It's a wonderful world. I learned about Frikah (also called Friki) from a Chinese guy who lives in Canada (I think). Now, all I have to do is go into any health food store here in Israel and get it. I've also been looking for an alternative to the everyday granola that my Husband puts on his cereal. He says he really liked wheat nuts as a kid. So, this will be perfect. Thank you again for all you do, Wil.
Impressed! Freekeh is one of the great main dishes that we cook in Lebanon and the Arab world, with lamb stock or vegetable stock if you are vegetarian! Mixed with Tahini and Zaatar, all the best ingredients from the true authentic Mediterranean food!

I live in a foreign country so a lot of these ingredients I couldn’t find nor do they have them here but I enjoy your cooking show and anytime I can find a recipe that I can actually get the ingredients. Always anxious to try it. Thank you.
So i have just made and eaten this delicious meal. I discovered freekah recently and it became my favourite grain. I had a few alterations using coriander instead of parsley and picked mint fresh from the garden. I eat oil free so omitted the olive oil and added some water to the dressing and instead I used italian mixed dried herbs and i did not have any pomegranate availabke. I make red onion in vinegar and i always have it available and would never have put it with this dish but it was gorgeous. The dressing just brings it all together. Thankyou!
I was so happy to find that Amazon sells a 2.2l2.oackage by Yupik brand and it is SNAP/EBT eligible. A treasure for those of us who love to eat health and enjoy cooking but have food benefit help. Thank you for teaching us such wonderful cuisines.

I haven't used freekeh, but we do have buckwheat groats in the pantry which I imagine would have a similar effect. There are also other grains/seeds that work well as the base of a salad, so if you've ever cooked too much it's a great way to use them up. The dressing sounds fabulous 👌 and pomegranate seeds provide a delightful pop of sweetness in a salad, as do chopped dried apricots or dates. Combining different flavours and textures like this is a delight for the palate! Thanks, Will 🙏

I will use "bulgur rice"- Turkish cracked wheat-" instead of freekeh ( what I have at hand) and add marinated black olives( oil+ oregano/thyme) and even pickled beets for more color....all personal choices😍

Also, a few shakes of some sumac seems like it would be really good in this dish, also. And btw, I'd *never* heard of sumac until watching your videos. Thanks Wil, for expanding my culinary horizons.

Can’t wait to try this as I have some freekeh and homemade Zatar seasoning in my freezer and herbs growing in my garden. I don’t have any pomegranate seeds now because they are not in season, but I’ll try subbing chopped dried cranberries.

Assyrians use this ingredient in our soup we make for holidays called haressa, it's chicken and freekeh boiled in broth and blended till it's thick texture.

I just made this recipe. I replace the lemon juice with apple cider vinegar and I replace the cucumber with green beans and I bought a can of hearts of palm and cut that up and replace the freak up with white rice.
Looks amazing. Would it be heresy to put some hot sauce on it? Grains like couscous, freekeh, bulghur, always seems so inviting to add some extra heat.
Great inspiration for this week's menu. Some replacements will need to be done since I don't all the ingredients here, so brown rice and Tommy mango it'll be!

I never had success with cooking freekeh. Soaked, not soaked and simmered forever.... it was always tough. Bought it from different places and I don't think it was old.

One question: I'm seeing you add the hot grain to your prepped veg which might result in a 'room temp' salad...will this stand up to refrigeration? Just in case people don't know, you need to get cracked freekeh for it to cook in 20 minutes.
Wholegrain freekeh takes more like 45 mins!😊😊😊😊

I have long considered Brown Rice and Freekeh to be interchangable. They cook the same - although after cooking the Freekeh I rinse with hot water.

Hahah, I get you. It can be enjoyed warm or cold and could also work to assemble before eating your portion 🙌🏻
Fregula is another great grain ingredient, it is a toasted large couscous from Sardinia.
