Add butter and work into the flour mixture with a pastry blender or by pressing the pieces between your fingers until they are about the size of peas. Stir in the blueberries and lemon zest. In a small bowl, whisk together the cream and egg. Pour over the flour mixture. Mix together with your hands or a silicone spatula just until the mixture is mostly moistened (it should still be a little crumbly). Turn out the dough onto a lightly floured surface. Place wedges on a small parchment or silicone-lined baking sheet and freeze for 20 minutes. Meanwhile, preheat the oven to 400F. Transfer scones to a large baking sheet, placing them about 2 inches apart. Brush lightly with more cream and sprinkle with sugar. Bake for 20 to 25 minutes or until the tops are lightly browned and the bottom edges are golden. Let cool for at least 10 minutes before serving.

I just made these this afternoon. Used my new scale (yes I listened to you, John ) to measure the flour. I followed your directions meticulously and made the BEST scones ever! I have made a lot of scones in the past 4 years when I broke out of my baking comfort zone and these win the blue ribbon among all my other recipes! Thank you!
Heat oven to 190/170 fan 360g flour 60g white sugar 1tbsp baking powder 1tsp salt Mix Rub with 170g butter until pea like in consistency Add 3/4 cup milk. Mix with spatula. Fold in 1cup frozen berries. Knead lightly. Roll into 1.5inch balls. On baking tray, brush tops with milk, dust with sugar. Bake 25 minutes. For drizzle, combine powdered sugar and lemon juice until paint like in texture. Drizzle over when scones are cool.

Thanks so much john! I made these today and i can confirm that they were really tender and delicious. I had to use frozen blueberries because its hard to get fresh blueberries in my country because they’re counted as exotic fruit so its expensive and of poor quality. But there are some things i want to share: first whatever brand of frozen blueberries you’re using make sure they’re whole and not smushed because when you add it to the batter it becomes really wet and blueberry juices will leak everywhere and that’s what happened to me so to fix this i shaped it into triangles just like john and put them in the freezer overnight before baking (not 20 minutes) and they tuned out great even though the batter was a little wet. I also used whipping cream instead of heavy cream because it was hard to find so if you’re having the same problem and are wondering if whipping cream is fine it is. Last i brushed another layer of cream on the scones after it came out of the oven and it made them so shiny and beautiful. Remember im a beginner baker and this recipe worked for me so im sure it will work for you too the important thing is to not give up and to keep trying :) good luck I’ll answer any questions you have asap
I have made several recipes with frozen berries…I can always find fresh ones but I buy berries for smoothies so why not use them for baked goods? The trick to frozen berries is only add them at the end, frozen so when they bake they don’t explode and make a watery mess.

Thanks John, love the lemon sugar step! Unfortunately I once worked somewhere they literally forced us to knead the scone dough!! (And use high protein flour with high hydration) I could not believe it. They turned out dry and overbaked on the outside with a bready/doughy center, and I was ashamed to participate in making people think that's what scones are like. But now that I don't work there anymore and have recovered a bit from that trauma (ha) I can again enjoy making flaky buttery scones such as these.

I made these today, they turned out amazing. I froze my butter and grated it. After the dough is ready and cut into 8 scones I froze them for exactly twenty mins before baking. Just as he said. I made these with dried cranberries and orange zest and used King Arthur's Measure for Measure gluten free flour. So yummy!! I also cut them into 12 instead of 8 so they would go further.🥰

I made these for my friend who loves blueberry scones and she loved them! I had to tweak the recipe a bit because I didn't have cream (I used half n half). And I omitted the lemon zest because she is allergic. I did not top with cream and sugar because she prefers things less sweet. The 1/3 cup of sugar was the perfect amount. Thanks for sharing!

I just caught a view of the scale and it is the exact one that I have. I love mine! No one in my family really likes Blueberries so I went with the orange cranberry. I used your trick of making Orange sugar (Got my daughter involved) and WOW! That really upped the level of orange to the cranberry. Just perfect!

Great recipe, easy to follow. Made 8 scone batch, turned out like John's. My wife and I ate all 8 in one day. Made a second batch the following day. These are dangerously delicious and very simple to make.

OMG! I made this recipe this morning. The BEST scones I’ve ever tasted!!!! I opted for my food processor but kept your caution in mind. I pulsed very carefully making sure to leave bigger chunks of butter. The texture of the scone was like a delicate muffin and the outside had a delicate crunch. I’m already looking forward to breakfast tomorrow morning when I’m going to use my toaster oven to reheat before eating with scrambled eggs and sausage. YUMMY!!!

I have been trying for years to make scones. I always got stuck on keeping the butter cold. Most of the recipes i followed said to use grated or cubed frozen butter. You totally solved this issue but putting the completed dough in the fridge or freezer (for later use). This is so clever. I have saved your reciped and cannot wait to try it!

I made these scones today! They came out so good. I measured everything properly and was careful just to fold in… I had a pan to use to fit in freezer but did not use my sheet pan. They looked so small but they grew in the oven! Shoot I had to recut them after they cooled 🤷🏻♀️I tasted a few that looked wonky and offered to my local grocers…happiness ensued. It was still a good day and I learned something…I thank you for the recipe..will do again☝🏽🙏🏽👍🏽 as an Army cook learning to bake, (many years ago) we used a scale for all baking…you could never get away without using the scale. Well our recipe cards were all for 100 portions and many times that was 100 x 3….😋

I had a go at these and they are really very good. Quite a bit more moist than the English scones I'm used to. Due to time constraints and space in the freezer I tried leaving them in the fridge overnight instead and this seems to have worked well. I made the dough the night before and had freshly baked scones in the morning.

....Being Irish ( and English) I adore Scones... my favourite is the Cranberry-Orange , I did not ever use a food processor for my Scones. I have also used Bread Flour ,which is what my Grandmother taught me, and using Bread Flour for certain types of cookies gives amazing results.... especially Chocolate Chip Cookies.

I've made with the blueberries and without the blueberries and today I tried it with some cranberries as well as pineapple tidbits that I had along with some vanilla bean... Turned out really good I was a bit worried I also heated some cranberry sauce up that I had made plus some homemade whipped cream as well and it was delish

I'm so excited! These look like the ones in the bakery section of the grocery stores here in the U.S. but I never tried them and now that I have Celiac & am dairy free, I can't. I will try this recipe with Gluten free King Arthur Flour, Earth Balance vegan butter & coconut milk and see how it goes!

Do not sleep on these! I made a batch after going blueberry picking and they just disappeared. I had to make 2 more batches the same day for my parents and I currently have another 2 batches in the freezer to bring to work tomorrow. If anyone has a Asian parent like me that doesn't like sweet treats, definitely make these for them. My mom dislikes most pastries and sweets but she ate 3 straight out of the oven!
When I make this I use a shredder and shred the butter ( I freeze it first) and i add crushed walnuts and a little fresh nutmeg and some cinnamon with splash of vanilla extract

Swap the flour for gluten free flour. I personally like a mix of any almond flour and great values all purpose gluten free flour. You can use just the all purpose but I like a little grit from the almond.
I LOVE that you weigh your ingredients!!! I guess it's the Chemistry teacher in me but it's just more accurate. I would like to have seen you zest that lemon closer up though. I do NOT know how to do that, do you just take of the YELLOW or more. I sometimes get a bit of skin, MINE l in it too--ewwwwwww OHMYGOSH!! I'm DYING!!! those look AMAZING!!! I made these with dried cranberries and orange zest and used King Arthur's Measure for Measure gluten free flour. So yummy!! I also cut them into 12 instead of 8 so they would go further.🥰

Cranberry orange are my favorite. I’m not particularly fond of blueberries so I can appreciate changing this to a cranberry orange recipe.

I made these for my friend who loves blueberry scones and she loved them! I had to tweak the recipe a bit because I didn't have cream (I used half n half). And I omitted the lemon zest because she is allergic. I did not top with cream and sugar because she prefers things less sweet. The 1/3 cup of sugar was the perfect amount. Thanks for sharing!

I just caught a view of the scale and it is the exact one that I have. I love mine! No one in my family really likes Blueberries so I went with the orange cranberry. I used your trick of making Orange sugar (Got my daughter involved) and WOW! That really upped the level of orange to the cranberry. Just perfect!

OMG! I made this recipe this morning. The BEST scones I’ve ever tasted!!!! I opted for my food processor but kept your caution in mind. I pulsed very carefully making sure to leave bigger chunks of butter. The texture of the scone was like a delicate muffin and the outside had a delicate crunch. I’m already looking forward to breakfast tomorrow morning when I’m going to use my toaster oven to reheat before eating with scrambled eggs and sausage. YUMMY!!!

I have been trying for years to make scones. I always got stuck on keeping the butter cold. Most of the recipes i followed said to use grated or cubed frozen butter. You totally solved this issue but putting the completed dough in the fridge or freezer (for later use). This is so clever. I have saved your reciped and cannot wait to try it!

I made these scones today! They came out so good. I measured everything properly and was careful just to fold in… I had a pan to use to fit in freezer but did not use my sheet pan. They looked so small but they grew in the oven! Shoot I had to recut them after they cooled 🤷🏻♀️I tasted a few that looked wonky and offered to my local grocers…happiness ensued. It was still a good day and I learned something…I thank you for the recipe..will do again☝🏽🙏🏽👍🏽 as an Army cook learning to bake, (many years ago) we used a scale for all baking…you could never get away without using the scale. Well our recipe cards were all for 100 portions and many times that was 100 x 3….😋

I had a go at these and they are really very good. Quite a bit more moist than the English scones I'm used to.
Due to time constraints and space in the freezer I tried leaving them in the fridge overnight instead and this seems to have worked well. I made the dough the night before and had freshly baked scones in the morning.

....Being Irish ( and English) I adore Scones... my favourite is the Cranberry-Orange , I did not ever use a food processor for my Scones. I have also used Bread Flour ,which is what my Grandmother taught me, and using Bread Flour for certain types of cookies gives amazing results.... especially Chocolate Chip Cookies.

I've made with the blueberries and without the blueberries and today I tried it with some cranberries as well as pineapple tidbits that I had along with some vanilla bean... Turned out really good I was a bit worried I also heated some cranberry sauce up that I had made plus some homemade whipped cream as well and it was delish

Do not sleep on these! I made a batch after going blueberry picking and they just disappeared. I had to make 2 more batches the same day for my parents and I currently have another 2 batches in the freezer to bring to work tomorrow. If anyone has a Asian parent like me that doesn't like sweet treats, definitely make these for them. My mom dislikes most pastries and sweets but she ate 3 straight out of the oven!

When I make this I use a shredder and shred the butter ( I freeze it first) and i add crushed walnuts and a little fresh nutmeg and some cinnamon with splash of vanilla extract

Swap the flour for gluten free flour. I personally like a mix of any almond flour and great values all purpose gluten free flour. You can use just the all purpose but I like a little grit from the almond.

I LOVE that you weigh your ingredients!!! I guess it's the Chemistry teacher in me but it's just more accurate. I would like to have seen you zest that lemon closer up though.
