I was in Brazil once when I was in my teens and I was THRILLED to see grilled cheese on a menu. Finally, some comfort food that I was familiar with! So I happily ordered it, but was very, very confused when my food came out and was literally just a block of...well, grilled cheese--clearly not the sandwich I was expecting! I tried it though and it was freaking delicious! I don't remember much about the flavor, but I do remember that it had lovely char marks (grill lines) and was lightly drizzled in honey. Thank you for reminding me of this and inspiring me to try to make something similar at home!
To help you out, I just want to let you know that the Brazilian cheese used was probably queijo de coalho. You can find recipes for "Brazilian grilled cheese" online because it's actually a very common street food, so you can recreate it exactly! Apparently it's very easy to make as long as you have a grill

The key to good grillable cheese is cooking them to within an inch of their life, you'll cook the squeak out and they won't be so salty either. I don't think these cheeses were cooked long enough, take it from a halloumi connoisseur!
I disagree. The key to cooking halloumi is to deep-fry it quickly. That will provide maximum crisp and the inside won't squeak at all because it is not cooked.

One of the foods I learned about when I moved to the Bronx was Queso de Freir, basically frying cheese. It's so good just pan fried. Once we tossed a few chunks into the deep fryer and they puffed beautifully and had a very light flavor. So good!
Pro tip: Use Lactase enzyme pills, available from health food places and muscle-dummy stores, I took them (plus lactase drops for converting milk into lactose-free) for a year and my life-long intolerance actually went away, may not work for everyone, but worth a try... :)
Be VERY VERY careful with lactase pills!! They work for some people BUT for alot of people they make them violently ill! I speak from experience and it was an awful one!! Please read reviews from actual people on these, as I read only reports from the manufacturers to see if they are safe. Spending hours, and for some days, suffering in the bathroom is not worth any benefits!
If lactase enzyme doesn't work for you, then you may be allergic to cow milk proteins. And that's on top of your lactose-intoletance. I wish you the best, but I feel bad you can't enjoy Cheese, milk, etc.

You should try queso tropical. You can grill/fry it and it’s great with salty meats, guava paste and of course bread. Also good cold. It don’t discriminate.

Hi Emmy! In italy we have a type of cheese that is similar to the german one, the Tomino. But I think tomino is really different because it has a really strong, distinctive scent. Tomino is usually wrapped with speck and then grilled. Tomino have a rubbery skin and when grilled the inside melt and liquified, becoming oozy, smooth and delicious.

Bread cheese with a little bit of maple syrup is one of my favorite things! Very rich and you can caramelize the outside and have a very soft middle. Definitely not something you can eat often, but for special occasions like a light holiday breakfast, it is divine.
Emmy try Indonesian thick pancake, Terang Bulan (Bright Moon) or Martabak Manis in some areas. They are sooooo creamy and filling, usually eaten at night when family gathers or just as snack. I see a few recipes on UA-cam in english so you should be able to find them!

I love your videos, I stumbled upon your channel a few weeks ago and as Bob Ross would say you are my 'Happy Accident' . Totally Infectious and always manage to find the craziest things to cook, you bring joy to my day :-) Being a lover of Indian food I had to try the Paneer. So I made my own slices (somewhat thinner than yours). Made a square Naan Bread and grilled away but i found it to dry to eat alone. I then tried again but smothered both sides of the Naan with Mango chutney and Riata. It was heaven. Thanks so much for the inspiration. I am currently in the process of making your Island Cake (trial run for Halloween) The island itself is based on mount Rushmore but with ghoulish pirate heads (made from silicon moulds-once again inspired by your chicken leg ice cream) Thanks once again Emmy you are truly a genius
As an Indian, I can say Paneer tastes nothing like cheese, especially if used in palak paneer and alike dishes. Heat paneer up how much ever you want, it wont become NEARLY as gooey or stretchy as say mozarella.
Leipäjuusto, juustoleipä or Finnish squeaky cheese is good, especially with cloudberry jam or jelly and the cheese is warmed up a little. I grew up eating leipäjuusto and even introduced my non-Finnish friend to it and it was a hit. Oh yeah, and some people even put it in hot coffee, which sounds weird but I guess some like it. I'm not a fan of coffee that much, so never tried it.. :D
The best thing is this reminds me of it's always sunny in Philadelphia where this concept is also done but on a way worse level, I had no idea anyone could make this look so appetizing though! Leave it to youtubes most wholesome chef~
Fun cheese fact: meltability is primarily based on the acidity level of a cheese. Cheeses like halloumi (typically made with sheep’s milk which has more fat than cow) and paneer (we have a local WA brand made with jersey cow milk the highest fat content of all cow breeds) have a high moisture and fat content but the amount of acid used to curdle the cheese is extremely high, thus resulting in a lovely grilling cheese that doesn’t melt.
I live in Costa Rica. Here, we have a type of cheese called Queso Turrialba (named after the town where it was invented, and is most typically made), or Queso Semiduro. We use it for grilling and pan-frying, and it usually accompanies Gallo Pinto, which is our most typical breakfast here; basically rice and beans. It would work great for this recipe, I think! 😁
I've made this but very differently. The bread and cheese slices are grilled/fried separately will a little oil or butter and then assembled. This way, the bread gets more of a flavor presence and the cheese melts into the bread more. If I recall, I used a Mexican grilling cheese as I was following the way my father had made it many years ago. He cooked at lot of So-Cal and Tex-Mex dishes. I do love Paneer though.
Almost forget, also made it will a type of corn bread in between the cheese. The cornbread was less crumbly and more like a loaf of bread or a pound cake.
I slice cheese pretty thin, grill it as is in a nonstick skillet till it's browned and crispy, and eat it plain, using a piece of bread to mop up any cheesy oil left in the pan. Very easy and really good!
Halloumi burgers are one of my favourite meals! Ironically enough, I was introduced to them several years ago by Hello Fresh. I’ve made them many, many times since with a Cajun paste to marinate the halloumi in, fresh garlic mayo (or aïoli, though I prefer just using prepared mayo with minced garlic), Roma tomatoes and arugula. Yum, now I’m craving one!

You would think that but paneer is actually very light and flavorless(in a good way) so I think you wouldn't mind it.

Protip: Most cheeses are naturally lactose-free. Take a look at the label, if there is a 0 at carbohydrates, the cheese is fine to eat.

Hi Emmy! In italy we have a type of cheese that is similar to the german one, the Tomino. But I think tomino is really different because it has a really strong, distinctive scent. Tomino is usually wrapped with speck and then grilled. Tomino have a rubbery skin and when grilled the inside melt and liquified, becoming oozy, smooth and delicious.

This is a cute, funny idea, but the best part of a grilled cheese is the cheese pull. I'd still like to try these cheeses though.
Bread cheese with a little bit of maple syrup is one of my favorite things! Very rich and you can caramelize the outside and have a very soft middle. Definitely not something you can eat often, but for special occasions like a light holiday breakfast, it is divine.
Would you show us how to make paneer? And then your husband's favorite paneer dish?

Emmy try Indonesian thick pancake, Terang Bulan (Bright Moon) or Martabak Manis in some areas. They are sooooo creamy and filling, usually eaten at night when family gathers or just as snack. I see a few recipes on UA-cam in english so you should be able to find them!

I love your videos, I stumbled upon your channel a few weeks ago and as Bob Ross would say you are my 'Happy Accident' . Totally Infectious and always manage to find the craziest things to cook, you bring joy to my day :-) Being a lover of Indian food I had to try the Paneer. So I made my own slices (somewhat thinner than yours). Made a square Naan Bread and grilled away but i found it to dry to eat alone. I then tried again but smothered both sides of the Naan with Mango chutney and Riata. It was heaven. Thanks so much for the inspiration. I am currently in the process of making your Island Cake (trial run for Halloween) The island itself is based on mount Rushmore but with ghoulish pirate heads (made from silicon moulds-once again inspired by your chicken leg ice cream) Thanks once again Emmy you are truly a genius

As an Indian, I can say Paneer tastes nothing like cheese, especially if used in palak paneer and alike dishes. Heat paneer up how much ever you want, it wont become NEARLY as gooey or stretchy as say mozarella.

Leipäjuusto, juustoleipä or Finnish squeaky cheese is good, especially with cloudberry jam or jelly and the cheese is warmed up a little. I grew up eating leipäjuusto and even introduced my non-Finnish friend to it and it was a hit.
Oh yeah, and some people even put it in hot coffee, which sounds weird but I guess some like it. I'm not a fan of coffee that much, so never tried it.. :D

Everything has sugar in it. Couldn’t even find sugar free yoghurt at freakin Walmart. And it had about 20.000 types of yoghurt.

Fun cheese fact: meltability is primarily based on the acidity level of a cheese. Cheeses like halloumi (typically made with sheep’s milk which has more fat than cow) and paneer (we have a local WA brand made with jersey cow milk the highest fat content of all cow breeds) have a high moisture and fat content but the amount of acid used to curdle the cheese is extremely high, thus resulting in a lovely grilling cheese that doesn’t melt.
I’ll stick to normal grilled cheese 🙂🙂
I live in Costa Rica. Here, we have a type of cheese called Queso Turrialba (named after the town where it was invented, and is most typically made), or Queso Semiduro. We use it for grilling and pan-frying, and it usually accompanies Gallo Pinto, which is our most typical breakfast here; basically rice and beans.
It would work great for this recipe, I think! 😁

I was just watching “Jane the Virgin” on Netflix. It’s oddly weird how Emmy and the character “Jane” semi look a like- just me?
I've made this but very differently. The bread and cheese slices are grilled/fried separately will a little oil or butter and then assembled. This way, the bread gets more of a flavor presence and the cheese melts into the bread more. If I recall, I used a Mexican grilling cheese as I was following the way my father had made it many years ago. He cooked at lot of So-Cal and Tex-Mex dishes. I do love Paneer though.
Almost forget, also made it will a type of corn bread in between the cheese. The cornbread was less crumbly and more like a loaf of bread or a pound cake.
The sounds when you grill them and bite into them....I'd totally try them. Yummmmm!

I slice cheese pretty thin, grill it as is in a nonstick skillet till it's browned and crispy, and eat it plain, using a piece of bread to mop up any cheesy oil left in the pan. Very easy and really good!

Halloumi burgers are one of my favourite meals! Ironically enough, I was introduced to them several years ago by Hello Fresh. I’ve made them many, many times since with a Cajun paste to marinate the halloumi in, fresh garlic mayo (or aïoli, though I prefer just using prepared mayo with minced garlic), Roma tomatoes and arugula. Yum, now I’m craving one!
Inspired! Great video @emmymadeinjapan! I think I will try this by grilling each component separately on both sides. Nice toasty bread, with caramelizing both sides of the cheeses would add to the umami of this indulgence!
