thank you for this video. today taking a crack at making my first pierogie, i had started out with a different recipe and wound up with dough way too sticky. i wish id found this first before using the other recipe, but this video helped me fix the dough, i will use your recipe in future. you saved a batch of poor pierogies from an unseemly fate! thank you!! have a great day
Hello, Ania. What a small world this is! My late mother-in-law was Polish and her maiden name was Janik. Both her parents were born in Poland. The family originally settled in Minnesota and later relocated to northeastern PA. I enjoyed your video and your cafe's facebook page, too!
Ania, you just gave me confidence to make the dough. Dziadzu is craving homemade pierogi so I will make them for my next visit with him. I love the cookbook and the various filling recipes.
if you lay them flat on a tray to freeze, afterward, you can place them in a baggie or even vacuum seal them- freezing 1st, allows putting them in a bag without sticking together- - it works for me- ( I can't see wasting money on tasteless Mrs. Tee's-)- - - I've thrown away better one's !!!!
Going to try this, i got the filling figured out, always had issues with the dough. Your hair is beautiful but it needs to be pulled back when handling food.
Had to laugh when you said there is no measuring. It's all by sight and feel. My husband was taught by his Polish mother to make bread and perogi etc using this method so he only knows how to make it for 8 people. Now whenever he gets the urge to "make" something I try to divert his attention. There's only two of us.
This recipe was a mess. Total Guesswork. Try this recipe folks. Same as her's. Without general approximations. 1lb of flour - 480g - or if you must 4 cups of AP Flour. Weight is preferred over volume with flour. 190ml or 9oz of water. and 1 large one egg Higher gluten flour will need more water - lesser gluten like cake flour will need less water.
@@conniebendick9293 She made a claim that its from her restaurant. I bet someone translated their commercial batch to home cooking measurements for them. She doesnt know what's in that book and it shows. "I'll definately use all this water" ends up using 1.4 cups and adds waaay more flour. I made a better recipe for her.
Great recipe, one thing though, please cover or tie back your hair, as beautiful as it is, this is not good practice to have you flicking and touching your hair while kneading dough, that's not good practice.
lol she's making a UA-cam video, just like tv back in your day. Just let people pull a big hair out of the dish once and they will learn. Hope it's not while entertaining.
Thank you for noticing! I don't recommend having hair down it is super uncomfortable and unsanitary. When I enter my kitchen, I usually put it up ;) maybe I wanted to look nice for this video.

There is probably some of your hair in pierogi. A good cook does not shake his hair over the food.
You can believe it. Don’t use the kitchenaid it toughens the dough. Guess how I know ? 😅

Maybe she wants to be exact on the measurements, when I make the dough at home it is by feel.
