If you want to make shelf stable noodles, don't use milk or oil in the noodles. Flour, eggs, salt, & water only (old Betty Crocker books have the measurements), roll & hang to dry.
You can also put them in the freezer in freezer zip lock bags
I make my homemade egg noodles, a lot thicker, and they are delicious but more like a dumpling
I use one egg and a yolk of another and instead of oil I use a little bit of the broth where I boiled the chicken and it’s a game changer and I don’t use milk. I use water.
You don’t have to roll them up just use a pizza cutter. It’s just as fast.

Don't use vegetable oil. They are no good, don't use them. Plus, the flour is high carbs.
