Pierogi Dough

  • The most pliable, soft, easy to work with, and thin dough for super dumplings, pierogi, and uszka. It is just a few ingredients; hot water, a spoon of olive oil, and all-purpose flour. You will never again need to or want to put eggs and animal fats in your dough. I promise!
    The amount that I used in this recipe yields 40 large pierogi.
    Ingredients:
    2.5 cups of all-purpose flour
    1 Tablespoon of good quality virgin olive oil
    1 cup of HOT water (how much? as much as the flour will absorb.... and don't worry you can always add more flour :)
    1/2 Teaspoon of salt
    This recipe is vegan, vegetarian friendly. Your dough will be easy to work with and result in a thin delicious encasing for whatever type of dumpling you are making. There is no way that you will ever want to use a different kind of dough.

    Love the music. It gives class and ambiance without being overbearing.
    On another issue, I usually put a damp cloth under the bowl and it doesent move a lot.

      funny, I was just thinking how much I find the music super annoying. It's not necessary and I can't always hear her b/c of it. People are different eh?

    You can always tell a good cook when they use an actual cup to measure rather than one of those things with number on it.

    Yeah! I started using" just off the boil" water to my bread dough too. I mix let set and then add the yeast when it's coolish. Makes great bread!
    I'm making your pierogi dough tonight.

    thank you - I'm sure this is how my mother did it...only, she went by "feel" when it came to oil & water...your's turned out perfect - I even used all the filling to the tsp lol - never manage that again!

      Like you, I often do use only one hand when mixing ingredients. There is always a good reason to keep the second hand available and clean. Years of practice.

      Maximum three days in the fridge, and up to two months in the freezer.

    Let's not use that shiny stainless measuring cup off to the right. We'll use a good old coffee mug for measurements. Your dough did come out looking good.

    Can I replace the water with squash?

      Not sure if squash instead of water would work, interesting question. I never tried squash in this recipe so if have tried it do let us all know the outcome.

    Well I decided to make this recipe because I thought maybe it’s some family recipe or grandma‘s recipe whatever. But I found it very frustrating because you use the coffee cup as a measure. How much is in that coffee cup? So I used a one cup measuring starting with 2 cups of flour sifted. Then you don’t say how much water to use. So it looked like it was a 2 cup measure so that’s what I used. Oh my God, I kept having to add flour and add flour and add flour I must’ve used 5 cups of flour before I got it to be smooth and not stick. Why don’t you work this recipe out with exact Real cups of flour in exact measurement of water. I make a lot of ravioli and gnocchi ,and my own pasta and I’ve made pierogies before but I decided to try your recipe.

      The problem is is that you have to learn how to work with dough and that takes practice. You have to be able to feel when it's right and it takes time to learn how to do things
