Thanks for this recipe. It turned out better than I expected. Just needed to knead the dough a little more for density. Added 1/2 teaspoon of beet powder for coloring. Will definitely be making it again.

I made this and they're very good. Only problem is there's no where to print the recipe off of the website, and everything needed to be converted from weight measurements to volume. Also I cut the recipe in half and it still made too much, so I'll have to cut it in half again next time.
use a decent scale a couple times and you will be able to eyeball spices etc. Always a good idea to stick to weighing major ing that can vary too much by volume .
I've never seen vital wheat gluten behave like that, mine is always a stringy, sticky ball that is hard to work and divide into pieces. Yours looks more like a regular dough, what brand are you using?
