Yo man! Vegan chef here, I run a restaurant in the Midwest of US. I created a MUNG egg for our restaurant about a year ago and it has been one of the most popular items since. Ours is a bit more complex than yours but i appreciate you putting the knowledge out. If you make it right you can use it to egg batter and then bread items for baking to be crispy and delicious. Here at the restaurant i used our mung egg to batter eggplant and bread them with Italian bread crumbs and bake, flip and bake again. They are incredible eggplant parm. People really love that and the omelette we offer now. We also have a VERY hearty breakfast wrap that i call the "high protein breakfast wrap" thats delicious. A breakfast suitable for a calisthenics athlete like you or I my friend. 😊 I hope you read this.
I make homemade just egg like this too and I have a couple tips and ideas. 1 use about a tablespoon of tapioca starch in the blending step. When heated, it firms up in sort of a bouncy consistency so you can very easily use this mix to make fluffy scrambled eggs too. 2 use soy milk instead of water to blend. It also helps with the texture and it makes it higher in protein. 3 add a bit of garlic. Because it’s delicious. 5 add about a teaspoon of baking powder for structural reasons. And finally, if you pour it into a large nonstick baking dish and bake at 350 (or 176) for 15min, you can use a round cookie cutter to make egg patties for vegan McMuffins. The baking powder is important if you want to do this.

A shortcut I found was to use Mung Bean Flour (Moong Dal Flour), which can also be found in an Indian grocery (I also found in an Asian/Chinese market, but it had a greenish tint from the mung bean shells-still tasted fine). Well this dude used no oil at all, that's why it looks like a pancake with dried veggies, rather than an omelet, and dead-stuck to the pan. I mean if someone in on trendy "no-oil" diet or something, pans in general are just waste of equipment. Air-fryers or steam cookers are those that designed for no-oil recipes specifically.
Hi, i did it this morning for breakfast. I had a bag of split yellow peas so I used it. I made 3 portions of a “scramble egg” with spinach and tomatoes but, for me, this amount is perfect for 4 portions! Very fast recipe, perfect to do in advance and have it ready for the busy morning. Thanks a lot 😊
Thank you ❤ I just transitioned to Vegan this morning after being pescatarian for the past year and a half. I was going to do vegetarian until I found a replacement for eggs and dairy without it being fake or the harsh ingredients like the ones in the store bought just egg that I don’t really want in my diet. I’m so grateful for this video 😊
That was an important tip about kala namak. I still see a lot of UA-camrs/recipes adding it before cooking and I wonder how many folks who try it are disappointed that they don't actually get that egg flavor. It really does work well added at the end and as Derek said, it isn't that salty so you can add quite a bit if you need to in order to get the depth of flavor you desire.
I make this a lot , today was one of them. I added a homemade tapenade made with kal olives, sun dried tomato, sautéed onions and garlic. A delish omelette .. I made the whole mix and put it in the fridge for snacking on this time. I’m thinking I’ll slice and air fry to make them crispy for dipping.. 🤗 Happy Sunday!
So, I’ve made a very similar recipe and you can cook the mung bean omelette “pancakes” and freeze them and add the veggies later. So nice for meal prep!
I make wraps or tortillas like this. I thin the batter a bit. They’re very pliable and soft. I learned this from Broccoli Mum channel. They freeze well. I bet these omelets would freeze too! You could make them smaller for egg McMuffin type thingies.
Love this! Thanks so much. I've got all my ingredients and will be trying this today. And on a side note, I put your name down as a write in for favorite vegan youtuber in the 2024 Veggie Awards. I hope you win!
I finally made this! It makes an excellent omelet. I have not tried scrambled eggs yet. Great pro tip adding the black salt on the finished product. I also tried French toast- even with the syrup and fruit, I could still taste the onion; next time I make this, I might leave out the onion all together.
Just egg, once opened, doesn’t last very long in the fridge-I’ve had it go moldy, swampy tasting with a half bottle/carton left!! Homemade sounds great! Thanks, Derek! ☺️♥️
I try to use it up quickly because its so $$$ but I am surprised by that since it has preservatives in it. At least with homemade you can control how much you make at a time so no wasting! If you try it, please enjoy!
Hi from the PNW Chehalis Wa. I made a batch of this and used it all week. Thanks for sharing it I made French toast today along with your recipe for bacon tempeh, and what a yummy breakfast .
Made these and they were really good! Saves a lot of money too. At our grocery store, it’s about $5 for a bottle of just egg, and this recipe made two bottles for about $1.00! Thanks Derek, your channel is great. My wife and I went from vegetarian to wfpb vegan this year and you have helped a lot. Thanks for all you do
I sent your "Just Eggs" recipe to my friend in Holland. She sent me a picture of her "just eggs" and mentioned how much she loved it. Thank you so much for sharing. You may have a new follower from Holland. 😊
Thanks so much for this recipe! This morning I used it to make French toast. Even with the added spices you couldn’t taste them. It was YUMMY! And…it didn’t stick in a non-stick pan, something that has been hard to find with other egg replacers. Love your energy! You are easy to watch and learn. Some of my favorite recipes are from you…chickpea cookie dough and sliced apple a favorite and your Buffalo Sauce…omg that stuff is addictive! There are more, but too many to mention. Yummo! Thanks again. You are keeping me on this way of eating. 🙏
I just made this today. It was delicious but for me a bit too thin. I added some chia and flax seeds that I soaked and then blended into it until smooth. I think next time I'm going to try a combination of mung beans and yellow lentils, and use less water. But it was great! I scrambled it up with some greens and put that on a sliced avocado on some sourdough bread. Would definitely make it again with some plant based cheese!
WOW! Can't get to the yellow mung beans in the pantry fast enough! Will definitely try this recipe. Thanks so much for your efforts and the energy that goes into your creativity. Here's an idea I'm passing on if you need to take in more protein. I had cooked organic soy beans in the iPot - used so far in a variety of recipes. Used 1/2 c. of those beans added to a smoothie this morning along with mango, ginger, 1/2 c. oats/water, banana and I used Stevia for sweetener. No bean taste but lots of extra protein for anyone that is interested in adding more of that to their diet!
Just found you! 60 yr old still thinks she is 12- on my nutrition journey down the rabbit hole. You have spined me around and now I am on the right path skipping down the yellow brick road with great information,= user friendly and economical.
This recipe is SOOO good! Tried it this weekend and it's fantastic. I love how easy it is -- I kept it in a mason jar and just poured out some "egg" for breakfast (or second breakfast or dinner...). With some mushrooms and vegan cheese and a light sprinkle of black salt, I couldn't tell it wasn't eggs. Thank you so much!
Chef here! ,Using a coated stainless steel pan works, as some non stick contain very harmful chemicals, so what you do is you get youre pan very hot use a high heat smoke oil like cocount about 2 T then wait when you see smoke coming off take it off heat, and wait for it to completely cool wipe it with a cotton cloth, as if you used to much oil and trying to clean it off the pan, then it will be ready to use! Enjoy this fantastic recipe! Thank you for sharing!
I can highly recommend vegan Omeletts using chickpea flour! This will also make for an amazing breakfast dish. Will definitely try this one. Thank you !
Good work! Just Egg is usually out of stock at my local stores. This was so easy to make, tasty, and 4:30 nutritious, and, I did not have sticking problems in a non-stick pan.
I'm sooo happy about this video - thank you! I have a Just Egg frozen patty or the bottled stuff almost every day and it costs too much and has unwanted ingredients. Thank you so much for creating this recipe - I can't wait to try it! :)
I tried this last weekend, and it has changed my life! I haven’t had French toast since going vegan in 2018. I have made 3 servings so far, and it’s beyond delicious. Do give this a try.
I make scrambled eggs and omelette with the water that is used to soak chick peas. Even the water in canned chick peas can be used to make omelette or scrambled eggs with a table spoon of chick pea flour
I did something similar to this previously... I just soaked my mung beans, and left them in the fridge. Then when I wanted to fry up some "Eggs" I put them in the blender. I also threw in some rice for a really yummy fry-bread.
I make a similar thing to this but I also add in a block of silken tofu, it just changes up the texture a bit. I use it to make "egg" muffins. In the oven. That way I have lazy breakfasts for the week. I add diced onion, mushrooms, and spinach, then put it in a silicone muffin pan, and bake in the oven for 20 minutes (ish). Soooo good for grab and go (or just lazy) breakfasts. 😊
I use silken tofu (and discarded crusts from making my kids uncrustables for their lunches) for making french toast and it's delicious. I'm not even vegan and this is still my preferred recipe now 😅
THANK YOU for this recipe - the Kala Namak is AMAZING - unbelievable how eggy it makes pretty much everything. I added chia and flax seeds and some tomato pasted and made "waffles".
This is awesome because I have been using Just egg to make a recipe I used to make with spaghetti noodles that were cooked I would add just egg to stick to the drained cooked pasta while cooking longer and adding garlic powder and nooch and oregano and vegan parmesan and then chopped up Italian gardein sausages. It was easy to have with a salad. Super quick meal.I also make quiche with just egg so I might try with the mung bean recipe too. Thanks for this .
I am thinking that this plus some crumbled, not too firm, tofu would produce something very similar to an egg-based quiche, softer with a mix of textures. Going to give it a try.
I made this and it was soo good, i used pink Himalayan salt in the blender and i didn’t use black salt on top because our grocery store didn’t have it. This is an amazing video
This is perfect, I haven't been able to even find Just Egg anywhere near me in Seattle, the stores just never have it in stock! Now I know I can make a healthier version while saving a lot of money! Thank you Derek!
Really good bro!!! ❤❤❤. It's an indian recipe, here in India we call it moong cheela. I learned this moong French toast today. Definitely gonna try it. ❤❤❤
You make me so happy Derek! I thought I’d never eat french toast again… this is wonderful news and yours looks amazingly delicious! That mungbean really browns so nicely. Can’t wait to give it a try! All the best to you 🌻

I have my mung beans soaking right now! I tried another recipe and was not that crazy about it. I can't wait to see how this turns out, especially with french toast. Thanks for posting this!
Thanks for the recipe! I just made them, and they came out great! I did, however, use only 1 cup of water and they came out fluffy. I will be making this going forward!
I was SO happy when the liquid Just Egg came to my grocery stores, Now I'm even more excited to try this and save a bunch of money (especially with all of the greedflation) Thanks Derek!
I use a similar recipe and found that cooking it in my silicone egg molds in the microwave works really well. I have used small ramekins sprayed with coconut oil, then baked in the microwave at 40 second intervals was good for a larger egg patty.
This looks really good. I've never tried the - just egg - product, haven't seen it in Ireland, but I've made something similar with chickpea flour, works well too 😊
Wow, I am so stoked by this video!!🥳🥳🥳I am vegetarian and found out many years ago that I am allergic to eggs. I can think of several ways I can start getting that egg vibe again! I didn’t even know there was a vegan egg on the market, let alone one I could make for myself! Thank you so so much!🙏🏻🥰🙏🏻🥰
This is awesome! I will definitely try it. It’s so great of you to experiment and try to figure out how to make it, and then share it with us. Especially since Just Egg doesn’t seem to be available here yet (Sweden). Thank you 😊👍
You can achieve the same result using Gram Flour a staple you can find anywhere you find Mung Dal. It is made from Chana Dal which is naturally yellow so you can skip the turmeric if desired.
And I think another reason that mung dal came out on top with the Just people is because mung naturally has a slippery texture (more slippery) compared to the chana. And from what I understand, it's easier to digest in general.
I've been eating this for a month. So yummy! Today however, I tried it as a coating for tofu and YES!!!! it gave me the bumpy texture I want with the egg flavor! win win win!!!
Hi 👋🏼 I made your recipe. I have been experimenting with how to cook it. I found the best consistency when I pour the mixture in a small amount like 1/2 cup into a buttered fry pan and COVER, cooking for several minutes before flipping. That way it browns and is firm. I stuffed it into pitas with spinach and vegan cheese. It was lovely. Thank you for inspiring me to try this! 💛
We love just egg, but it’s very expensive to feed a family of 6. So we make 50/50 tofu / just egg scramble. I always liked tofu scramble and it adds a nice eggy flavor to include the just egg while stretching an expensive ingredient!
Total Win! Thank YOU so much for making this an Oil Free Vegan Egg Recipe! My doctor and I are No Oil Plant-Based Vegans and she will love this, I can't wait to share it with her! Thank you!!!!!
I LOVE YOU been trying to break away from eggs due to dairy n inflammation n cholesterol and you saved me. Like we say in Kenya Africa Asante Sana meaning thank you so so so much. I am done eating eggs now.
Thanks so much Derek! I've tried other mung bean egg recipes before, but none contain the quantities and onion flakes and powder your version has. Before I went vegan, cheese and eggs were my favourite type of brunch, so the large quantity of your ingredients is perfect for my appetite. My husband tasted a weird chemical flavour in the store bought Just Egg and challenged me to make a homemade version. For oil-free and non-stick-pan free version, I've found that pouring onto parchment paper and putting into the oven or air fryer does the trick. I'm looking forward to trying out your recipe this morning! BTW, I just saw your buddy Nimai on the Netflix documentary You Are What You Eat last night re: the Stanford research study on twins on a whole food omnivore vs. vegan diet. It was fascinating, and I was excited to see Nimai coaching the twins on exercise and diet to build lean muscle. Very fascinating...and builds on the science presented in the Game Changers. Maybe one day we'll see you featured in one of these documentaries!
Sad, really, how excited I was to see this video🤣Can't wait to try your version. I used Just Egg in cookies last week - did not taste any onion flavour and the texture was light and crisp. Delicious!!
I blend a half block of firm tofu, with water, turmeric, onion powder, garlic powder, nooch, and pepper. I oil a pan, cook down the liquid and crumble the rest of the firm tofu in. Then add black salt at the end. Great for scrambled eggs in a pinch and minimal effort. You can even add a ton of veggies for scrambled omelette type situation (with your favourite hot sauce of course 🤤)
I made the egg... Yum...ill never go back. One thing yiu said prince really well... Until you get clear water and the foam is gone. I looked at your bowl and whisk and said, "Who is this guy? He is so stupid!" I got out a wire strainer and I rinsed and rinsed and rinsed. I thought I must have it...I put in a metal bowl to soak...instant foam. 🙄 I'm so stupid... I use the bowl and whisk like you did haha...takes a minute but stay with it...the water will be crystal clear and no foam. Amazing! Haha Anyway, this makes the best egg. I love fresh vegetables and fresh herbs...with red potato hash browns (sometimes I grate, sometimes I play the mandolin, sometimes I go wild and do both)! Haha Thank you for for your recipe and taking the time to get it just right. I wanna experiment with some flavors... Like paprika. Watch think? 😊😊😊
I make this all the time for my husband, we add jalapeño to ours and make it an egg sandwich. I am going to try the French toast tip. Thanks for your time and recipes.
You can also try Besan, which is chickpea flour, mixed with some whole wheat flour, whisk it to a liquid batter and use that as the base with other vegetables, it comes out pretty fluffy. I have never tasted egg omlette so can't comment on the comparison to it, but tastes pretty nice and quite quick to make.
I made this today. It was very easy and very good. The black salt definitely made the recipe perfect! Thank you. I had to order the black salt, but I did find the split mung bean locally.
Omg, thank You!!!!! I love Just egg but I don't buy it often because of the price. Tip: I cook/put just egg in a ceramic muffin pan and add spinach, tomatoes and vegan cheese, I place them in the oven for 15 minutes and voilá, you have a delicious breakfast. I serve it with toast and guacamole ♥️♥️
Thank you so much❤ We have been out of just egg in all of the stores in my area for awhile so this will definitely help me❤ Stay awesome and blessed. ❤

@@crisgriffin3042 Right. You need some type of lubricant
Oh, that sounds quite good. I'll stop by your place for lunch tomorrow, ok. 😉 Just kidding, but I wish I could.
We have been making bread with vegan omlet for years in India
💚It's always good to see as many vegetarian options as possible anywhere you go.
@1:56 quick tip, if you add the water from the next step to the Pyrex, then the mung beans will pour out more easily into the blenderrrrrrr.
I pour it into ice cube trays and freeze it. It still cooks fine after thawing.
After day 3 I just make a huge scramble or tofu/justegg bake and divide into portions in the fridge.
Randomly, we had everything we needed this Sunday morning to make this and it was DELICIOUS! Thanks, Derrick and Crystal!!!
If it’s hard to find moong Dahl you can also use chickpea flour as a substitute. Excited to try out this recipe soon.
Amazing! Thank you. 🙏
I hope you like it! You’ll have to report back. 😊

All the best to you 🌻
Thank you. We look forward to trying it as we use JUST regularly. Appreciate your helping to ‘normaluze’ vegan nutrition for our health, the health of the planet, and animal welfare. From a fellow Canadian, Professor-Elizabeth
This is exactly the recipe I was looking for 🤩 another banger, man!
Awesome! Enjoy :D
You are amazing, you have helped me so much, I cannot eat soy and I am vegan. You opened a whole new world for me. I have become a subscriber.
I’m always thinking on new way’s on vegan! I can’t wait to try this! I love how you explained everything so easily for us! Thank you Derek! It looks like your cat was comfortable! ! I look forward to your post.! You’re recipe to help us
I make this recipe every week. I’ve tried so many and they didn’t taste as good. Love it!
I used your “egg” recipe to make ginger bread! Using chick pea flour, carmalized ginger, date’s & pecans. Turned out great!!
Thank you 😊👍
I am totally going to try this as an alternative to scrambled tofu, Split Yellow mung dahl is on my shopping list.
I was thinking about the chickpea flour as well...
I add nutritional yeast in a chick pea omelette.
And baking powder...
😊 Why baking powder? I'm interested thanks
I've been eating this for a month. So yummy! Today however, I tried it as a coating for tofu and YES!!!! it gave me the bumpy texture I want with the egg flavor! win win win!!!
Looks amazing! I bet it would be great in a breakfast burrito with some seitan sausage.
Oh it would be amazing in that
Hi 👋🏼 I made your recipe.
You rock! Thanks for doing the leg work for the rest of us! I love all the comments from fellow followers
Delicious!!
Looks amazing!!!! I can't wait to try this! I've used silken tofu for an omelette before but now I'm excited for this!!❤
Thank you for the recipe, appreciate the no oil!
I'm so stupid... I use the bowl and whisk like you did haha...takes a minute but stay with it...the water will be crystal clear and no foam. Amazing! Haha
Anyway, this makes the best egg. I love fresh vegetables and fresh herbs...with red potato hash browns (sometimes I grate, sometimes I play the mandolin, sometimes I go wild and do both)! Haha
Thank you for for your recipe and taking the time to get it just right.
I wanna experiment with some flavors... Like paprika. Watch think? 😊😊😊
PROTIP: You can use split green peas for this if you can't find mung beans! You'll end up with a green omelette, but it's just as tasty.
Or you can try yellow split peas too!
I make this all the time for my husband, we add jalapeño to ours and make it an egg sandwich. I am going to try the French toast tip. Thanks for your time and recipes.
I think using chickpea flour instead of the whole beans is way more efficient and it even tastes like egg because of the sulfur in the chickpeas 🤷
Thanks for this
You can also try Besan, which is chickpea flour, mixed with some whole wheat flour, whisk it to a liquid batter and use that as the base with other vegetables, it comes out pretty fluffy. I have never tasted egg omlette so can't comment on the comparison to it, but tastes pretty nice and quite quick to make.
🤯 Never buying Just Egg again! It looks so delicious too! Cant wait to try. Thanks!
Thank you so much for creating this video and from this long time vegan, there’s always something new to learn!
Such a great idea!
Thank you so much❤ We have been out of just egg in all of the stores in my area for awhile so this will definitely help me❤ Stay awesome and blessed. ❤
I’m not vegan, but I try a lot of vegan recipes. I’ve never done egg, so this will be my first egg recipe. Thank you for sharing.
Im allergic to egg, whey AND chicken so I really appreciate recipes for cost friendly vegan options, thank you!
“Just Egg” is up to over $8.00 here!!!! Near Chicago. So this recipe is going to be a great thing! Thank you so much. Beans are soaking and I’m looking forward to trying this!🎉🎉
Thank you for this recipe. I'm soaking my mung beans right now. I really want to make the french toast. Thanks for cracking the code of Just Egg😊
