- Today we are making Easy Vegan Baked Empanadas. An empanada is a type of baked or fried turnover with filling, common in Southern European, Latin American, and the Philippines cultures.
These Vegan Empanadas are crispy on the outside and soooo soft on the inside. This vegan empanadas recipe can be easily frozen too for later use.
They are so easy to prepare in bulk and perfect for meal preps as you can always have them with different stuffings.
These savory Vegan Empanadas have a delicious filling made with black beans, corn, and cheese, seasoned with cilantro, cumin, and a little bit of chili powder.
These are one of my favorite finger food snacks because they’re so delicious! You can enjoy them hot or cold and vary the filling to your liking

Ingredients for Vegan Empanadas Recipe
Ingredients for the Dough
All-Purpose Flour - 300 Grams
Salt - 1 Teaspoon
Vegan Butter - 100 Grams
Ice Water - 7 Tablespoons
Stuffing for Vegan Empanadas Recipe
Oil - 1 Tablespoon
Garlic - 4 Cloves
Bell Pepper - Half Medium Sized
Boiled Corn - 150 grams
Boiled Black Beans - 200 Grams
Salt - 1 & half teaspoon or as per taste
Cumin Powder - 1 & half teaspoon
Red Chili Powder - half teaspoon
Mango Powder - 1 teaspoon
Fresh Coriander leaves
Assembling Empanadas
Refrigerated Dough
Some dry flour
Water
Melted vegan butter
Grated Vegan Cheese

These look amazing and so simple to make too. I used to have a little press that you would seal shut the empanada. Excited to try this recipe.

Great, we have something like this in Lithuania called Kibinai and here in UK they have something called Cornish Pasty 😁 My favourite filling is mushroom and onion 😋 The sautéed sauerkraut are great too!

I've never heard of mango powder but it sounds like a great flavor! Awesome video, I loved your step by step instructions!
Oh yeah it adds an amazing flavor to the recipe, but if you don't have it, you can use little bit of Lemon juice

These look amazing! You should try them in the air fryer if you have one!! I have only ever made Tabitha Brown's empanadas before and everyone loved them.

Apologies for the late reply, yes you can make this with Gluten free flour too, try with gluten free all purpose flour :)
i dontt have an oven. can they be baked in a frying pan with a lid on it, or deep fried??

Hello can I put tomatoes?
You can fry the tomatoes till all the water is gone, that way they can be easily added to the stuffing.
