I like burnt toast. When I’m making myself grilled cheese I purposely burn it slightly. If I’m cooking grilled cheese for someone else I wouldn’t burn it. I would never use mayonnaise.
Always want a crispy outside for the grilled cheese. Never tried mayo on the bread but one day I'll give it a try. Supposedly it doesn't do much to change the taste.

I thought it was really ridiculous that he had put fruit in his grilled cheese, but if you think about it, there are actually a lot of times we pair sweet with salt and cheese with fruit. Eg. Apple cheddar pie, salted cookies, even PB&J is sweet and salty dish. It was just something very uncommon that he used.
When the French chef was taking his sandwich to the broiler he had a goofy grin on his face. I don't know why, but to me, that was the epitome of "my sandwich is so delicious." More than all the verbal guarantees from the other chefs. Also, it looks freaking amazing.

I'm thinking - I don't have the cool chesses, but I wanted to take in the egg idea - but I also don't havea broiler - how did you go about that?
@@5daydreams I personally just used cheddar cheese and some mozzarella. Also I just used store bought ham. Don't worry about the boiler. Just fry on the stove in a iron casted pan. That's what I did. Came out great.
@@5daydreams just fry an egg and put it on top. I've done a similar thing before and the runny yolk makes this way better, while the whites give it a nice texture contrast.

@@aaravgp1332 It just gives another flavor to it. I like cooked ham. As for benefits it gave me the ham flavor I like. Also gives more protein. Maybe you want to try it with bacon. Bacon will give another type of flavor. Maybe instead of butter use mayonaise to spread on top and bottom of the bread. All sorts of ways to add different flavors. I used ham cause what the level 3 chef used to me is another form of it and considerably cheaper. I also use rye bread. Again different flavor for me and I like rye.

I don't think that putting ham o it was far off. Last time when they had to do a chilli, the prochef made a seafood chilli that had nothing to do with an actual chilli

Whole egg mayo doesnt sit as heavy when i wolf down the sammich.
Daniel's choice of blackberries is smart since they are a mild flavor that goes with starch n dairy like pomegranate in cheesy salads or cranberries with turkey.
He either used murican mayo(sugar burns fast) or he kept goin till the cheese melted(worth it).

To everyone freaking out about fruit on grilled cheese, it’s actually really good! Especially if you use a good cheese and fruit combo. My favorite is fresh mozzarella with boysenberry jam 🤤. Brie with peaches is good, strawberry with gruyere, it just depends. Monte crispy sandwiches are sometimes served with a side of berry preserves, it’s the same concept 😊.

Mayo on a grilled cheese makes it very crispy. Also, lots of butter also makes it crispy. Those are amazing recipes all 3 chefs!!
What this video taught me:
Level 1. This taught me that if your cheese is soft enough and your filling tastes good, you're gonna have a good sandwich no matter how well the cooking goes - essentially like having "cheat code" ingredients to ensure you still get a good product while you're learning the technique. It also taught me the importance of temperature regulation in cooking in general, as well as having utensils more suited to it.
Level 2. Mayonnaise is the absolute GOAT because it lets you cook your sandwich a lot longer and makes it super crunchy. Overall it taught me to be conscious of the smoke points of various ingredients, and how to use that knowledge. I also learned for the fiftieth time that there's no reason cheese can't go next to something sweet because I STILL seem to struggle with that fact - we have tomato sauce on pizza after all. I'll stick to onion jam though; can't stand blackberries :P
Level 3. Great, now I have to learn recipes that use up all those spare eggwhites, and I'm still really freakin' bad at separating eggs. Thanks though I guess :P
I come back to this video a lot because of all that. Probably my favourite case as well of how I originally scoffed super hard at one of the recipes (surely you can guess which) and realised how good it was once I tested it out.
P.S. There was a follow-up video where Frank endorsed the mayonnaise technique. Suck it ;)

I actually like the idea, but I rather put brie cheese.
Replace his blackberries with onion jam/chutney, then try his same recipe otherwise exactly. You'll see where he's coming from :)
The mayonnaise makes it super crunchy and also lets you toast it way longer to get the insides properly cooked. It'll go as black as his sandwich, but it won't smoke or taste burned; that's just what mayo does.
honestly, after watching this i added melted blueberries and a few blueberries, it tasted less bitter than blackberries tbh. really good combo if you use extra sharp cheddar

I love using a ham glaze on my grilled cheese. I've tried jam/berries before but it's a hit or miss. They usually get overshadowed by the cheese. Ham glaze is a paste so it's more concentrated, and it holds its own with even the sharpest cheddars.
This is my favorite food scientist from the series! Shes so straight forward and easy to understand.

Okay, before you knock fruit/jam/preserves on a grilled cheese, you need to try it. It's actually incredible. Coffee place I used to live near made a brie and raspberry preserves grilled cheese. One of the best damn sandwiches I've ever had.

@@eulahater69 Honestly, it'd probably be pretty good. The saltiness/tang of the mayo would compliment the raspberry preserves sweetness and tang pretty well, and the cream would blend with the brie. You'd have to go light on the mayo, but I don't think it would ruin the sandwich.

The thing is, in my country we have machines for this. Looks like a waffle iron, but with more shallow grooves. The sandwich itself is called "tost", a loanword from "toast". This naming kinda causes confusion when we're abroad or so. We either have sliced bread (called "tost ekmeği", means bread for toasting/grilled cheese sandwich bread) or a normal loaf (sometimes sliced, sometimes cut in half, the peasant's bread is the regular bread we have here), if available pita. We mostly use "kaşar" cheese, rarely the white cheese (think about saltier Feta). Extras include spicy "sucuk" sausage, salami, ketchup, mayonnaise, tomato paste, tomatoes, sweet green chili peppers (sometimes hot ones too, if it's your thing)...even French fries are added by some.
Apparently, I'm the only one here who would want to try (and probably ENJOY) Daniel's grilled cheese concoction.
From the looks of all the other comments you're right! 🤣🤣 I read a recipe years ago that had a blackberry spread with a special smokey cheese. It was a fancy, uppity magazine. So he isn't the only one. I'm not interested though, but enjoy!

Yeah, ive made it too. To me, it felt like a next level ham and swiss (likely because of the gruyere), not a grilled cheese. Perfect brunch item in my opinion though.

@@YZYLX Croque-monsieur and croque-madame can either be grilled or baked (or even made in a special device that resembles a waffle-maker) or a combination of both. The oven version is more commonly served in cafés, though.

For real, plain white bread with Kraft singles and butter or mayonnaise on the outside for frying. Ooey gooey awesomeness. No matter how old you are it is great. I was a professional cook for a long time, and almost everyone I've worked with had a soft spot for them.

I knew Bianca's wasn't gonna turn out quite as melty because she said cheddar would add the melt of the two cheeses, when its a harder cheese than the higher water content of the American cheese. I hate using American cheese for grilled cheese for anything really but it melts better than cheddar. Mozzarella would be a better choice for amateur grilled cheese I think

@@shaquillepindell5292 The real croque madame doesn't include parmesan, only Emmental. There's an entire egg on it, not just a yolk. The croque madame uses ham not Prosciutto wich is dry cured. Btw a croque madame when well made with the right ingredients is way better than a grilled cheese.

There's nothing wrong with fruit and cheese as a combo. (e.g. the Monte Cristo sandwich) Putting mayo on a grilled cheese is a thing people do, though it demonstrably affects the flavor because butter adds a flavor that mayo just doesn't have. But claiming you're using mayo to avoid the burning problems of butter (which can be avoided by not using high heat to begin with); and then adding butter TO THE PAN claiming you don't want it brown, which it's going to do whether you want it to or not if it sits there for any length of time; and then BURNING the sandwich on top of that; and then trying to pass off the obviously burnt sandwich as maybe not even done yet...Like holy hell! WTF is wrong with him.

its not burnt its just that mayonnaise has a higher smoking point as he said this causes it to look burnt but it actually tastes great.

Your name doesn't sound American, but it's pretty common to eat berries on the side with your grilled cheese sandwich in Europe - and a lot of Europeans also eat marmelade on their open-face sandwiches with cheese on it. And it's also pretty common to eat strawberries, blackberries, blueberries, raspberries and grapes when eating cheese and crackers, in Europe! :)

Basic Mayonaise is just egg yolks and oil and salt. So its basically and egg wash and oil together so yes it does produce a nice even browning and his pan was way too hot so it did burn slightly

It is the milk solids that burn first. Use ghee or clarified butter for flavour and higher heat.

I've had blackberries in my grilled cheese before, it's actually incredibly good
Grilling both sides of your bread adds to the oiliness, but ensures that your cheese will melt and adds an extra level of crunch. To get the most bang for your buck, butter both sides of your bread and fry the first slice by itself. Flip it and immediately add your cheese and extras. Fry side one of the second slice of bread with the second side of slice one. When you're ready to flip, make any last second additions and stick the cooked side of the second slice to the sandwich and finish melting the cheese. Notice that there are three cooks with this method.
