Totally optional to me... i just made a fermented thai chili hot sauce (with garlic and onion) without sugar and the natural sweetness from the chilis an the veggies comes through. Plus if someone has health issues with sugar they can enjoy it too.
Pro strat for prepping a lot of garlic cloves at once! Take the full garlic clove and break it up a bit, then put it all inside a jar with a lid. Next, shake vigorously and voila! Peeled garlic!

Tips to u...that ginger no need knife to remove the skin..we here scrap it with spoon, fine edge much better.. Scrap it like u scrap the paint on wall..put the spoon upside down..control the ginger with ur right thumb and scrap it until finish
