Martha in Realtime -- love you so much. I make pierogi for every Wigilia, last 25 years. My mother's arthritis stopped her long ago and she has also passed. I tried passing the torch, but .....so it's me until I cannot any more. I'm 58 this year and a big fan of MS. My Polish sister from another mister.
I remember watching you and your Mother make them. I have used your Mother's recipe in the past. We filled them with 1) Farmer's Cheese, 2) Potatoes, 3) Sauerkraut and 4) Mushroom Duxelle with Cream Cheese. I haven't tried any dessert Pierogies yet. I'll have to try that after I move. So good and easy to make!

You are right that every nationality has their own version of some type of dumpling. My nationalities version fills them with cheese or with meat and they are smaller but yours also look good.

I’ve tasted a lot of pierogi dough and what I remember is one in particular dough it was so light and not chewy. I don’t know what makes a dough lighter than a tougher dough?

Years ago at a wedding I had Pierogi with potato and carmelized onions, it was soooo good.
Greetings from Poland, try pierogi with apple filling like my grandma did during summer. Served with cream and sprinkled with vanilla sugar :)

Yes the french do have dumplings usually filled with meat and other things and they are called... "quenelles" or "boulettes."
I loved those glasses! Ours were teal, avocado, silver, something pinkish, IOW, not primary colors. I wonder if my mom still has them.
