I loved hearing you talk and eat with the owner. I never thought to have the pleats facing down, it means you don't have to worry about making the bottom too thin!
Lol so random but we just had Kang Kang an hour ago and had these. One summer, I ordered these twice a week. Gained soooo much weight from it. They’re addicting!
These are tasty enough but hardly the delicate thin top - in my experience, Kang Kang has quite a thick wrapper. The most well crafted one I can remember is Cheung Hing Kee in HK. Locally I can recommend Little Pan Fried Bun in Santa Ana.
I find that they tend to be sweeter a la Shanghai style. No knocknon Kang Kang but I prefer a more savory flavor like SLB. I found a few places in Tokyo, but nothing State-side yet.
What’s the secret to ordering at Kang Kang? I tried to order from the woman at the register and she just kept yelling “window!” at me. I looked at all the windows and didn’t know what she meant so I pointed at the dumplings right next to her with a smile. She yelled,”window!!” I couldn’t figure it out and the place looked kind of dirty, so I left.
at a buffet, i personally sneak corndogs into the buffet so others can enjoy them. I hide 6 corndogs in my jacket pockets. it then, is a joy for me to see other patrons of the establishment eat my corndogs thinking they were part of the buffet.

The corn cheese dumplings at Little Pan Fried Bun are 👑
There is also a Little Pan Friend Bun in El Monte.

is there a reason to fold the bao in 18 folds?

This bao is difficult to master, that even in whole Tokyo I only found one place to do it.
