Brown Butter Blondies

  • While very similar to brownies, blondies are made from brown sugar and feature white chocolate chips. These brown butter blondies are especially flavorful because of the addition of the brown butter. It does take a bit of extra time on the stove, but the result is well worth it!

    INGREDIENTS
    - 12 tbsp butter, browned
    - 2 cups light brown sugar
    - 2 large eggs
    - 2 tsp vanilla extract
    - 2 cups all-purpose flour
    - 1 tsp baking powder
    - 1 tsp salt
    - 1 cup white chocolate chips
    INSTRUCTIONS
    - Preheat oven to 350°F. Grease a 9×9-inch baking dish and set it aside.
    - In a small skillet, melt the butter over medium heat. The butter will foam, but continue to cook until the foaming lessens, 4-5 minutes. Once the foaming quiets down, cook the butter until specks of golden brown amass in the butter and it smells toasty, 3-4 minutes. Remove the butter from the heat and cool for 10 minutes.
    - Once the butter has cooled, combine with the brown sugar and whisk. Add the eggs and vanilla extract. Whisk until smooth. Add the flour, salt, and baking powder. Fold together until mostly combined with a few dry streaks remaining. Fold in the white chocolate chips.
    - Evenly spread the batter into the prepared baking dish. Bake in the preheated oven until the edges are set and the center is slightly gooey when inserted with a skewer, 35-40 minutes.
    - Remove the blondies from the oven and cool for 30 minutes before slicing and serving.

    Those puppies need some toasted pecans for absolute perfection. Also, every time I watch you preparing cake or cookie batters, I always wish you had a Danish pastry whisk for quick and easy mixing. They are life changers.

    Made these with milk chocolate chips (milk chocolate is the white chocolate of actual chocolate) and they were divine. And yes it smelled amazing.

    One of my favorite ways to use browned butter is in frosting for cinnamon rolls. Nice and thick/gooey frosting...😋

    I'm going to make these today! I love blondies, and I love browned butter. I make my own ghee every few weeks and I take mine to the browned level. Because I am lactose intolerant, I have to remove the browned bits and the white solids that float to the top. It leaves me with pure liquid gold. Thank you for an excellent video presentation. Great job!

    Hello from Bangalore, India. I have so far baked only “brown”brownies...never knew about “blondies ”. (Kind of unfortunate nomenclature I think😀)..
    Would love to try these with your recipe. BTW the “brown butter” that your are so raving about, seems like ghee to me. It is also called clarified butter. This is the favourite fat used in almost all Indian cooking, and in the sub continent in fact.
    Ghee is indeed more flavourful and lends both a fragrance and crispness in baking. It is possible to infuse subtle flavours into ghee by adding for example couple of cloves or a small stick of cinnamon to the butter after it melts. We add some local herbs too.
    Anyway your recipe looks easy and the result very tempting. Thank you for the video.

      I've used both peanuts and pecans. They are both yummy...I always toast nuts when baking

      I would do toasted hazelnuts, I imagine it would have a yummy praline flavor because of the caramel notes in the blondies

    Kaleb, this is probably a dumb question, but what is the difference between caramel and butterscotch? I adore caramel but not butterscotch and have never really understood the difference. 🤔

      Caramel is granulated sugar and butterscotch is brown sugar.

      I think with all purpose gluten free flour will make it even more gooey 🤔. I'm going to try it, and I'm going to use 1/2 cup rice flour with gluten free flour too
