    I love your technique for folding with the parchment as a helper! As others have mentioned, the tapioca flour is too high in carbs for me, but I'll try the recipe with some other flours and then try the tapioca version when I've moved into maintenance mode (I LOVE tapioca flour in Brazilian cheese bread, so am not opposed to it forever 🙂)

    These look fab! Thanks so much for all of the wonderful recipes you share! For anyone complaining that the dough isn’t low carb… it looks like the recipe makes quite a few.. I imaging most people would eat only one or two at most so it’s probably low carb if you don’t over consume. Btw, her Chanel is called low carb love…not keto. Two different things..❤

    They look amazing!
    I checked the macros on the blog and 15 g net carbs each is pretty high! I know that arrowroot flour is lower in carbs than tapioca, but with the quantity used it would still be pretty high. I think I'm going to research another dough recipe for myself, and skip the peas altogether.
    The empanadas that I knew long before my pre-keto days, had a small piece of hard boiled egg in one end, and an olive in the other. The filling was almost all well-seasoned meat with onion, garlic, pieces of olive and a few raisins. I think the lady who made them was from Chile?

      If you're concerned about carb intake, this is not really low carb. It's 15g per empanada, so I would avoid using tapioca flour and using Lupin flour instead as lupin is 0 net carbs, and may work similarly.

    I will have to research this recipe. I’ve been thinking of hand pies recently but I absolutely won’t use the tapioca flour if it’s high in carbs…maybe substituting coconut flour would be better? Also, I don’t like peas…but that’s the beauty of hand pies…you can put whatever you like in them.
    However, 15g carbs is a lot. Most of us are not at our goal weights yet, so maybe making a lower carb version, as well as the higher carb one too, would be good. I do agree with previous posters that I’ll be looking for another recipe that’s lower carb. Looks delicious though!

      That's my concern too. The tapioca flour, and the amount of 1.25 cups is high carb.

      Have you looked into soluble tapioca starch/fiber? It is a resistant starch and much lower in carbs, 4 net carbs per 1/4 cup; where regular tapioca flour can be around 26 net carbs or more for the same amount.

      It's not low carb though, unfortunately. It's like aorun 15g per empanada, so if you're diabetic, this wouldn't be ideal.

      I asked the same. I read it’s similar to tapioca. But I guess it’s also high in carbs but lower in carbs than tapioca. Also, arrowroot is super nutritious bc of its high fiber content, makes u feel full longer and aiding in weight loss. I’m not an expert, but, my personal opinion is that I use it for my sauces, stews, soups. And I love it. I don’t use it everyday, once in a while. I am a keto diehard fan. I’ve lost 70ish so far, but I do eat carb once a week . I have my cheat days. I still think these empanadas beat the fried ones I get at noches de Colombia which I’m sure r hiiiiiiiiiiight all over lol.

    What can one substitute for the tapioca flour? I'm allergic. How about sunflower seed flour, is that a good sub?

      I'm guessing the tapioca flour is there for binding and texture, so whatever substitutes you use need to have binding qualities and give the resulting empanadas a tasty texture. I suspect that any substitute in this area won't be just one item or a one to one replacement ratio. As for substitute ideas, just do your research, the easiest method is to look at similar keto dough recipes to see what they use and in what quantities and try to figure out why and Frankenstein one together that fits your dietary requirements.

    Tapioca flour = 104 carbs per cup
    White flour = 95 carbs per cup
    NOT A LOW CARB RECIPE AT ALL
    In the amounts used here the tapioca flour is absolutely problematic for keto.

    Tapioca flour is NOT low carb. It has 26 grams of carbs per quarter cup. Read your food labels!

      Wheat is a plant too…they are still lower in carbs than using wheat flour. Her title is Low Carb Love - not Keto Love…

      Her nutritional analysis on the website says 22 carbs per serving which would be 1 empanada. These are pretty good size so 2 would likely be enough for a meal totaling 44 carbs. That’s not a huge amount for a meal. I’m a type-2 diabetic and that would be within my per meal limits.

    definitely not keto friendly as that is a lot of tapioca flour and its all carbs....maybe lower in carbs but till too much per serving for it to be keto.

    I am sorry to criticize this nice recipe, but you do have to take Keto out of the equation, as I am concern of new people on keto that have health problems or are in pain. Tapioca flour is a Big No No! I did not put thumps down because I am not here to be mean. Thank you!
