Titli, my fudge was done cooking in only 5 minutes??? I used a larger pot because i doubled the recipe, but it reached the softball stage in only 5 minutes! It was absolutely delicious. I added peanut butter to one half and cocoa to the other
I tried your fudge and it was wildly successful. I had to hide it in the freezer so I would not eat everything at once. I still treat myself after meals for desert. Thanks for a great recipe.

Being Scottish, I have always made tablet which is similar to fudge. I was looking for this recipe I had come across some years ago. I didn't realise how many TBK recipes you had done. It's possible that either you didn't quite cook the sugar for long enough OR you had some sugar crystals around the top of the pan when you poured it into tray.
Hi! I suggest you to google for "do it yourself vanilla extract". You will find instructions on how to make your own extract, at least the vanilla flavour. You need strong alcohol (like Vodka) and vanilla beans (= dried vanilla "sticks"). You basically just let the vanilla flavour soak into the alcohol for several months. I've made myself some vanilla extract this way. It's ready now, but I haven't tried using it yet. I think it will work, though! Good luck.
Thanks for this video! Made a batch the day before yesterday and it worked like a charm. Really delicious fudge; soft and creamy and just sweet enough. Mine was a little softer than I would've liked, so I think I'll let it boil a little longer next time (didn't use a timer while heating it and I don't have a sugar thermometer, so I used the soft-ball technique).

I made "freestyle fudge" couple of days ago. Toffee (cream, sugar, butter and little bit of honey) cooked till ready. Mixed with dark *cold non-melted* chokolate granulates and let cool down.

Your fudge is mouthwatering! Since I am a sloth, I immediately noticed that the last stage (where you immerse in a tray of water and stir and then spread the mixture out) looks like very hard work. How about just pouring the hot mixture into the greased tin and letting it spread out by itself? Ever tried that? Is stirring while it cools essential to the final texture?

Hannah Johnson: Perhaps you might try and cook the mixture longer. It will set in the water when it has reached the soft ball stage. It does take a while though. You need to have lots of patience when making fudge, but in the end it is well worth the effort.

After watching your video, I thought it's quite easy to make fudge but its not fudging so easy :( I was beating the mixture as it cooled down after reaching 115°C, it suddenly started setting into hard lumps. It wasn't a complete disaster though. Reheating the lumps with some milk salvaged the stuff into something that certainly looked and tasted like fudge but was too soft for cutting. Any clues as to why the mixture turned into hard lumps?
m I find it an odd recipe, I make my own condensed milk,with sugar & milk reduced, but adding milk I guess it reduces it again could I start with milk and sugar and then add the rest of the ingredients once it's at a condensed milk consistency??....I'm gonna try
This recipe you put forth was very well explained and what I like about it is the crunchy feeling that I get is with the fudge you have made. Two days ago I made chocolate fudge. I was a little disappointed. I made it with condensed milk, everything went okay with the instructions from you tube but when I took it out of the fridge it started sweating and I had to cut it real fast and put it back in the fridge. I was a little disappointed with the taste because it taste like the chocolate I bought and introduced it into the fudge, I felt I could have eaten the chocolate as it was. Can you please advise me as to what might have gone wrong. The one you demonstrated seems like the one I made when I was growing up without condensed milk and with home made milk cream collected after boiling the milk but that quality is no longer available so I was stuck about making chocolate fudge. I will want to put my hand into the one you demonstrated but please if you can help me out as to why it did not come right and why the end result was sweaty. Thank you very much
I made fudge using this recipe (with chocolate) and it turned out great! However, I had problems getting the fudge to come out of my pan even though I greased with butter, used parchment paper, and greased again. Aw well! still tasted delicious.

Hi, Titli! I just tried this recipe and I thiiiiiiink I blew it big time. After I stirred the fudge over the pan filled with cold water, it became really brittle and when I "poured" it into the pan to set overnight, it was all in pieces. Did I boil for too long? I have an electric stove, so could that have had an effect? (I did the chocolate version.) Thanks so much! Love your recipes :)

(Did I mention that I'm a sloth?) The result was absolutely delicious, It was almpst pefectly smooth, but did have a slightly "grainy" texture, as though tiny sugar crystals had formed while it was cooling. I now understand that THAT must be what the stirring is for - to prevent crystals forming. N'est pas?

Add less milk and a bit more condensed milk to quicken the thickening process..this recipe took me more than an hour...but worth every minute!

It sounds like your sugar wasn't hot enough. Did you do the softball test or do you have a candy thermometer?
It's possible there were a few crystals of sugar knocking around on the side of the pan which precipitated the crystallisation of the fudge.

@Svetassimplefun It will work with normal sugar. You might just need to mix the dough a bit longer to get it smooth.

It sounds like you didn't heat it quite enough. A candy thermomenter is defintely a good investment :-)

Is it fine to use granulated-sugar-that-had-been-blended-but-became-a-bit-powdery instead of caster sugar?

@ameliafreak11 Be careful of sugar crystals in the pan when you pour it out. Sometimes they can sett the crystallisation off and make it crumbly.
