From Bright Spots & Landmines: To make chia seed pudding, I mix 1/4 cup of chia seeds, 1/2 cup of water, a hearty amount of cinnamon, 1-2 tbsp of coconut oil, and some combination of toppings like frozen raspberries, shelled sunflower seeds, and nuts. After about a minute of stirring with a spoon and about a minute sitting, it turns into a pudding-like gel. It can also be made in a batch ahead of time by quadrupling the recipe. The water can be hot or cold, depending on your preferences, and the pudding can be made thicker by using less water. Chocolate or vanilla protein powder or pure vanilla extract can be added for additional flavor. Parents have even emailed me with enthusiasm for this recipe - “My son loves this!” - meaning this isn’t just a weird concoction for health nuts like me.
There is nothing “exact” about this recipe, so you can experiment with the components and toppings to fit your tastes. For example, I know someone that makes it with lemon juice, stevia, and almonds. There are other chia seed pudding recipes on the Internet, though most have way too much added sugar (including honey).
Important note: If you have any GI discomfort with this recipe, make the chia pudding in a batch and let it sit overnight. Soaking chia seeds in water for a longer period of time has helped some readers who found my recipe hard to tolerate.
I generally take one unit of insulin for chia seed pudding, which covers the very slow BG rise from fat, protein, and the small amount of carbs from the toppings. Each 1/4 cup of chia seeds has 20 grams of carbs, though 16 grams are from fiber (80%), translating to little BG impact.
What on earth are chia seeds? They look like poppy seeds and are packed with fiber, protein, and healthy Omega-3 fats. On their own, chia seeds don’t taste like anything, so it’s all about how they are flavored (hence the recipe).
I buy chia seeds in bulk online; a two-pound bag from Viva Labs on Amazon costs about $10 and covers about 20 breakfasts. They can also be purchased at regular grocery stores and even corner stores, usually in one-pound bags.

Subscribed, bought your book, and grateful for your positive diabetes attitude. :)
Thank you for your time, great recipe.
Just listened to your webinar on dLife. Fascinating. Continued success!!!
Chia seeds is a total game changer!
I have been a T1D patient since my childhood. Struggled to find a quick, effective breakfast recipe. Your recipe is outstanding. Can you give us a recipe regarding lunch and dinner? Thanks in advance.
Following
Thanks I will try it. Caroline
thank you for your time...
Thank you ! Tomorrow’s. breakfast!
I’ve been liking PBfit powder with chia seeds and almond coconut milk blend (unsweetened).
Thank you..great recipe
Bless you
Thank you for sharing
After the first bite he reminded me of Tom Hanks in the film 'Big' when he ate some caviar.
thanks for this!!
Did you try it? How’s the taste?
You are AWESOME.
Chia swells to about 27 times it's size so overnighting it is as good practice! Otherwise you could have digestive problems! Be aware! Otherwise very healthy!
Use a hand held smoothy mixer to zap it with half cream. So much faster and better.
Love your recipe, you're precise, likable and most of all short in the explanation..pls do more 💕
I have been doing much the same now for a while I have 2 tablespoons of chia seeds soaked in unsweetened coconut milk 1 teaspoon of Ceylon Cinnamon 2 tablespoons of Greek yogurt and some fruit usually stewed peaches I make myself with no sugar
I absolutely LOVE an overnight chia pudding..! I use chia, almond milk, some frozen summer or autumn berries, unsweetened plantmilk yoghurt (all layered) and either coconut for 'tropical' or a dusting of cocao powder or nibs for a 'black forest gateau' flavour! make overnight and pop in my work bag in the morning.
Thnk u so much
Reading your bright spot book. I got it free and purchased from amazon. Thank you . PS do you have type 1 or 2 diabetes. I only asked because I developed type 2 at 59 yo. A year later with lower carbs about 70-100 grams daily my A1c is 5.4% Yes I do take metformin 500 mg ER. Blood sugar this morning was 100 mg/mg. I often skip breakfast, first meal is often 3/4cup Greek yogurt, 1 oz walnut, 1oz blackberry or other berries. Your chia is a good alternative. Thank you Adam!
I was wondering that too for type 2 diabetes
Nice video, I love my FreeStyle Libre 14days and Blucon cgm together, both helps me to manage my blood glucose. My Blucon give me alarms on my and my partner’s phone when I’m high or low so that’s nice.
thanks for he intormation
YOU SAY IT REALLY CHANGED YOUR LIFE, BUT YOU DID NOT SAY HOW? BUT I DO THANK YOU FOR THE FREE BOOK! I WILL LOOK INTO CHIA PETS SEEEDS
Chiaaaaaaa 😍😍😍
I will try it. Im not a picky eater so im sure ill be ok with it. My blood sugars are high in morning trying to find way to keep it low
I soak this overnight. They absorb the liquid and I think taste better that way.
I use half & half with vanilla extract if I want monk sugar I use it.
Just saw this. Can I use ground Chia?
I use 1/2 cup heavy whipping cream and cup of Almond Milk.
Thank you! I use coconut milk instead of water, I love chia pudding cold yummy
Stephanie Marie I make overnight and sometimes I heat it up when I want a hot breakfast
Isn’t coconut prohibited for diabetic person?
@@thefolkangel1719 No; on the contrary. It's very beneficial.
I don't love peanut. What could I use instead?
Please don't do this. Chia seeds need to soak up liquid and can expand up to 10x their size and like 20x+ in weight, so doing this can wreck your digestive system. If you can, soak them overnight. Once they've fully absorbed all the liquid they can hold, they're safe to eat.
Only vid i watched where seeds were eaten immediately
I always soak chia seeds overnight too.
Um instead of just water put in 1/2 water 1/2 heavy cream.Very good for you and good for diabetics on a ketogenic diet. Also tades much better than just water.
Would Almond/coconut milk also work?
Can you use milk or cream instead of water?
The 1/4 cup Chia seed was wayyy too much for my stomach (I did eat the entire bowl). I was backed up for 2 1/2 days with painful constipation. Thank you Metmusil!
I just watched you do it here and proceeded to eat. It was then that I went to your book to see if I added too much seed. I did not; used 1/4 cup as directed.
I then realized you state in your book to soak it for longer. There should be larger print cautioning about the effects of Chia seed.
The same thing happened to me
Does it work for type 2 diabetes?
i would say that amount (60ml or 4 tablespoons) is for two servings. overnight soak, definitely. unless it's without any other layers. the overnight soak is important IMHO
im late but all that 1/4 cup of chia seeds is too much... 2 tablespoons is the max to consume in a day.
Pls I will need a copy of your book, where can I find it. Thank you
I'm scared to try it lol
Do those seeds soak up the water?
Don't you get it it's all about buying his book😀
I’m allergic to chia, if not I try this beautiful recipe
Allergic to Chia or sensitive to seeds?
my intestines get so inflamed and I get rashes everywhere so I call it Allergy last time I ended in the hospital (just chia)
Water? I use Almond milk.
I just saw you speak at the T1D Nation Summit in Phoenix. You were great! I was wondering why you add the coconut oil? Is it just for flavor? Thanks!
coconut oil keeps away old-timer's disease!
What's the Carb content?
Chia, huh? I'm doin' it!
I wish I could eat it. It's so slimy. I cant get past the texture.
Do you drink the gel or add water then drink it
How many net carbs in that plrase ?
I would like your book but I am frm another country because I need to go on a diabetic person
May I ask why you consume that many carbs?
Hi n G Morning hw do I get this book?
Nicer with almond milk 🙂
How much water
If I put more water it doesn’t become gel
Might be a dumb question .. But to be exact is it ground cinnamon or cinnamon sugar?.
Ground cinnamon only.
Peanuts (Groundnuts) spike my blood sugar a lot! Why?
If you have it with other food. it may be a case of too many calories and / or carbs overload.
What's the texture like?
We didn't get to see that
Can I add milk?
Milk has carbs..
Un-sweetened coconut milk is fine! Or unsweetened almond milk.
I have tried this breakfast but it’s not filling. Do you have any suggestions
Tonjia Murray .... yeah, eat some real food
Eileen LeValley - next time give a helpful answer.
Tonjia Murray .... next time learn what real food is
Take out the oil and add oatmeal and banana
Well that outta spike those sugars for sure! Nice call!
U wouldn't happen to be able to mail ne one of those books would you.
just came across the your video just thought maybe i just add when you showed the almond milk you said it doesnt have that many sugars. for diabetes is not the sugars in the products its the carbohydrates that are in the product. 1 cup of soy milk is 15 grams of carbohydrates when broken down into our bodies its about 3 teaspoons of sugar. smoothie looks good but the ingredients needs to be lowered a bit for lower carbohydrates
Almond milk is very low carb, so I'm not sure what you're talking about here. Just make sure it's unsweetened.
So what is the conclusion of both Jennifer s ?
A close up of what it looks like would've been helpful.
is this the same stuff that they use to make a chia pet grow hair.?
Yes. Lol. The seeds sprout and grow "hair". Those are probably treated somehow, though.
Lady Wytch and now Gillette wants men to shave off their facial hair. i have had a moustache since i was 17 and i have had a beard almost as long . think ZZ Top. am i gonna shave off either one .Hell no. there is not person in this world i would shave off either one for.
Thomas Rowan back in the 80,s Gillette tried to get ZZ Top to shave off their beards for a add. ZZ Top pretty much told them to go push a rope. the story i have always heard about it ,Gillette told them if they do ZZ Top would never have to work any more. i think that ZZ Top made the right choice.
I remember those commercials...chi, chi, chia! 😂
Aren't you supposed to let it rest overnight or for like 2-4 hours?
Sarah Tremblay-Quintanilla .... yes
yes. This guy is a dope
I do because I like the softer texture. But I don't think you really have to. I have seen people toss them into yogurt for crunch, so I can only assume it's personal preference.
You don't have to let them soak. You can put them in a glass of water and stir and drink immediately.
@@jonette12345 in fact, I feel, if it swell s up in the tummy, it will clean the digestive tract better
Is it ok to used Almond Milk instead of water? I am a diabetic anyway
yes, unsweetened :) watch your cholesterol tho with almond milk. Mine was low so I need to drink almond milk lol
Assume
i thought you had it let it stand for 5 hours as told by one youtube info.
I don't even know why this guy mentioned Blood Sugar as what he has just made would not raise people's blood glucose. Sorry but I could not eat that. I would use coconut milk, with natural sweetener no sugar cocoa powder with some berries, warm the coconut milk up..delicious
Derry Shore great insulin spiker
doesn't it guve you terrible gas? I'm used to a high fiber diet but chia is fiber overload for me
Help Me: My husband blood sugar keeps spiking after his breakfast shake and I need to know what im doing wrong. Its started at 151 then after the shake it was 300, WHY? Ingredients: 1/2 cup rolled oats, 1 tsp cinnamon, 25g protein powder (zero carbs), 2 tsp chia seeds, 1/2 banana, 2 tbs evaporated milk, blended together with 1.5 cups of water. I thought all my ingredients were perfect, ARE THEY? Macro count 60g carbs, 38g protein, 12g fat.
he may be spiking because there are 60 grams of carbs in liquid form, including a lot of sugar from bananas. Try taking a look at chapter 1 of Bright Spots & Landmines for lower-carb breakfast ideas: www.diaTribe.org/BrightSpots
Lower the carbs, cut the banana and try using almond milk instead
That’s a lot of carbs. Carbs = sugar
I'd double the fat intake... drop the banana (especially if it's ripe!)... Possible substitution for fat would be some dark chocolate (at least 85% DC)... Those rolled oats could be the source too! Possibly lower the protein powder (but I'd think your blood sugar would sustain or spike later after a meal)... Maybe bring in a tbsp of coconut oil, to bring up that fat content which would slow your spikes down... Plus, FAT is your friend NOT your enemy! FAT doesn't make you FAT! Swap your macro count around... lower your protein count some...
I agree, I think her Carb/Fat counts should be swapped!
I'd have to eat the whole bag to do any good our bodies r not built to disgust chia seeds
He
I love Chia seeds but as a crunch. Can't do it as a pudding. Texture is gross.
Yuk!
How long before your running to the toilet?
"you're"
SUGAR IS HARMLESS IF DILUTED LIKE IN FRESH FRUITS - UA-cam
WHAT is a……..chia ? Can a person pick up ONE chia and eat it ?
No Ta
First mistake - it's hard to hear you. You really need to have a microphone up close to you. Second of all you said "and as you can see it turns into a gel"...but we couldn't see inside the bowl. You really should have moved the camera closer too.
asking Americans I do use my imagination all the time but when he says stuff like that I'm going to call him on it. And who asked you anyway?
for anyone - only consume 2 tablespoons of chia seeds in one day or less... too much Is bad.
I mean... it doesn't look like pudding. It looks like slop. I'm willing to try it but it would have been nice to see it properly... guess I'm 6 years late to critique, though.
Water! Live a little and replace with whole milk. Also let that chia sit for longer than a minute, that's nasty
yuck
That doesnt look nice ahhh
Not in this life time. Here's to pass. Thanks.
You ned to work on your sound... It sounds like your speaking in acorridor Or something! Pity otherwise great message that doesn't come forward
