Great Keto friendly recipe 🙂! Didn't have the ceramic muffin pan, but used small ceramic oven safe coffee cups instead and the egg muffins turned out SO yummy 🤗!!!
Egg beaters work easy too. Lots of options...veggies , breakfast meats..bacon bits or Canadian bacon strips...different cheeses. Yummy and easy to freeze.
Thanks for making these videos, you must put a lot of effort into making them! Nobody in my house likes to cook except for me, and you certainly make it easier to meal prep and find new ways to enjoy food. 🥰

My round and square glass quiches have all come out so dry around the edges. Yours is reduced oven heat and less time and easier to serve and much prettier. I just found your channel and subscribed. Recipe sounds delicious and I just made them. We had leftover mushroom and artichokes for dinner with bacon. I added that to the egg bites and more bacon . Cannot wait to eat them.
Perfect for the toaster oven in the camper. 6 count muffin pan barely fits but it fits. Going to do the last one but with some turkey sausage crumbles too. Great that you include the cooking gear you used and funny that you also include what you are wearing. I'm guessing you get asked so much it is just easier that way!

Lisa, when I thought it couldn’t get any better, you come up with this recipe; it’s so great. I tried sort of a similar recipe with chopped tomatoes, spinach, cream & a whole egg (sort of like a baked egg in a ceramic cup), but I could never get the egg to cook right (either too runny or overdone), & you had to wait forever for that to cook (cause that one you have to serve fresh). This is so much better, will definitely be trying this recipe. I love that you can make it ahead of time. And yes, you can totally get creative with fillings (diced ham; sun-dried tomatoes in oil + feta, etc.). I made your Shepard’s pie recently, only I used ground chicken thighs + cauliflower rice en lieu of lamb or beef, & I loved how tender & delicious it turned out. Another great recipe from you, thank you so much & happy 2020! 🌟💫✨ P. S. I’m breast-feeding my newborn so I’m on a particular diet & your recipes come in very handy! Thanks again!
You should be sautéing your spinach to get rid of the oxalates. Also, add the shallots to the pan so they actually brown a little before adding the kale. It’ll just be better overall.

I did ham, bell pepper medley, and cheddar cheese. Turned out fluffy and great flavour
I love mushroom and spinach. Sometimes I add chopped red bell pepper. And of course always top with salsa or tapatio before eating.
