In the Philippines, they have their own cheese called "kesong puti". "Kesong puti" is a soft, unaged, white cheese made from unskimmed carabao milk and salt curdled with vinegar, citrus juices, or sometimes rennet. It can also be made with goat or cow milk. It has a mild salty and tart flavor. It can be eaten as is, paired with bread (usually pandesal), or used in various dishes in Filipino cuisine. It is usually sold wrapped in banana leaves.

We don't put Cotija cheese on our tacos here in Mexico, just if they are "tacos dorados" (also known as "flautas") that are way different to the 'usual' tacos.
We may use oaxaca cheese (ak as "quesillo") for "tacos de barbacoa", though. But in that case, they aren't tacos anymore, they are called "taquesos" since they include quedo (cheese).
Edit: Empanadas do note have oaxaca cheese at all, although some may include it, that is really uncommon.
It depends, here in Oaxaca there's empanadas de quesillo and it would be almost imposible for an empanada place to not sell them

If you ever go to the Netherlands, here’s what to do. (In my opinion) Go to the convenience store, and buy a block of old Amsterdam. It’s the best aged cheese. Cut it up into bite-sized pieces and put on a plate. On the side, make some honey-mustard sauce. (Just honey with mustard, that’s it). Now dip the cheese into the sauce and enjoy. We always have it whenever we go watch television together on Saturday while watching ‘wie is de mol’. It’s great. Just do it.

Lactose Intolerance: It’s free real estate...
Rio Cheese contains a reduced quantity of lactose, more or less depending from the kind of it. That's enough for many people, and nowadays lactose intolerants can just take a pill of lactase enzyme before consuming milk and milk derivatives. 😀😎😘

In Spain we have 26 Record of Provenance cheeses (Manchego included) like Afuega'l pitu, Gamoneu, Cabrales (quite similar to Roquefort), Mahon, Idiazabal (similar to Pecorino), Picon-Vejes-Treviso, Queixo do Cebreiro (similar to Ricotta in texture but a little bit stronger), Casin, Camerano, Arzua-Ulloa, de Murcia y al vino, de la Serena, L'Alt Urgell, de Guia, Nata de Cantabria, Ibores, Majorero, de Tetilla, Zamorano, Palmero, de Liebana, San Simon da Costa, Roncal and Torta del Casar (one of my favourites)
All of them are quite awesome and also still so many of them very tasty.
I would say that only a few are my favourites but still some awesome cheeses made outside of borders that I love like the aged Comte, the classic Gouda or a good old Parmesano.

Let me add an infamous one from Germany: Harzer Roller (Harzer roll)
Small log-shaped cheese which is made from cows milk and has very low fat content. Ripening is about a few days to a week and it is usually garnished with caraway.
It has a VERY HARD HITTING aroma and is considered to be an acquired taste, though. Eat it with good bread, beer and music

When I was a kid, I would call Muenster cheese "monster cheese" haha.
They left out the Parmesan cheese, probsbly the most representative of Italy.
Other delicious ones are: ricotta, pecorino, provolone, asiago, stracciatella, burrata, robiola, caciocavallo, stracchino, squacquerone, groviera, fontina, scamorza, grana Padano... and my favorite one: taleggio. Strong almost like Gorgonzola and creamy inside.

Jarlsburg - I bought a large wedge of it for charcuterie, and my son ate almost all of it, saying as he ate, "I still can't decide if I like it, so I'd better try another piece." My favorite cracker cheese, when I can get any of it. A favorite dessert cheese is Gjetost from Norway, which you did not mention. I love it with a sweeter wine, chocolate, Club crackers and fruits. Favorite snack-breakfast-lunch-dinner cheese is cottage cheese. A good cottage cheese is like a good slice of bread, a canvas just waiting to be painted

In Denmark we also have another unique cheese called "Rygeost" (Smoke Cheese) which is a fresh cheese that is then smoked. It's really good in dressings and dips. The Havarti cheese is really mild and a pretty "young" cheese, but in recent years an aged version has gained popularity. No wonder - it's heavenly!
In georgia or let's say eastern europe there is also smoked cheese in a lot of varieties.

My favourite is aged White Stilton. It makes the best cheese sauce ever and goes wonderfully with chillies and mushrooms.

For me they left the: Queijo Minas or Minas Cheese. This cheese comes from the states of Minas Gerais. It is an extremely tasty cheese that goes with many things, especially with a sweet common in Brazil, called goiabada.

Also they present 2 italian cheeses but only show Roquefort for France?! pretty sad seeing we have over 500 types of cheese.
