When I make similar to these, I stir fry the veggies ahead of time and let them drain in a colander as well after cooking let the muffins sit on a cooling rack. Though I mix in almond flour and xanthum gum to my mixes probably makes all the difference. Also make a bacon, egg, cheese only version for the kiddo. Neither come out wet

I would think so, but some vegetarians can eat eggs and dairy too. There are differences between certain vegetarians and vegans, too. So I am not really sure about this 🙏

I used 1.5 tsp salt and it was too much... next time just 1 tsp.
How reduction in quantity if only one person is really going to eat all this?
You can try to reduce the ingredients by 25 to 50%
