When the French chef was taking his sandwich to the broiler he had a goofy grin on his face. I don't know why, but to me, that was the epitome of "my sandwich is so delicious." More than all the verbal guarantees from the other chefs. Also, it looks freaking amazing.

I like burnt toast. When I’m making myself grilled cheese I purposely burn it slightly. If I’m cooking grilled cheese for someone else I wouldn’t burn it. I would never use mayonnaise.
Always want a crispy outside for the grilled cheese. Never tried mayo on the bread but one day I'll give it a try. Supposedly it doesn't do much to change the taste.

I like the French chef- he’s not cocky and seems respectful.
It seems he has most work experience too.
He's also the only one who made a halfway decent sandwich IMO.

I thought it was really ridiculous that he had put fruit in his grilled cheese, but if you think about it, there are actually a lot of times we pair sweet with salt and cheese with fruit. Eg. Apple cheddar pie, salted cookies, even PB&J is sweet and salty dish. It was just something very uncommon that he used.

I'm thinking - I don't have the cool chesses, but I wanted to take in the egg idea - but I also don't havea broiler - how did you go about that?
@@5daydreams I personally just used cheddar cheese and some mozzarella. Also I just used store bought ham. Don't worry about the boiler. Just fry on the stove in a iron casted pan. That's what I did. Came out great.
@@5daydreams just fry an egg and put it on top. I've done a similar thing before and the runny yolk makes this way better, while the whites give it a nice texture contrast.

@@aaravgp1332 It just gives another flavor to it. I like cooked ham. As for benefits it gave me the ham flavor I like. Also gives more protein. Maybe you want to try it with bacon. Bacon will give another type of flavor. Maybe instead of butter use mayonaise to spread on top and bottom of the bread. All sorts of ways to add different flavors. I used ham cause what the level 3 chef used to me is another form of it and considerably cheaper. I also use rye bread. Again different flavor for me and I like rye.
You guys are complaining about level 2 putting blackberries on his grilled cheese but everyone is ignoring the MONSTROSITY of him putting the MAYONNAISE BREAD FACEDOWN ON THE COUNTERTOP

Okay, before you knock fruit/jam/preserves on a grilled cheese, you need to try it. It's actually incredible. Coffee place I used to live near made a brie and raspberry preserves grilled cheese. One of the best damn sandwiches I've ever had.

@@suzieox Honestly, it'd probably be pretty good. The saltiness/tang of the mayo would compliment the raspberry preserves sweetness and tang pretty well, and the cream would blend with the brie. You'd have to go light on the mayo, but I don't think it would ruin the sandwich.

Level 1: Made a grilled cheese sandwich.
Level 2: Was high when he originally made this.
Level 3: Is french and made a Croque Madam... which is a fancy french ham sandwich, not a grilled cheese.
I made Croque Madam myself, 3 or for 2 Weeks ago, it tasted Incredible. But it's not grilled its "Baked".

Yeah, ive made it too. To me, it felt like a next level ham and swiss (likely because of the gruyere), not a grilled cheese. Perfect brunch item in my opinion though.

It's awesome, but it's SO MUCH WORK when you just want a grilled cheese. The best part of grilled cheese is that it's quick.
Honestly, I think all 3 of them have their merits, but I don't agree with any of them. I like to grate my cheese over the first slice in the pan, then mop up the fallen shreds to get a cherse crust on the outside of the bread. Quick and easy and perfect every time
i very much appreciate the lady's cheese sandwich. simple, quick, and easy to make especially when your stomach is already grumbling out of hunger.

Usually in this series I find lvl 3 to be unnecessairly overcomplicated, but Remy's grilled cheese literally made me salivate.

I actually like the idea, but I rather put brie cheese.
Replace his blackberries with onion jam/chutney, then try his same recipe otherwise exactly. You'll see where he's coming from :)
The mayonnaise makes it super crunchy and also lets you toast it way longer to get the insides properly cooked. It'll go as black as his sandwich, but it won't smoke or taste burned; that's just what mayo does.
honestly, after watching this i added melted blueberries and a few blueberries, it tasted less bitter than blackberries tbh. really good combo if you use extra sharp cheddar

@@shaquillepindell5292 The real croque madame doesn't include parmesan, only Emmental. There's an entire egg on it, not just a yolk. The croque madame uses ham not Prosciutto wich is dry cured. Btw a croque madame when well made with the right ingredients is way better than a grilled cheese.

What this video taught me:
Level 1. This taught me that if your cheese is soft enough and your filling tastes good, you're gonna have a good sandwich no matter how well the cooking goes - essentially like having "cheat code" ingredients to ensure you still get a good product while you're learning the technique. It also taught me the importance of temperature regulation in cooking in general, as well as having utensils more suited to it.
Level 2. Mayonnaise is the absolute GOAT because it lets you cook your sandwich a lot longer and makes it super crunchy. Overall it taught me to be conscious of the smoke points of various ingredients, and how to use that knowledge. I also learned for the fiftieth time that there's no reason cheese can't go next to something sweet because I STILL seem to struggle with that fact - we have tomato sauce on pizza after all. I'll stick to onion jam though; can't stand blackberries :P
Level 3. Great, now I have to learn recipes that use up all those spare eggwhites, and I'm still really freakin' bad at separating eggs. Thanks though I guess :P
I come back to this video a lot because of all that. Probably my favourite case as well of how I originally scoffed super hard at one of the recipes (surely you can guess which) and realised how good it was once I tested it out.
P.S. There was a follow-up video where Frank endorsed the mayonnaise technique. Suck it ;)

To everyone freaking out about fruit on grilled cheese, it’s actually really good! Especially if you use a good cheese and fruit combo. My favorite is fresh mozzarella with boysenberry jam 🤤. Brie with peaches is good, strawberry with gruyere, it just depends. Monte crispy sandwiches are sometimes served with a side of berry preserves, it’s the same concept 😊.

It is the milk solids that burn first. Use ghee or clarified butter for flavour and higher heat.

Cheese and berries go really well together and have been a common pairing for centuries. If you haven't tried snacking on bits of cheese with nuts and dried fruit then I highly recommend it.

Figs and raspberries and apples are also great with cheese. I know that in New England at least that it's quite common for apple pie to be served with cheddar. As Kaitlyn said, it's been a very common pairing for centuries.
Cheese and fruit is actually quite common (it’s one of Remy’s pairings in Ratatouille), brie and jam is quite good. Adding whole fruit might not be the best idea because it might give you a weird texture and or give your sandwich an uneven temperature, but if you want an amazing sandwich try pairing spanish hams, manchego, and blackberry jam.
If that "grilled cheese" sandwich doesn't have half a cheesecake in it I DON'T WANT IT.

I love using a ham glaze on my grilled cheese. I've tried jam/berries before but it's a hit or miss. They usually get overshadowed by the cheese. Ham glaze is a paste so it's more concentrated, and it holds its own with even the sharpest cheddars.
