll give it a try with this recipe.
Great recipe, just tried it yesterday and am having it for breakfast today :)
I usually bake just really simple cakes, like banana bread, but this was simple enough even for me despite manipulation with layers and cream.
I could have cut the maple sirup in the batter a bit as the cream is then sweetened as well.
Will do that next time - this recipe is definitely going on my roster :)
Thanks for your amazing feedback! So glad this carrot cake turned out delicious for you! You're so right, this carrot cake makes a wonderful nutritious breakfast.
Have you tried this with erithrytol or sucralose instead of maple syrup? Keen to avoid the sugar so just wondering if that would work well
Don't really use these sugar substitutes, but I think it would work just fine, just increase the amount of applesauce to make it moist enough.
Oo gonna make this for the family for Easter
How sweet is it with the frosting? And any alternative for spelt flour?
That would be wonderful! Well, for my taste it's just enough sweet, my family agrees too, but you can add an extra tbsp of honey if you want. For spelt flour, you can use rice flour (if looking for gluten free version) or whole wheat flour too.
@@HowToCookSmarter im pretty sure i have brownrice flour, i don't mind gluten and my family doesn't either so could i just even just regular flour? im not a fan of how whole wheat flour makes things taste honestly
@@jgoldian47 Sure, plain flour will do the work too, or you can use 3/4 cup extra oat flour and 1/4 cup cornstarch.
Can you tell me the temperature for an American oven? This looks amazing
Thanks Linda, it's 350F.
I particularly like this carrot cake recipe because I can eat it and still be legal with the calories!
Yeah, definitely, me too:)
What is the best baking sheet to use ?
You can even use a spring-form pan and bake it twice.
What’s the macros? Would it work with sugar free maple syrup? Thanks great vid too
Macros in the description. Sure, you can use that maple too. Thanks for watching!
Hi greetings from Mumbai India looks delish here in India we don't get maple syrup maybe I can use honey or sweetener as I'm diabetic
Hi Maria! Sure, using honey would be just fine. Sending back hugs to Mumbai!
Hmm how does the yogurt get strained? Isnt it too thick to go through the cheesecloth? Im just curious. Thank you
Instead of the maple syrup and apple sauce can i use banana as sweetner?... Not a fan of apple sauce and maple syrup
how much greek yoghurt goes into the icing? i can only see one quantity, which i assume is for the cake. thank you!
Hi Louisa! It's 1.5 cups or 375 grams, I just updated the ingredient list, thx for noticing there's something missing.
Can i just wholegrain flour?
Sure
🙏🙏
Gdje nabavite to kokosovo ulje u spreju? Bio sam po dućanima u Zagrebu i nisam uspio naći.

Thank you for this wonderful recipe! I look carrots and carrot cakes. But the amount of sugar and oil is just staggering. Is the applesauce a substitute for oil? Can I try to use something else like mashed bananas instead of applesauce, since I can't get my hands on some unsweetened applesauce or puree at the moment?
I'm sure that'd be fine since apple sauce and banana often have the properties as egg/oil substitutes. Honestly it'd almost be like a mix of carrot cake and banana bread, which sounds delicious.
@@thespankmyfrank Much appreciated! I do enjoy both very much . I'll try this this weekend!
Hi Victor! You're so right, regular carrot cakes contain way too much sugar and oil, and I find this recipe just a proper substitute. Instead of applesauce you can also use pumpkin puree, pureed mango or peaches. Hope you'll try out this recipe!
If i dont have apple sauce.. i skip it or what?
does anybody know what i can use instead of spelt flour? thank you.
Whole wheat flour, almond flour, rice flour would be also an option.
Thanks Have Nice day Keep up 😄😄😄🙏❤️🤍🤝🤝👏👉🖐️🤲🤗

What kind of baking sheet is that
It's 45x33cm baking pan.
What are the dimensions of the baking dish, please?
Hi! It's 43 by 31cm.
@@HowToCookSmarter thank you so much ❤
No raising agents?
I use both baking soda and baking powder.
What’s the point of using oat flour for GF purposes if you just add whole wheat flour later?
I know, I don't really use it for GF purposes, but because of overall nutrition and the fact I enjoy oat flour the most.
make a healthy RAFFAELLO cake please i beg you
I know what you mean by carrot cake being not so healthy. I used to make one for my niece on her birthday every year and the oil and sugar amounts were crazy.
Exactly, I can't even imagine adding 4 cups of sugar into this cake, I guess all you can taste is sugar:)
👍🇬🇷
Sending back love to Greece!
Mine didn't rise at all :( the taste is very good, though
You should check the expire date of your baking soda.
🇭🇷 ❤️!
Pozz iz Osijeka!
How can you make this without eggs.
maybe a flaxseed egg?
I think it could be made with aquafaba too.
*Uses oat flour cause it's gluten free*
*Proceeds to add whole wheat flour*
ikr and also.... use greek yogurt for less fat , then adds heavy cream. I conceptually like the idea of substitution to reduce / eliminate 'undesirables' but he sometimes contradicts himself
@@nomi395 i mean putting Greek yogurt in heavy cream seems okay to make it less calorie dense, but with gluten it's different. Something is either gonna be gluten free or it's not. Gluten is only dangerous and unhealthy to a certain group of people, so why use half gluten free flour and half not? Gluten free just seems like a filler word to make sth look healthier
Where in the recipe does it say that this is a gluten free cake?
I think he was just mentioning that he likes the fact that oat flour is gluten-free. If you watch other videos, you’ll see that he’s a big fan of oat flour and uses it in almost all of his baked goods. Brown rice flour is a great substitute if you want it to be totally gluten-free!
Hi, you're right, it sounds a bit confusing, I should put it in other way, just missed that one. Anyway, one of the reasons I'm in love with oat flour is that we can use it for making a gluten free recipes, this particular recipe is not really gluten free, but it can be easily transformed by not using this spelt flour, which I add just to imporove the texture of the cake. Hope you'll try out this recipe.
You should get a pastry whisk. Much better.
Do you think a Danish dough whisk? Just googled it, didn't actually know about it.
are you turkish?
I wish he was my stay at home husband
We don’t say the l in half
Sorry, I don't really get it.
Banger
What's the point to use oat flour because it's gluten free and then use spelt which has gluten? This means you are not gluten intolerant, why should you avoid gluten if you are not intolerant to begin with? These "healthy" recipes doesn't make any sense, these people don't know what they are talking about
In Romania we have powdered cream and whipping cream for cakes, u add milk and whisk til become like a meringue.the whole sachet has 7g of fat and less than 250 calories. It's called Krem şanti
Hi! We also have something similar here in Croatia, and I think these numbers are for 100g prepared cream... and this powder also includes some ingredients I don't actually prefer using like high fructose corn syrup and palm oil.
