    I loved that you did this by hand. I have a Kitchen Aid, but it's fun to do things the “old-fashioned” way. we have more control, and I think things taste better. Thank you for sharing.🤗

    My Mom Used to let the strips dry some and then would stack them and she would cut the tiniest little matchsticks so delicious in Chicken soup

    You brought back memories of my grandma make beef and noodles from the 1950s… After watching, I couldn’t resist trying, and now we’re having my late grandma’s special dinner tonight. My first few noodles were cut way too big and cooked up like dumplings, but after rolling the dough very very thin and cutting narrower, they’re just perfect. Cooking the noodles in a rich beef broth gave them an awesome flavor! Looking forward to making chicken and noodles next. Thank you so much.

      This is why i know them! Seems like everybody's gma had a beef n noodles recipe!
      Im a cook now so i jazz it up quite often but the base is still beef and homemade egg noodles

    I loved when grandma made noodles. Our nighttime snack before bed was noodles in near scalded hot milk, butter & salt & pepper. Pepper & hot milk helps you sleep better.

    My Grandmother made them the same way but she never used water. My sister and I used to make them with my mom and we never used water either. Thanks for sharing your recipe with us! ❤

My daughters grandma on her dads side wrote out this same recipe for me 15yrs ago but couldn’t really read it due to it fading and when I came acrossed your video I was so excited!!     I love making egg noodles! Gonna try the roll sides to the middle cutting trick! But I like to use extra egg yolk instead of the water. Small batch 1c AP flour, 1 egg, pinch or so salt. Mix in well if dry add an egg uolk or 1 tbs water. The extra egg yolk makes richer and pretty yellow. Of course I have my own chicken eggs so my yolks are decadent, lol!

    Perfect!!🥰🥰when me and my husband were 1st married back in 1987, we learned how to make this pasta, and we loved making it together!!! And we did it exactly how you make it, except the best part was unrolling them by hand🥰🥰🥰🥰 and we rolled it out and floured it, and then rolled it to be cut. Perfect chicken and noodles every time🥰🥰😋😋😋

    Following in Mom's footsteps I have made chicken and noodle for holiday dinners most of my life. You certainly showed an old dog some new tricks with using the knife to unroll the dough.

    You can use cooked spinach to make green healthy noodles. Love them that way!

    Try using Asian cooking chopsticks to mix this and other doughs.. works great.

    Well done Louise! I've been trying to make my own gluten free egg noodles (celiac family) and I haven't been successful at all. I wonder if this technique would work better for gluten free egg noodles than using a mixer 🤔

    I roll the dough out and found a small noodle cutter. It looks like a pizza cutter but has like 3 or 4 smaller roller/blades and so I use it like the pizza cutter and roll it in one direction over the dough.

    You make beautiful looking noodles! I will try your double roll up method with this recipe. I remember trying to make these with my Gma’s recipe a looong time ago and ended up getting tough results. Any ideas what went wrong and have you ever experienced this? Hoping this recipe is fool-proof enough for me so I can make chicken and noodles for a nostalgic winter meal with yummy leftovers. Thanks for the great video!

    @the salted pepper Oh this is so cool. On your last example I was waiting for you to stack the three and cut, but perhaps they would stick together. Can these be frozen? If there are extra noodles can they be sauteed and perhaps used as a side? Sorry I have no experience with egg noodles. TIA

    I make little balls with my dough and roll it out a flour it and stack them up. Then take a knife and slice they fall apart easy.

    Ohhhh Louise, a lady after my own heart, I cannot stand dough etc. stuck to my hands either! I have the perfect dinner plate for that dough, it has sides which don’t slope but come straight up from the base!

      I dry mine and then bag them and put in the freezer. Drying noodles let's them absorb the flavor like chicken or beef broth when cooking.

      I would freeze them in a single layer on sheet pan lined with parchment and once frozen, put into baggies.

    I haven't made pasta since Jr High but I did buy a pasta cutter that goes on my stand mixer but haven't broke it in yet 🤷‍♀️ but I am planning on making all my pastas from scratch when we move in the near future thx for the video cause Jr High was awhile ago and my memory is not as good as it used to be 😂

    dear lady, if u think this is easier than buying a pkg at the store, bless your heart..im old, arthritic and not enuf grease in my elbows..i made these when i was a kid but used a cookie sheet instead of a plate. rule of thumb was 1 egg per cup of flour for dumplings or schnitzel..for chicken paprikas.

    Whole wheat flour makes noodles seem tender and have more fiber. I prefer them!

      Dry them and then put in a freezer bag and freeze

      Yes, I think I go over that in the written post. I would lay them out on a tray lined with parchment and freeze them in a single layer, then when they are frozen you can put them into freezer baggies.

    back in the 1960;s bbc did an april fool spoof on spagetti tree noodle harvest..my ex saw it and and asked if it was true,,i told him of course noodles grow on trees in italy..the idiot believed me for 6 yrs & then i told him i was as surprised as him .. he believed that too.

    How do you keep from making “cut marks” in your beautiful counter; while cutting the dough in strips wit that sharp knife?
    Truly trying to learn.🙂

    From what I understand the dough doesnt need any water until the dough is together and its too dry. Adding ¼ cup water forced you to use too much flour, more than ½ cup of additional flour. Ive never seen this recipe. The ratio seems a off. Also, since you didnt let it rest, the dough is springing back. Dough that springs back is an inducation of the gluten not relaxing after forming in the dough.
