    You can also replace 1-2 of the whole eggs with egg yolks. This will make the custard richer, but will take longer to set.

    I made this today and it was great, so good. Yummy. I used 1 cup of coconut cream, 1 cup heavy cream plus I added coconut flakes 😋😋😋. My husband loved it. This is a win and it was so easy.

      Did you do 30 mins in the oven? I was thinking less, I use to steam it instead of putting in the oven, it takes less time and comes out light and smooth

      @@sdla690 I did more than 30mins. Maybe 40-50 mins depending on the container size then put it in the fridge. But it’s best the next day in the fridge

    I made this but used 2.5 c almond milk, 3 yolks, 2 whole eggs, vanilla, 5 T powdered swerve, 30 min, 300 degrees.
    AMAZING!!!

      @@sandrajohnson5624 I'm so glad you responded as I had lost this recipe! My almond milk is 1 carb per cup. The powdered Swerve is 9 carbs per Tablespoon. That's roughly 48 carbs for 4 servings or 12 carbs for 1 serving. However, Maria Emmerich never seems to worry about the carbs from Swerve if I am remembering correctly. But I thought we were supposed to count all carbs. Anyway, Im going to try reducing the Swerve to 4 T. That would change the total carbs to 9 grams.

      @@kiamsp9830 The texture was smooth. In 1 bowl I added 3 different egg yolks and 2 whole eggs. (Originally I used all egg yolks, maybe 6, but I decided to try something easier and it worked!) Whisk together. Add other ingredients. Now I think I poured it into a sauce pot and stirred while heating on stove (low heat) but not for very long. If almond milk comes to a boil it will separate. Don't boil! Then I poured into ramekins. I think it made 5? Gently set ramekins into 13x9 baking dish and fill half way or 2/3 up the side of the ramekins with water. Gently place in oven. Bake 20 min? They might be ready in 15. It's been a while. I also assume my oven temp was probably the same as the recipe that used cream.

    Great recipe!! Whisked the eggs, sweetener, and vanilla first then added the heavy cream. I used half of the mixture and mixed the other half with 2 table spoons of unsweetened cocoa powder. Both came out great!

    In England we have solid custard like that in a pie, with a little nutmeg sprinkled on top. Try it, it's a favourite of mine.

      We made custard pie in the States too since the frontier days! I was making the pie with my grandma with nutmeg (allergic to cinnamon so we always used nutmeg) when I was a kid back in the 1960's. She said the recipe first came to the family from her great, great grandma, she still had the handwritten original recipe! I liked to add coconut flakes to the mixture also or mushed up bananas but since an adult I eliminate the crust and only make as custard, don't like unnecessary carbohydrate calories like pie crusts.

    Followed recipe, added a pinch of salt, it took me 55 minutes for it to be browned and firm. I added a keto caramel sauce to cooled custard, delicious! Gonna try adding cocoa powder next, and 3/4 cup swerve, I found it could have been sweeter. But super easy to make. I whisked the eggs first before adding other ingredients.

    You can make it Creme Brulee by torching or broiling about a tsp of keto sweetener on top of the prepared and cooled custard.

      Calm down..it was just ONE recipe..lol. And it's not easy eating Keto because you get bored easily if you like variety..which Keto doesn't offer beyond a certain point.

    Put your pan in the oven first, then pour the water. Crack the oven door and it will cool there there just as easily as on the counter. Saves space, no burns.

    YUMMY! I make this exact recipe frequently and always top with fresh grated nutmeg before cooking. Sometimes I add a little cinnamon to the mix. I have made it with coconut cream as well which is SUPER DELICIOUS as Megha would say!

    I've been following this recipe for over a year. I make it exactly as the video shows except that I add a tablespoon of rosewater to the mix. If you like Middle Eastern flavor you will love that add.

    You can use coconut milk (the can kind, more rich) instead. It would taste like coconut flan.

      I make it with coconut milk and a couple bananas. The texture is like pumpkin pie filling. You can omit sweetener, or include, it doesn't need more than a tablespoon or 2. Top w toasted coconut flakes. Nice for breakfast and also warmed up. I use smaller ramekins and get 8 servings...so it's still very low carb even with bananas (2 large or 3 small).

      I was wondering about that because I don’t have dairy. Do you think that using just the fat would be good or should the fat and water be mixed together from the can? The kind I get always separates and I make ice cream out of it and only use the fat.

      @@stephbreezy011 well only 5/6 g the way it's portioned (@9 fl.oz). It's really filling. But you're right, I just started doing it this way to give enough sweetness without resorting to no calorie sweeteners, which I can't stand. And it even adds a little protein and fiber and potassium. I had recently been sick and couldn't eat at all, so I didn't worry about it.

    I made this today. I cooked it without the water for the first 15mins. Then realised my kettle was hot for a reason. I added the water and cooked for another 15 mins.
    Absolutely beautiful! Yum Yum Yum.
    Loooove the texture. I added cinnamon to the top 👏🏼👏🏼👏🏼

    Hi there, just tried a bit modified version:
    600 g of 30% fat cream
    4 full eggs
    150 g erithritol
    150 g chocolate flavoured pea protein.
    Used 2 custard mugs + a larger pie form. The larger "pie" got a nice crust with soft inner part. Critical mass (aged from 4 to 12 yrs) just love it

    Alternative- I make this using a protein shake (I use the Costco Premier Protein), 3 eggs, and some cinnamon. Bake for 30 minutes. Yum.

      @@catlikedat8705 Yes, the liquid canned drinks because, if you use the powder, then it will be lumpy. The pre-mixed protein shakes are not grainy at all so it is nice and smooth.

    Couple of suggestions. Beat thr eggs first then add in the cream. Set your tray and pan on the oven rack then add in the boiling water. One less chance of burning you or anyone else with hot water.

    If you want to make this a full on creme caramel/flan, you can make a quick allulose caramel and swirl it around the ramekins before you pour the custard.

    For Christmas, I got a keto icecream flavored 4 pack. they are vanilla, chocolate, orange sorbet, and mint. I would love to make your custard and maybe try one of the flavors. Orange sounds nice, like a creamsicle flavored custard.

      Honestly, I don't even have a taste for sweeteners on keto. On this diet, I can appreciate the natural flavors of foods more without needing everything to be sweet. Keto sweeteners just taste off-putting to me.

    I made this last week….It’s is bloody awesome. I did prefer it cold, though. Just delicious.
    I’ve got another batch in the oven right now, but I had to alter the recipe as I didn’t have enough cream, so I topped it up with unsweetened almond milk, and added an extra egg. I then sprinkled the top with powdered Natvia Gold brown sugar. (Keto friendly). 🤞
    I hope it sets, I think it will.

    Edit: it set, and IMO, tasted better than the full cream version. Keeps well in the fridge for 2 days. It tastes like the custard in bread and butter pudding 😋😋😋

      Fake sweeteners just don't caramelize like real sugar does. Extremely bitter.

      Yup. I put Swerve brown sugar on top of my pressure cooker keto cheesecake. After cooling, the brown sugar (erythritol) 1) leaves a sugary sauce on top like flan, but also 2) crystallizes on top into a crunchy layer. Game-changing addition. ;-)

      The only keto sweetener that caramelizes is allulose, which is a sugar that humans can't digest. Because it is an actual sugar, it behaves like regular sugar during cooking.

    Next time take a n ote from Alton Brown. put the pan in the oven then add the hot water~ Or even add a tea towel on the bottom to help with it all

    I would carefully pour in the boiling water after I put the pan in the oven on a rack that’s pulled out part way.

    Since I’m on Keto....this recipe hits the spot....I haven’t had custard for decades, of course that was made with sugar......but I use erythritol frequently and love it.....this was delicious! So easy to make...Thankyou !

      Hi there! Maybe you can try half the recipe without the sweetener or just a teaspoon or two to see if it doesn’t irritate your stomach? Personally I find heavy cream sweet as is, so it might work 🙂 just a suggestion. Best wishes!

    1- cream
    2- eggs
    3- vanilla extract
    4- erythritol sweetener

    I made this this morning but I did 1 1/2 c cream then added a half cup of water. I thought it might lower the carbs a bit per serving. It was delicious. I now just have to not eat it all today. Thanks for sharing this. Take care.

      @@cici79 I always thought for some reason it was one for every two tablespoons. It went with the theory that they don’t have to list when it’s less than a carb but in large amounts it adds up.

      @@cici79 There are 6 1/2 g total carbs in a cup of heavy cream with 1/3 g of sugar. That is why whipped cream tastes sweet.

    Nutmeg. FRESHLY grated, of course. Like vanilla, you have to put in a stupid amount to have too much.

    All the sweeteners with "- tol" ending endings have been known by keto clinicians etc. to stall some people's weight loss, stimulate carb craving and even influence insulin. If you're young with healthier metabolism I guess it wouldn't matter. Everyone is different. This custard looks tasty.

      Ruins your Gut biome as well! My Gastro told me NOTHING that ends in OL is good! I found PLAIN Monk Fruit online and bought four big bags and use it in my coffee - it is a powder that is caramel colored. Bulk Supplements online.

    Every Christmas my Grandmother used to make fresh custard to go on her green and red jellies along with her fruitcake all made from scratch. It seems like every Christmas someone would always bring up the fact that my Dad loved the custard so much that he would actually drink it .

      Yes, this is the kind of custard I had when I was a child as my mother was English - they like a custard that is thick but can be poured over fruit. What we see here is called a set custard. Soft custard is done on top of the stove, and set custard is baked.

    Those look amazing. Like creme brulee, but without the glazed top. If you can figure out a way to. Put a "sugar glaze" on top without it being sugar, that would be awesome.
