      Thats such a good Idea tho. Everyone has BBQ Rubs and stuff but if he would make them for Vegan stuff with Nut. yeast in it and other spices you normally dont use. this would be so good. I always want to make what he does but im missing all the extra stuff you dont have at home for vegan recipes normally

      @@SauceStache Yo that would be really good actually. Normally, with other cooks, I have to get one or two spices that I don't have. With you it's always a bunch so I never get them. A spice mix would help me out. But only if you ship to the Netherlands.

      as a starting point, i think there’s a washed-flour seitan method for prosciutto by someone from the Seitan Appreciation Society facebook group and it might be on their youtube; i think it could use some tweaks though

    Is there a reason the mushrooms can’t be sliced first and then soaked in the marinade? It would be less messy (and I don’t have an injector). Looks great! Thanks

    Looks awesome Mark. RIP Basil leaves lol.......put them on fresh at the end to avoid boring or soak them in a little bit of water before putting into the wood fire so they don't burn.

    I gotta say, I like that you get right to the point in the beginning of your vids. I don’t have an issue with longer intros at all but sometimes it’s nice to have someone who doesn’t always beat around the bush

    Awesome awesome awesome! You nailed the look and flavor! You might not be perfectly happy with the texture but depending how it’s cooked meat pepperoni has several different textures and no doubt with a little tweaking and experimentation you can nail whatever texture you want.

    I blend up, sundried tomatoes soaked in olive oil (I buy it like that at Trader Joe’s) to make a paste and I’ve noticed it adds are very pepperoni-like taste to pizza and other dishes! Idk if it’s just me but whenever I need a little meaty flavor I add that and it satisfies my cravings 😋

    This is such a quick and simplistic recipe that requires such few ingredients. But jokes aside, making real peperoni from meat isn't simple either. So kudos for mushroom peperoni.👍🏽
    I will not try this recipe myself, though.

    Would using the meat tenderizer tool be a cleaner solution to getting the marinade in there? Or would that produce the wrong texture?

    Brother all I can say is your super amazing how you come up with these ideas. They are a lot of work but when you want something close to the real thing, it takes work. But since you froze them they could be ready when you need them. But great job.

    For the marinade, can you simply soak dried mushrooms in the marinade instead of injecting it?

    Instead of agave, try a tiny pinch like ⅛ tsp of baking soda. This raises the ph just enough to slightly sweeten the marinade.

    Have you tried slicing the mushrooms before marinating? Seems easier and would get more penetration.

      I wanted to add the fat evenly throughout. Thats why I froze them first to keep the fat mixture through out! I've seen others making a mushroom pepperoni and they slice them and marinate them.

    I’m curious though, how well do you think they’d freeze if, after the steaming step, you threw them on a sheet pan, put it in the freezer for a few hours until frozen, then either put them in a ziplock or vacuum sealed bag until you use them? I’m asking because this seems like a bit of work to make these, and I bet it would be a good weekend project to make a bunch and have frozen and ready for whenever you wanna have a pizza night.

I bet it would help with the texture a bit, but I saw someone comment about using a dehydrator, which I feel like would do a much better job IMO (although I bet you could combine the two and have a great vegan pepperoni on hand for anytime you’re craving a pizza, even on weeknights).

    Any suggestions for an alternative to the gluten coating? I was so excited when I saw this was mushroom based and then it still had to involve wheat starch (though I know you mentioned alternative starches) and straight up gluten. 😭 As someone with celiac disease it sucks trying to find vegan meat recipes because so many involve wheat/gluten. I get it, it’s got a great chewy texture but dang :(

      You should experiment with just the marinade without the coating and see if you like it. I would think it'd be just like cooking regular mushrooms on a pizza but with extra pepperoni flavor.

    Hmmm, it just came to me as you were commenting on the lack of pepperoni bite as you ate it and it makes me wonder if you dehydrated the mushrooms somewhat after all the flavoring is added, maybe THAT would give it that tougher bite a typical pepperoni has? I'd like to see that.

    My veg shop has this new vegetable in season; salsify root, have you ever eaten it? Apparently it tastes a bit like oysters! Reminded me of you. This recipe looks ace btw.

    How does Miyokos mozzarella work as far as being an authentically melty/stretchy pizza cheese?

      I LOVE it... the fresh mozzarella doesnt get stretchy.... but it has a nice texture and flavor.

    Freeze marinade into a block. then vacuum seal it in with the shrooms.

    I think maybe if you added more sugar or syrup to the marinade will crystallise and cause a chewy texture
