The second time, I used half melted butter, vegetable oil, and buttermilk following his suggestions. The second time, the muffins were so much better. They were so soft and tender with just the right about of sweetness.
Me too, I use butter in all my baking but unfortunately butter is very expensive and costs €3. 39 a lb in Ireland so I’m going to give your recipe a go. As a matter of interest how much does butter cost in the US

The food prices here are better than most states. Butter in my local store starts at $3.75 and goes up to $6.00 a pound. Most of the time I shop in the city that's 1 hour away because lots of the food I eat is less expensive. Butter at Aldi, a grocery store, is $3.40. In other stores in the city it is $6.00 a pound. So the butter isn't really the reason I go to the city for groceries.
In New England it’s traditional to cut the blueberry muffin in half, butter it and put it on the grill to brown it. Simply delicious. Thanks for the recipe.

These were amazing. I didn’t have sour cream or milk so I used plain yogurt. My blueberries were frozen and it was fine. The best I have made! So pleased with this recipe.

This looks so good and yet so simple! I like the moment of dispensing the dough with an ice cream scoop. I'm making muffins with chocolate, hazelnuts, raisins, currants, raspberries, blackberries and I have to try this recipe!
They came out delicious even though I forgot the vanilla. I used the sour cream, milk lemon juice combo and added sone ginger since I didn’t have lemon zest. Loved the moistness and flavor was excellent. I used frozen blueberries which stiffened the batter due to the temp, which was a bonus for scooping into the muffin pan. Thanks for the wonderful recipe.
PS my daughter said they were fabulous and insured that I make sure to save the recipe. When I told her it was from Preppy Kitchen she said oh of course! Lol, every recipe John shares is a winner!
I made these with a quarter cup of melted butter (2 oz) and then 2 is vegetable oil. Also added about 3/4 tablespoons to the milk for a buttermilk substitute. Turned out great! Tip: use a spatula instead of an electric mixer so as not to overmix.

My 2 year old son was obsessed. He ate them with full mouth as it never really happens with a 2 year old lol. This recipe was awesome and these were the best blueberry muffins I ever had. I made a few small modifications. Instead of flour, i used corn meal. Instead of white sugar, i used brown sugar. Toss the zest with the sugar before mixing with the butter and eggs. If I know I'm going to make them a day ahead I mix it the day ahead and let it sit until I'm ready to make the muffins. Not sure that it particularly adds to the taste, but I like the way it distributes the zest. Also, I always use buttermilk and add a dallop of sour cream. OK, he just said you can add buttermilk.

So the veggie oil and butter combo he recommended is exactly what I wanted. I made 16 pieces and my older son was pissed it was almost gone. Dude put the remainder away in a container with his name on it even though my youngest son helped make them so now everyone is pissed including me because I have to make another batch this evening after their soccer practice. We split the butter 50/50 with olive oil and went with one tsp of vanilla instead of two. My 17 yr old son likes to add his input. Great result.

Whenever I have a dental appointment, I always make treats for everyone in the office and decided to give these a try. I used the lemon juice, sour cream, milk combo, and the receptionist said they were the best muffins she has ever had. Guess the title did not lie!!
