How to make Fudge at home

- Hello everyone,
today I'll go back to my days in London and will make the classic vanilla Fudge, which I ate so often and loved so much!
Here is what you'll need to make it:
100g salted butter, cubed, plus extra for greasing
450g golden caster sugar
300ml single cream
2 tsp vanilla extract
kitchen thermometer, for testing

Is it brown sugar that you used my dear can I used ordering butter or must it be pure butter
Hi! Yes, I've used a light brown sugar, but you can use any sugar. I have never done it with ordering butter but I believe it would also work out.

Me:Gets black fudges, thats litterally just burnt sugar.
What did i do wrong?, i did everything right, just made a 1/3 batter ):
Edit: so i may have misheard 116 degrees as 160 ):
You heard correctly: 160° degrees Celcius. What might have happened is that, it has burnt on the bottom. You have to stir constantly and make sure you rub/pass your wooden spoon all over the bottom of the pan the entire time. If you stir only in the middle, for instance, it will burn around the edges.
Leonor's Sweet World - Deutsch it worked when i made it at 116 degrees, and i made sure to stir constantly, also the entire thing was burnt, not just the bottom

My sugar burns and doesn’t melt completely into liquid, what am i doing wrong ? Im trying to make toffee. Too much butter ? Must i add water ?
Lower the heat. Don't add water!
Hi..me and my hubby used white sugar..and milk..bt it keeps coming out as toffee..wht are we doing wrong?
You are probably reaching higher temperatures: between 149° to 154 °C (these are the toffee temperatures). For fudge it should reach 116°C and then be switched off.
Hi I'm trying it mine is watery
Mine is chewi and like taffy
So I cook it again and same thing again. When I take off from stove and stir, the shine doesn’t go away

You can, but you might have to adjust the quantity of powdered sugar (1/4 less powdered sugar). Good luck and please let me know how it went!

I believe so! But I've never done it!
Where is the condensed milk ?
Which condensed milk? We didnt use condensed milk in this recipe!
What if u dont have a thermometer
You have to do trial and error until you get the right consistency and understand when you have to get it out of the stove. It will always taste delicious. Just the consistency will be different. 😉

Ibelieve you should mention that it would be best to prepare the pan before starting the recipe.

Can I use it as frosting in chocolate fudge cake? When it's a little runny?
There are better caramels for that purpose. I don't recommend using this one as frosting.
