which cut of pork would you recommend if substituting for the beef ?

This may be a strange question, but, it you could, where did you get your glass from?
The one used to cut the dough.
We always had those same drinking glasses when I was younger.
I've looked everywhere to get some again, but can't fine them any longer.

how much time lapsed during the kneading process?

It took us roughly 8 minutes but it all depends on how fast you knead and how well the dough comes out. You want to be sure it isn't to sticky.
