Thank you, this recipe is turning well for me! If the dough feels too dry, you can add water on your hands (don't add water directly to your dough) and continue kneeding.
Made these today and it worked out great! I think using the roll/fold kneading method would help align the gluten molecules and prevent the noodles from tearing, which would make for a longer, thinner noodle, but all in all this is a great, easy and effective method to make delicious noodles!

I’ve made hand-pulled noodles before, and it wasn’t that easy to get the right hydration and texture, which made them not all that easy to pull. It’s probably all a result of rookie mistakes on my part, but I found weighing ingredients gives me better results. Also, I’ve also been told that using a higher protein flour, like bread flour helps with dough elasticity and therefore I can get stretchier noodles with a nice chewy texture when cooked. It did seem to make enough of a difference for me to only use bread flour now for this type of noodle. I’m not that experienced with hand pulled noodles, so please take my comments with a grain of salt. What works for me may not work for anyone else.

It looks simple and amazing especially the pulling technique! So, I tried to make it this afternoon and my dough was a bit sticky to the hand. So i coat my hands with flour to knead it. The pulling part was successful and I am excited. But it kind of stuck to the board when i placed it on the board! Should i place them on an oiled surface or perhaps floured surface? Or Maybe my dough was too wet? I removed it carefully but the shape of the noodles are wonky after that. But regardless of all those drama, my noodles are delicious! 😊
The reason why it is called ramen is because the noodles are pulled into lines by hand, so this is the real hand-pulled noodles. The texture of the ramen can be determined by hand, and the thickness and length can be very thin.Depends on the number of times you pull and the method of kneading the dough

it can be kept in refrigerator but don't completely freeze it because once you want to cook it it'll become saggy
Dont refrigerate freeze it but first sprinkle it with cornstarch no need to defrost when you cook it.

You can dry through sunrays and later use it by boiling it❤
