    From Bright Spots & Landmines: To make chia seed pudding, I mix 1/4 cup of chia seeds, 1/2 cup of water, a hearty amount of cinnamon, 1-2 tbsp of coconut oil, and some combination of toppings like frozen raspberries, shelled sunflower seeds, and nuts. After about a minute of stirring with a spoon and about a minute sitting, it turns into a pudding-like gel. It can also be made in a batch ahead of time by quadrupling the recipe. The water can be hot or cold, depending on your preferences, and the pudding can be made thicker by using less water. Chocolate or vanilla protein powder or pure vanilla extract can be added for additional flavor. Parents have even emailed me with enthusiasm for this recipe - “My son loves this!” - meaning this isn’t just a weird concoction for health nuts like me.
    There is nothing “exact” about this recipe, so you can experiment with the components and toppings to fit your tastes. For example, I know someone that makes it with lemon juice, stevia, and almonds. There are other chia seed pudding recipes on the Internet, though most have way too much added sugar (including honey).
    Important note: If you have any GI discomfort with this recipe, make the chia pudding in a batch and let it sit overnight. Soaking chia seeds in water for a longer period of time has helped some readers who found my recipe hard to tolerate.
    I generally take one unit of insulin for chia seed pudding, which covers the very slow BG rise from fat, protein, and the small amount of carbs from the toppings. Each 1/4 cup of chia seeds has 20 grams of carbs, though 16 grams are from fiber (80%), translating to little BG impact.
    What on earth are chia seeds? They look like poppy seeds and are packed with fiber, protein, and healthy Omega-3 fats. On their own, chia seeds don’t taste like anything, so it’s all about how they are flavored (hence the recipe).
    I buy chia seeds in bulk online; a two-pound bag from Viva Labs on Amazon costs about $10 and covers about 20 breakfasts. They can also be purchased at regular grocery stores and even corner stores, usually in one-pound bags.

      Chia swells to about 27 times it's size so overnighting it is as good practice! Otherwise you could have digestive problems! Be aware! Otherwise very healthy!

    I have been doing much the same now for a while I have 2 tablespoons of chia seeds soaked in unsweetened coconut milk 1 teaspoon of Ceylon Cinnamon 2 tablespoons of Greek yogurt and some fruit usually stewed peaches I make myself with no sugar

    I absolutely LOVE an overnight chia pudding..! I use chia, almond milk, some frozen summer or autumn berries, unsweetened plantmilk yoghurt (all layered) and either coconut for 'tropical' or a dusting of cocao powder or nibs for a 'black forest gateau' flavour! make overnight and pop in my work bag in the morning.

    Reading your bright spot book. I got it free and purchased from amazon. Thank you . PS do you have type 1 or 2 diabetes. I only asked because I developed type 2 at 59 yo. A year later with lower carbs about 70-100 grams daily my A1c is 5.4% Yes I do take metformin 500 mg ER. Blood sugar this morning was 100 mg/mg. I often skip breakfast, first meal is often 3/4cup Greek yogurt, 1 oz walnut, 1oz blackberry or other berries. Your chia is a good alternative. Thank you Adam!

    Nice video, I love my FreeStyle Libre 14days and Blucon cgm together, both helps me to manage my blood glucose. My Blucon give me alarms on my and my partner’s phone when I’m high or low so that’s nice.

    Please don't do this. Chia seeds need to soak up liquid and can expand up to 10x their size and like 20x+ in weight, so doing this can wreck your digestive system. If you can, soak them overnight. Once they've fully absorbed all the liquid they can hold, they're safe to eat.

    Um instead of just water put in 1/2 water 1/2 heavy cream.Very good for you and good for diabetics on a ketogenic diet.Also tades much better than just water.

    The 1/4 cup Chia seed was wayyy too much for my stomach (I did eat the entire bowl). I was backed up for 2 1/2 days with painful constipation. Thank you Metmusil!
    I just watched you do it here and proceeded to eat. It was then that I went to your book to see if I added too much seed. I did not; used 1/4 cup as directed.
    I then realized you state in your book to soak it for longer. There should be larger print cautioning about the effects of Chia seed.

      i would say that amount (60ml or 4 tablespoons) is for two servings. overnight soak, definitely. unless it's without any other layers. the overnight soak is important IMHO

    just came across the your video just thought maybe i just add when you showed the almond milk you said it doesnt have that many sugars. for diabetes is not the sugars in the products its the carbohydrates that are in the product. 1 cup of soy milk is 15 grams of carbohydrates when broken down into our bodies its about 3 teaspoons of sugar. smoothie looks good but the ingredients needs to be lowered a bit for lower carbohydrates

      Almond milk is very low carb, so I'm not sure what you're talking about here. Just make sure it's unsweetened.

      Thomas Rowan back in the 80,s Gillette tried to get ZZ Top to shave off their beards for a add. ZZ Top pretty much told them to go push a rope. the story i have always heard about it ,Gillette told them if they do ZZ Top would never have to work any more. i think that ZZ Top made the right choice.

      I do because I like the softer texture. But I don't think you really have to. I have seen people toss them into yogurt for crunch, so I can only assume it's personal preference.

    I don't even know why this guy mentioned Blood Sugar as what he has just made would not raise people's blood glucose. Sorry but I could not eat that. I would use coconut milk, with natural sweetener no sugar cocoa powder with some berries, warm the coconut milk up..delicious

    Help Me: My husband blood sugar keeps spiking after his breakfast shake and I need to know what im doing wrong. Its started at 151 then after the shake it was 300, WHY? Ingredients: 1/2 cup rolled oats, 1 tsp cinnamon, 25g protein powder (zero carbs), 2 tsp chia seeds, 1/2 banana, 2 tbs evaporated milk, blended together with 1.5 cups of water. I thought all my ingredients were perfect, ARE THEY? Macro count 60g carbs, 38g protein, 12g fat.

      I'd double the fat intake... drop the banana (especially if it's ripe!)... Possible substitution for fat would be some dark chocolate (at least 85% DC)... Those rolled oats could be the source too! Possibly lower the protein powder (but I'd think your blood sugar would sustain or spike later after a meal)... Maybe bring in a tbsp of coconut oil, to bring up that fat content which would slow your spikes down... Plus, FAT is your friend NOT your enemy! FAT doesn't make you FAT! Swap your macro count around... lower your protein count some...

    First mistake - it's hard to hear you. You really need to have a microphone up close to you. Second of all you said "and as you can see it turns into a gel"...but we couldn't see inside the bowl. You really should have moved the camera closer too.
