Hi❤️ the perfect way to describe these is not crunchy but not soft either. They are soft when they come out of the oven but will harden a bit when they cool. This also depends on the thickness, so thin cookies are more crunchy than thick ones. Once you frost them with royal icing they do get softer because of the moisture of the icing. Hope this helps x
