    You make them look so good. I always find after I have baked them, that I have liquid under the muffin.

      When I make similar to these, I stir fry the veggies ahead of time and let them drain in a colander as well after cooking let the muffins sit on a cooling rack. Though I mix in almond flour and xanthum gum to my mixes probably makes all the difference. Also make a bacon, egg, cheese only version for the kiddo. Neither come out wet

    I wonder if whipping the egg whites separately would help make them fluffier?

    Can you be vegetarian with just vegetables?

      I would think so, but some vegetarians can eat eggs and dairy too. There are differences between certain vegetarians and vegans, too. So I am not really sure about this 🙏

      Oops, Elsie. My question was very confusing. Can I make them without meat?
      And should I sub coconut milk or coconut cream for the heavy cream?

    I used 1.5 tsp salt and it was too much... next time just 1 tsp.
